These are also called Puto Seco. This is a tasty, butter cookie that is complimented with a cup of tea. The cornstarch in the recipe makes them light and crunchy.

1 cup butter, softened
1 cup white sugar
3 eggs
3.66 cups cornstarch
1 teaspoon cream of tartar
1 teaspoon baking powder

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  • In a medium bowl, cream together the butter and sugar until smooth. Beat in the eggs, one at a time. Stir in the cornstarch, cream of tartar and baking powder until well blended. Roll the dough into 1 inch balls and place them 1 inch apart onto the prepared cookie sheets.
  • Bake for 10 to 12 minutes in the preheated oven, or until light brown. Remove to wire racks to cool.

1 cup softened butter
1 cup sugar
3 egg whites, room temperature
1 teaspoon vanilla extract
1 3/4 cup all-purpose flour
1/4 teaspoon salt

Steps:

  • Preheat oven to 350 F. Line 2 baking sheets with parchment paper and set aside.
  • In the bowl of a stand mixer, combine butter and sugar. Use the paddle attachment to cream the mixture until light and fluffy. Scrape the sides of the bowl with a spatula as needed.
  • While beating, add the egg whites gradually, mixing well after each addition.
  • Beat in the vanilla extract.
  • In a small bowl, combine flour and salt. Add to the butter mixture.
  • While beating at low speed, gradually add the dry mixture to the butter mixture and beat until moistened. Increase the speed to medium-high and continue to beat until well-incorporated.
  • Transfer the batter into a large pastry bag with a 1/4-inch round tip or Ziploc bag with the tip cut off.
  • Pipe the batter into about 1/4-inch thick and 3 inch-long logs on the prepared baking sheets at about 2 inches apart.
  • Bake in a preheated 350 F oven for about 14 to 17 minutes, or until the sides are starting to brown, but tops are still light in color.
  • Remove from the oven, allow to slightly cool, and transfer to a cookie rack while still warm.
  • Allow to cool completely. Cookies will crisp up as they cool.

2 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
¼ teaspoon salt
1 cup butter, softened
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
8 ounces semisweet chocolate, grated

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets or line them with parchment paper or aluminum foil. Sift together the flour, baking soda, baking powder and salt; set aside.
  • In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time then stir in the vanilla. The mixture should be thick and light yellow. Gradually stir in the sifted ingredients until well blended. Drop dough by teaspoonfuls, three inches apart onto the prepared cookie sheets. Sprinkle grated chocolate over the tops of the cookies.
  • Bake for 12 to 15 minutes in the preheated oven, until the cookies begin to brown around the edges. Remove from cookie sheets to cool on wire racks. Store in an airtight cookie jar.

  • In a large pan, combine flour and starch and toast over low heat for about 5-8 minutes just until light brown. You can actually omit this process if you’re using a cornstarch but since I’m using cassava flour I wanted to toast it just to make sure that the cassava flour is thoroughly cooked. Set aside and let it cool down at room temperature.
  • In a mixing bowl, soften the butter using a spatula and add the vanilla, then beat until becomes soft and smooth. Add in powdered sugar and mix until well-combined. Add in toasted dry ingredients and slowly mix until becomes a soft dough. At this stage if your dough is a little bit crumbly you can add one tablespoon of milk at a time and mix until well combine and becomes a soft dough.
  • Knead the dough on a lightly floured surface to form a ball, it should be soft but not sticky or crumbly. If you’re using a cookie press cutter, fill the cylinder just enough dough, then start pressing using your desired cutter. Press cookie dough directly into the lined tray with at least 1 inch apart. Repeat process until you’re done with your dough. And if you’re using a regular cookie cutter, roll your dough into desired thickness (mine was ¼ inch thick).
