PINEAPPLE ORANGE RICE WHIPPED CREAM SALAD
You cook rice with pineapple and orange juice. Takes a bit longer to cook but after it is done and you add the other ingredients it is a great salad.

Steps:
- Chill a metal mixing bowl.
- Drain canned fruit,reserve the juice.
- Add orange juice and or pineapple juice to make the required 2 cups of pineapple juice and 2 cups orange juice.
- Place rice in microwave cooker,add juice.
- Microwave 10 minutes 70% power. Set aside for 10 minutes. Then microwave 10 minutes 70% power again. The rice should be cooked and soft. Do not stir. Cool.
- {If you are cooking on stovetop, heat the juices to simmer then add rice and cover, and turn the heat down low. About 20 minutes. Cool.}.
- In mixing bowl add whipping cream and beat with beaters, when it starts to get a little stiff, slowly add granulated sugar and vanilla, cardamon and anise. Whip until stiff.
- In bowl add lemon juice and add sliced bananas, toss to coat.Drain.
- In large bowl, add half of the cooked cooled rice. Break apart and add half of the.
- crushed pineapple and half of the flake coconut. Add half of the whipped cream mixture and mix well with a spoon. Then add half of the mandarin oranges,half of kiwi fruit and half of the bananas. Mix gently.
- Repeat the process with the other half of the rice and fruit and whipped cream mixture.
- Pile in glass serving bowl, sprinkle top with nutmeg if desired and serve.
- Note: You may substitute Cool Whip for the Whipped Cream but it will separate if it sits too long.

ORANGE CUPCAKES WITH ORANGE CRUSHED PINEAPPLE WHIPPED CREAM TOPPING
Steps:
- For the cupcakes: Preheat the convection oven to 325 degrees F or a standard oven to 350 degrees F.
- In large mixer bowl, cream together the sugar and butter until light and fluffy with a heavy duty mixer. Add the eggs, one at a time, and mix thoroughly after each addition. Add the orange extract and mix well. Combine the flour, baking soda and salt. Add half of the flour to the mixer bowl along with the cream. Mix until the flour is mixed in, scraping the sides of the bowl with a rubber spatula. Add the rest of the flour mixture, orange soda and orange zest. Mix until the batter is smooth and all of the flour lumps are gone.
- Fill 24 cupcake liners half full and bake for 20 minutes in the convection oven or 28 minutes in the standard oven. The tops of the cupcakes should be lightly browned. Check the cupcakes to make sure no batter sticks to a wooden toothpick when inserted into the cupcake. Cool the cupcakes completely.
- For the topping: In large mixer bowl, beat the cream, sugar and extract on medium speed until stiff peaks form using heavy duty mixer. Gently fold in the pineapple and zest using a plastic spatula.
- To assemble: Top each cupcake with large dollop of topping. Serve immediately or chill until ready to serve.
GLORIFIED RICE (DESSERT-SALAD)
This dessert-salad is a blast from the past! It's basically a rice pudding with crushed pineapple, whipped cream, and maraschino cherries. Serve glorified rice as a salad to accompany your holiday meal. It's also a great dish to bring to potlucks or church picnics. Enjoy! Adapted from "Mennonite Girls Can Cook".
