For casual entertaining, the tapas experience translates well to the small home kitchen. One delicious hot tapas classic easily made at home is called pinchos Moruños, or Moorish skewers, essentially small kebabs of pork marinated in Arabic (Moorish) spices and grilled, usually on a hot steel plancha. Because most Muslim Arabs wouldn't eat pork, one presumes the original dish was lamb. It's anyone's guess how it evolved into this ubiquitous tapa selection in Christian Spain. Nevertheless, now it means pork seasoned with garlic, cumin, coriander, pimentón and sometimes oregano. Once skewered, they need only about 5 minutes on a hot griddle.

1 1/2 pounds pork tenderloin, in half-inch slices
Salt
pepper
2 teaspoons cumin seeds, lightly toasted and ground
2 teaspoons coriander seeds, lightly toasted and ground
1/2 teaspoon pimentón, sweet or hot
1/2 teaspoon dried oregano
2 garlic cloves
2 tablespoons olive oil
Lemon wedges

Steps:

  • Thread the pork onto 12 bamboo skewers. Season lightly on both sides with salt and pepper.
  • Sprinkle the skewers with the cumin, coriander, pimentón and oregano. Smash the garlic cloves to a paste with a little salt, mix in the olive oil and drizzle over the meat. Rub the seasoning in with your fingers. The skewers can be refrigerated until ready to cook, up to several hours.
  • Place a large cast-iron skillet or griddle over medium-high heat until nearly smoking. Cook the skewers about 3 minutes on each side, until nicely browned. Serve hot, with lemon wedges.

Enjoyed at bars all over Spain, pinchos are wonderful kebabs that taste equally good made with pork, chicken, prawns or lamb. At some bars, the seasoning is as simple as garlic and hot, sweet paprika. Here is a favorite marinade recipe for Pinchos Morunos. Recipe courtesy Anya von Bremzen, The Spanish Table. 2 tablespoons chopped onions
4 large garlic cloves, chopped
1 tablespoon spanish sweet smoked paprika
1/2 teaspoon spanish hot smoked paprika or 1/4 teaspoon cayenne
coarse salt (kosher or sea)
1 teaspoon dried oregano
1 teaspoon black peppercorns
2 teaspoons dried thyme
1 teaspoon ground cumin
1/8 teaspoon ground cinnamon
1 bay leaf, crumbled
2 tablespoons white wine vinegar (good quality)
2 tablespoons dry white wine (optional)
3 tablespoons olive oil, plus more for brushing the kebabs
1 1/2 lbs chicken breasts or 1 1/2 lbs prawns

Steps:

  • Place the onion, garlic, sweet and hot paprikas, 2 tsp of the salt, the oregano, peppercorns, thyme, cumin, cinnamon, bay leaf, vinegar, wine (if using) and olive oil in a mini food processor and process to a paste.
  • Place the pork in a bowl and rub a little salt on it. Scrape the marinade into the bowl with the meat and toss to combine thoroughly.
  • Cover the bowl and refrigerate the pork for 4-6 hours, tossing a few times. Let the meat come to room temperature before grilling.
  • Light the grill and preheat it to medium-high or preheat a large ridged grill pan to medium-high over medium heat.
  • When ready to cook, thread the meat onto the skewers and brush it with a little olive oil.
  • Cook the meat, brushing with olive oil and turning once, until it is just cooked through, 5-7 minutes. (If you are cooking lamb and would like it medium-rare, don't cook it quite so long). Serve the kebabs at once.

2 pounds of pork tenderloin (cleaned of excess fat/veins (1 kilo))
1 tablespoon ground cumin (approx. 7 grams)
1 teaspoon ground coriander (approx. 2.5 grams)
1 tablespoon sweet Spanish paprika (approx. 7 grams)
1 teaspoon ground turmeric (approx. 2.5 grams)
1 teaspoon oregano (approx. 2.5 grams)
1/2 teaspoon freshly ground black pepper (approx. 1 gram)
1/4 teaspoon ground cinnamon (approx. .5 grams)
1 teaspoon salt (approx. 2.5 grams)
5 minced garlic cloves
1/4 cup extra virgin olive oil ((60 ml))
Juice of 1/2 a lemon (for marinade)
Lemon wedges (for serving)

Steps:

  • Trim the pork loin of excess fat and then cut into 1.5 inch cubes and put into a large freezer bag
  • Mix all spices, olive oil and lemon juice in a bowl and then pour over the pork cubes
  • Seal the bag and toss the spice mixture with the pork, then marinate in the fridge overnight (or a minimum of 2 hours)
  • Remove the marinated pork cubes and place on metal skewers with a little bit of space between each cube
  • Grill on a high heat until browned on the outside but just cooked through (don't overcook or they'll be dry!)
  • Rest the skewers for five minutes and serve with lemon wedges

350 g pork tenderloin (cut into 2cm dice; visible fat removed)
1 small lemon (cut into wedges)
2 cloves garlic (finely chopped)
1 rounded tsp smoked paprika
1 rounded tsp Aleppo pepper flakes (or ½ tsp dried chilli flakes)
1 rounded tsp dried oregano
1 rounded tsp cumin
½ tsp salt
¼ tsp black pepper
2 tbsp olive oil (plus extra for greasing)
1 tbsp red wine vinegar

Steps:

  • Stir or whisk all the marinade ingredients together in a large bowl.Stir in the cubed pork, cover and leave in the fridge to marinate for 1 hour minimum and up to 24 hours. Stir and turn occasionally to redistribute the marinade.
  • If you're going to be using wooden skewers: soak 6 short ones in water for at least 30 minutes before cooking the kebabs to prevent burning.
  • Thread the pork cubes onto the skewers and put on a plate. Pour or brush over any remaining marinade.Heat a griddle pan or your grill to medium-high and brush it with a little olive oil.
  • Place the kebabs in the hot pan or under the grill.Cook, turning often, until the kebabs are browned on the outside and cooked all the way through (5-8 min). Turn the temperature down if browning too quickly.Can also be cooked on a barbecue.
  • Serve with the lemon wedges to squeeze over.

2 pounds pork sirloin, cut into 1-inch cubes
2 tablespoons minced garlic
1/4 cup chopped fresh flat-leaf parsley
1/4 cup fresh lemon juice

Steps:

  • Combine the olive oil, cumin, coriander, paprika, cayenne pepper, turmeric, oregano, salt and pepper in a small skillet over low heat. Cook until warmed through and fragrant, about 3 minutes. Remove from the heat and let cool to room temperature. Add pork to a 1-gallon zippered bag and pour in spice mixture, then add garlic, parsley and lemon juice. Massage thoroughly to coat. Seal and refrigerate overnight. Prepare a hot fire in the grill. Thread the meat onto skewers and season with salt. Grill on all sides until just cooked through, 12 to 15 minutes total.

Steps:

  • Prepare grill.

  • The size can also vary from being small skewers with 2 or 3 chunks of meat to larger ones with 7 or 8 chunks. This recipe is for the larger variety but again you may want to go for the small ones and get more pinchos out of the same mix. This recipe makes 8 large skewers
  • Grind the cumin and the coriander seeds and put them in a large bowl. Add the garlic, paprika, oregano, a pinch of salt and then mix in the lemon juice and olive oil.
  • Cut the pork into small cubes. Put the meat into the marinade and make sure it all covered by the marinade. Leave it to marinate for about 2 hours in a cool place.
  • After about 2 hours put the meat onto skewers. You should get about 8 skewers from this quantity of meat depending on how much meat you put on each one. I used metal skewers but do remember if you are using wooden ones it is a good idea to soak them in water for a while as this should prevent them from burning.
  • You can then cook them over a preheated grill or on the barbeque. Remember to turn them over part way through cooking and spoon the juices over them. Cooking time will depend on the heat of the grill or BBQ and also how big or small you cut the pork. I would estimate about 10 minutes under the grill.
