PINEAPPLE BREAD PUDDING
This is our family recipe (Grandma Mel's) side dish for Easter dinner, served alongside ham and green beans. It is very sweet and great for a holiday meal accompaniment.

Steps:
- Grease a 2-quart casserole dish.
- Spread bread cubes in the bottom of the prepared casserole dish. Pour butter over bread cubes and top with pineapple.
- Beat eggs and sugar together in a bowl until foamy; pour over bread mixture. Cover dish with aluminum foil and refrigerate, about 3 hours.
- Preheat oven to 350 degrees F (175 degrees C).
- Bake in the preheated oven for 30 minutes. Remove aluminum foil and bake until browned, 5 to 20 minutes.

GRANDMOTHER'S BREAD PUDDING
This recipe comes from my grandmother who raised me. Besides looking after my siblings and me, she worked the farm and ran another business on the side. How she did all that, I'll never know! She's a tremendous cook and the goodies from "Edith's Kitchen" are always welcomed and eagerly devoured - this bread pudding is one of the best!

- For pudding, combine first five ingredients in a large bowl. Add bread and raisins; mix well. Turn into a greased 9-in. square baking pan. Bake at 350° for 50 minutes. , Meanwhile, for sauce, combine yolks, sugar and cornstarch in the top of a double boiler. Gradually add milk, stirring until smooth. Cook over boiling water, stirring constantly, until the mixture thickens and coats a metal spoon. Remove from the heat and stir in vanilla. Serve pudding and sauce warm or chilled.

- PUDDING: Heat oven to 350°F. Combine bread and raisins in large bowl. Combine milk and 1/4 cup butter in 1-quart saucepan. Cook over medium heat until butter is melted, about 4 to 7 minutes. Pour milk mixture over bread; let stand 10 minutes. Stir in all remaining pudding ingredients. Pour into greased 1 1/2-quart casserole. Bake for 40 to 50 minutes or until set in center. SAUCE: Combine all sauce ingredients except vanilla in 1-quart saucepan. Cook over medium heat, stirring occasionally until mixture thickens and comes to a full boil, about 5 to 8 minutes. Stir in vanilla. To serve, spoon warm pudding into individual dessert dishes; serve with sauce. Store any leftovers in the refrigerator.
PINEAPPLE BREAD PUDDING

- Preheat the oven to 350 degrees F. Butter a 1.5-quart casserole dish.
- In a large bowl with an electric mixer, cream together the butter and sugar until light and fluffy, about 3 minutes. Then add the eggs one at a time, incorporating fully between each addition. With the mixer on low, beat in the pineapple just until incorporated. With a rubber spatula, fold in the bread. Pour it into the prepared dish.
- Bake in the oven until golden brown and set, 50 to 60 minutes.

Steps:
- toast 5 slices of the bread and then butter them let them cool and then rip them into chunks. do not toast the other slices but rip them up and place in your 8 inch cake pan.
- in a bowl mix up the eggs and the milk and the half and half combine the sugars into the mix add the vanilla
- stir and put the pineapple and the juice into the mix.
- pour over the bread in the pan.
- add the butter cut into small chuncks and gently mix into the mixture.
- if not moist enough and more milk.
- pre heat the oven to 350.
- take a larger pan like a roaster and place the 8 inch cake pan inside add water to the roaster pan just to the middle of the sides of the pan do not cover the pudding pan just enough to give it a nice bath.
- be careful when you place it in the oven and when you remove it also the water will be hot.
- bake uncovered for 45 to 50 min till skewer comes out clean . if you want it to be moist dont over bake.

I have not tried this recipe. I got from Tops courtesy of Wheat Foods Council. You can use evaporated milk and whole wheat bread.

Steps:
- Preheat oven to 375.
- Cream together butter and sugar; add in eggs, milk, pineapple and 2 tablespoons of reserved pineapple juice. Then fold in bread cubes.
- Pour into a 9x9 baking dish and bake 45-55 minutes or until set. If it gets too brown, cover lightly with aluminum foil for the last 5-10 minutes. Serve warm.
- Serve with vanilla ice cream or drizzled with warmed, sweetened coconut milk.
