I was looking for something for dinner and this caught my eye and so we had to try it. This is tender and very yummy. Make and excellent dish for a church brunch or pot luck. I got this recipe from The Best of Country Cooking 2002 Taste of Home.

2 eggs
1/2 cup milk
1 teaspoon Worcestershire sauce
3/4 cup dry breadcrumbs
1 1/2 teaspoons ground mustard, divided
1/4 teaspoon salt
1/4 teaspoon pepper
1 lb cooked ham, ground (about 4 cups)
1 lb ground pork
1 (20 ounce) can sliced pineapple
1/2 cup packed brown sugar

Steps:

  • In a bowl, combine eggs, milk, Worcestershire sauce, bread crumbs, 1 teaspoon mustard, salt and pepper. Add ham and pork mix well.
  • Shape into eight oval patties, set aside.
  • Drain pineapple, reserving 1/2 cup of juice. Place a pineapple slice between each ham patty. (Refrigerate remaining pineapple and juice for another use.) Carefully place in an ungreased 9 in x 5 in x 3 in loaf pan.
  • Pat patties around pineapple to form a loaf. Combine brown sugar, remaining mustard and reserved juice; pour a small amount over loaf. Bake, uncovered, at 350 degrees for 1 1/4 hours or until lightly browned and meat thermometer reads 160 degrees, basting occasionally with remaining juice mixture.

Now THIS is Lancaster County cooking! This is an Amish/Mennonite specialty dish! You will NOT be disappointed! Of course in our area, many of the markets and butcher/meat shops, sell ham loaf meat (already ground and mixed) but I've simplified this by making it possible for all of you outside of the area to create your own! This is SO delicious! ENJOY!

1 lb fresh ground turkey
1 lb ham, ground (or turkey ham)
1 cup breadcrumbs
1 egg
1 teaspoon salt
1/8 teaspoon pepper
3/4 cup milk
2/3 cup brown sugar
1 teaspoon dry mustard
1/2 cup water
1/4 cup vinegar

Steps:

  • Grind meat (if necessary).
  • Mix ground meats, breadcrumbs, egg, salt, pepper and milk together.
  • Shape into a loaf.
  • Bake at 350 degrees Fahrenheit for one hour.
  • For the sauce, mix the brown sugar, dry mustard, water and vinegar together.
  • Pour sauce over loaf.
  • Continue to bake for another hour.

It's great for company because you can mix the loaf in advance, then simply pour on the sauce before putting it in the oven...it's the sauce that makes it so good!

1 cup finely crushed saltines
1/4 teaspoon pepper
1-1/2 pounds ground fully cooked ham
1 pound ground fresh pork
SAUCE:
1 cup packed brown sugar
1 teaspoon prepared mustard
1/3 cup vinegar
1/4 cup water
1 can (8 ounces) crushed pineapple, undrained

Steps:

  • In a large bowl, beat the eggs; add milk, crackers and pepper. Add the ham and pork; mix well. Shape into a 9x4-in. loaf and place in a shallow baking dish. In a small bowl, combine sauce ingredients; pour over loaf. Bake at 350° until thermometer registers 170°, about 1-1/2 hours, basting frequently.

My farmer still owns two tractors...along with a lawn-cutting and acreage-tilling business!

3 cups ground fully cooked ham
1/2 pound ground pork
1 cup soft bread crumbs
2 large eggs, beaten
1/4 teaspoon pepper
1 can (20 ounces) sliced pineapple
3/4 cup packed brown sugar
1/4 cup vinegar
1/2 teaspoon ground mustard

Steps:

  • In a bowl, combine ham, pork, bread crumbs, eggs and pepper and mix well. Chill. Form into 10 balls; set aside. Drain pineapple, reserving 1/2 cup of juice. Place juice in a saucepan with sugar, vinegar and dry mustard; cook and stir over low heat until sugar is dissolved. Arrange pineapple slices in the bottom of an ungreased 13-in. x 9-in. baking dish. From a 1975 Campbell's Cookbook. This is actually like a soup. It's a little salty so you could use reduced-sodium broth if you like but I love salty soups!

1 lb ground beef
1 egg, slightly beaten
1/4 cup fine dry breadcrumb
2 tablespoons finely chopped onions
1/8 teaspoon salt
1/8 teaspoon pepper
1 cup thinly sliced carrot (about 1 medium)
2 (10 1/2 ounce) cans condensed beef broth
2 (10 1/2 ounce) soup cans water
1 small bay leaf
1 1/2 cups medium egg noodles, broken in pieces

Steps:

  • Mix thoroughly beef, egg, bread crumbs, onion, salt, and pepper; shape into 24 meatballs. In large heavy pan, brown meatballs; pour off fat.
  • Add remaining ingredients. Bring to boil; reduce heat. Simmer 10 minutes or until noodles are done. Stir occasionally. Remove bay leaf.

1 cup crushed saltines (about 30 crackers)
2 tablespoons orange juice
1 pound ground fully cooked ham
1 pound ground pork
1 cup packed brown sugar
1 tablespoon white vinegar
1 can (8 ounces) crushed pineapple, undrained

Steps:

  • In a bowl, combine the first five ingredients. Crumble ham and pork over mixture; mix well. Press into a 9x5-in. loaf pan coated with cooking spray.
