GRILLED VANILLA-GINGER PINEAPPLE

Sherry Yard has a wonderful recipe in her first cookbook, "The Secrets of Baking," called Roasted Voodoo Vanilla Pineapple. She roasts her pineapple with the dried vanilla pods that you save after you've scraped out the seeds, and fresh ginger. She inserts the pods into the flesh of the pineapple, a great idea if you're roasting the pineapple for a long time. I decided to use vanilla extract instead of the pods, because during the relatively short time on the grill they infused only the section of the pineapple they had been stuck into. I add vanilla to the ginger syrup and baste the pineapple with this sweet and pungent mix. You could also simply drizzle the pineapple with honey.

1 large ripe pineapple
1 teaspoon vanilla extract
1/4 cup ginger palm sugar syrup or honey
Pinch of cayenne
1 tablespoon grape seed oil or canola oil
Fresh mint for garnish

Steps:

  • Cut ends off pineapple. Quarter lengthwise, peel and core.
  • Prepare a hot or medium-hot grill. (If you are using the grill after cooking meat or fish, allow residue to burn off and scrape away with a spatula.) Stir together vanilla extract, ginger palm sugar syrup or honey, and cayenne.
  • Brush pineapple wedges lightly with butter or oil and place on grill. Cook for 6 to 8 minutes per side, basting with the syrup, until you see grill marks and the pineapple is lightly colored. Remove to a platter or to plates and brush on remaining syrup or honey. Garnish with fresh mint, and serve warm.

1/4 cup sugar
1/4 cup water
2-inch piece fresh ginger, peeled and chopped
1/2 vanilla bean, split and seeds scraped
2 cups fresh pineapple juice
3 cups fresh pineapple juice, poured into ice cube trays and frozen
1/4 cup vanilla vodka or plain vodka
Mint sprigs, for garnish
Pineapple slices, for garnish

Steps:

  • Combine the sugar, water, ginger and vanilla bean and seeds in a small saucepan over medium heat and bring to a boil. Cook the mixture until the sugar is completely dissolved, about 1 minute. Cool at room temperature and strain.
  • Combine the pineapple juice, 1 cup of pineapple cubes, the simple syrup and vodka in a blender and blend until smooth. Pour into glasses filled with pineapple cubes, if desired, and garnish with mint and pineapple slices.

1 cup sugar
3 cups low-fat vanilla frozen yogurt
1 large pineapple

Steps:

  • 1.Wash and dry 1 large pineapple. With a sharp knife, slice off top and bottom. Holding fruit upright on cutting board, slice off peel in strips; reserve peel. Ct flesh into 8 wedges. Remove core; reserve. Refrigerate wedges until ready to serve.
  • Cut reserved peel and core into 1-inch pieces; place in a medium saucepan with a 3-inch piece of fresh ginger, thinly sliced, 1 up sugar, and 4 cups water. Boil until reduced to 1 cup, 25 to 30 minutes. Strain discarding solids; chill.
  • Slice wedges thinly crosswise. Divide 3 cups low-fat vanilla frozen yogurt among bowls; top with pineapple and syrup.

  • Ginger should be (1/8-inch-thick) rounds fresh ginger.
  • Pineapple should be: 2 pineapples (about 3 pounds each), peeled, quartered lengthwise, and cored, then cut crosswise into 1/4-inch slices.
  • Bring water, sugar, and ginger to a boil in a wide 6-quart heavy pot, stirring until sugar is dissolved, then boil, uncovered, 3 minutes. Remove from heat and let syrup steep, covered, 10 minutes.
  • Remove ginger with a slotted spoon and discard. Add pineapple to syrup and simmer, covered, stirring occasionally, until pineapple is translucent, 6 to 8 minutes.
  • Transfer pineapple with slotted spoon to a heatproof bowl, then boil syrup, uncovered, until reduced to 2 cups, 10 to 15 minutes. Add rum to syrup and gently boil 1 minute, then pour over pineapple. Cool to room temperature, about 45 minutes. Serve at room temperature or chilled.

1 large pineapple, peeled, eyes removed, cored, and quartered
1 navel orange, preferably organic
10 cups (2.5 liters) water
5 cups (1 kg) sugar
6 tablespoons (3 ounces/85 g) chopped Candied Ginger (page 252)
1 tablespoon dark rum

Steps:

  • Cut the pineapple into 1/4- to 1/2-inch (6-mm to 1.5-cm) cubes. Cut the orange, unpeeled, into quarters. Slice each quarter as thinly as possible, then chop the slices into 1/4-inch (6-mm) bits.
  • Put the chopped pineapple and orange in a large pot or a Dutch oven. Add the water, bring to a boil over high heat, then decrease the heat to medium-low and simmer for 30 minutes. Remove from the heat, cover, and let stand at room temperature for at least 2 hours, or up to overnight.
  • To finish the marmalade, add the sugar to the pineapple mixture, bring to a boil over medium-high heat, and cook until the mixture reaches the jelling point (use the wrinkle test, right, to judge when it's done).
  • Stir in the candied ginger and rum, then ladle the marmalade into clean jars. Cover tightly, let cool, and refrigerate.

  • The sugar, moisture, and pectin content of fresh fruits is so variable that it's difficult to know exactly how long jam or marmalade must cook in order to gel. In my recipes, I shy away from giving cooking times because I don't want anyone setting the kitchen timer and walking away from a pot of simmering fruit only to come back to an unfortunate surprise. Rather than rely on cooking times and candy thermometers, I use the "wrinkle test" to test jams and marmalades. You'll need a cold plate for testing the preserves with the wrinkle test, so be sure to put one in the freezer before you start cooking.
  • In most cases, it'll appear that not much is happening until 15 or 20 minutes into cooking. Then, the bubbles will get larger; this is when you should be more vigilant and stir the mixture, scraping the bottom of the pot to make sure nothing is sticking. When the juices become a thick, heavy syrup and the fruit mounds a bit is the point at which you should start checking for doneness using the wrinkle test: Turn off the heat and put a little spoonful of the preserves on the chilled plate. Return the plate to the freezer and, after a few minutes, nudge the jam with your finger. If it wrinkles, it's ready.
  • If you'd prefer to use a candy thermometer, jam and marmalades set at about 220°F (105°C). Always clip the thermometer to the pot before cooking begins to avoid breakage that can result from temperature shock.
