QUICK TURNIP GREENS
The greens are cooked with bacon to give them a Southern-Style all day cooking flavor. This recipe is easily adapted to any green, i.e. mustards, collards, kale,etc.

Steps:
- Heat a quart of salted water to boiling in a saucepan. Cook greens until just tender, about 5 minutes; drain.
- In a skillet cook bacon. Remove and drain on paper toweling.
- Add onion to the skillet and cook until soft, 6 to 7 minutes, stirring occasionally. Add the greens and toss. Stir in the sugar and the vinegar and cook until heated through, about 2 or 3 minutes.
- Crumble bacon and sprinkle over top. Add a couple of dashed of hot sauce. Season with salt and pepper to taste and serve.
EASY TURNIP GREEN SOUP
I think tunips greens is a very southern veggie and I for one love em! This soup will take the chill off on a cold day and is perfect for bringing in the New Year. Can't start the year without greens and blackeyed peas! Hope you enjoy!

- Chop, slice, dice, or drain everything first. Heat the olive oil in a large pot over medium heat; add the diced sausage and onion and saute until the sausage is lightly browned. Drain if desired. Add the remaining ingredients to the pot, stirring gently just to combine. Reduce heat to low and simmer, uncovered, for about 30 minutes, adding more chicken broth or tomato juice if needed for desired consistency. ((NOTE: The recipe as written is somewhat spicy, so feel free to adjust seasonings according to your tastes. The beans listed are the ones I used, but use whatever kind you like, more or less.))

CREAMY TURNIP SOUP

- Combine olive oil and onion in a medium saucepan and cook over medium heat until onion is tender.
- Meanwhile, dice turnips, potato, and apple into 1" cubes.
- Add all ingredients except cream to the saucepan. Bring to a boil, reduce heat to simmer and cook covered 12-14 minutes or until all vegetables are very tender.
- Using a hand blender or a regular blender*, blend until smooth (see notes for regular blender).
- Stir in cream and heat through for 2-3 minutes.
- Garnish with herbs and croutons if desired.

SOUTHERN TURNIP GREENS
Learn how to cook turnip greens just like they do in the South. Greens are slowly simmered with pork jowl, apple cider vinegar, salt and pepper for a tender, tasty soul food side dish.

- Remove the center stems from the greens. Discard the stems and coarsely chop the leaves.
- Heat the pork jowls in a large stock pot over medium heat. Cook for 3-5 minutes to render off some of the grease, but so not drain the grease.
- Add one quart (4 cups) of water to the pot. Bring the water to a boil, then reduce the heat to low, cover and simmer for 10 minutes.
- Add the cider vinegar, sugar, salt and pepper to the pot. Bring the pot to a boil again.
- Add the greens. You may need to work in batches, allowing the greens to wilt down to make room for more.
- Reduce the heat to low. Cover the pot again, then cook for 1 -2 hours. The longer the greens cook, the more tender they will become.
- Season the greens with salt and pepper if needed.

COUNTRY TURNIP GREENS

- Put the ham in a large stockpot over medium heat. Cook until the ham is crispy and the fat is rendered, about 8 minutes. Pour in the apple cider vinegar and scrape the bottom of the pot with a wooden spoon to lift up any brown bits.
- Meanwhile, rip the greens into large pieces to make it easier to fit all of them into the stockpot.
- Add the greens to the pot and season generously with black pepper. Pour in the chicken stock and stir to combine. Bring the greens to a simmer and cover the pot. Reduce the heat to medium low and cook until the greens are tender and the liquid is reduced by half, about 45 minutes. Remove the lid and continue to cook, stirring occasionally, until the liquid is nearly gone, about 10 minutes more. Serve immediately.
TURNIP GREEN SOUP
This recipe was given to me by my aunt. I've never heard of it before but it is really good. A mixture of turnip greens, northern beans, kielbasa sausage, and seasonings. Great served with cornbread.

- Heat oil in a skillet over medium heat. Cook and stir kielbasa and onion in the hot oil until the onion is tender, 5 to 7 minutes; set aside.

TURNIP SOUP WITH TURNIP GREENS

- Peel the turnips (thickly, if they are large and mature) and slice them into rounds about 1/4 inch thick. Bring 3 quarts of water to a boil; then add 2 teaspoons salt and the turnips. Cover the pot and cook for 1 minute; then drain.
- Melt 3 tablespoons of the butter in a soup pot with 1/2 cup water. Add the leeks, the blanched turnips, the thyme, and 1 teaspoon salt. Stew them, covered, over medium-low heat for 5 minutes, and then add the milk. Slowly heat it without bringing it to a boil, and cook, stirring occasionally, until the turnips are completely tender.
- Cool the soup briefly; then purée it in a blender. If necessary, thin it with additional milk or water. Season to taste with salt, if needed, and freshly ground pepper.
- Sort through the turnip greens and remove any that are bruised or especially tough looking, and wash them. Melt the remaining 2 tablespoons of butter in a pan, add the turnip greens, and cook them over medium heat until they are tender, about 5 to 10 minutes. Season with salt and pepper. Remove the cooked greens to a cutting board and chop them, roughly or fine, as you prefer; then add them to the soup and serve. Or garnish with fresh chopped thyme.
