Halloumi is a Greek and Turkish semi-hard cheese that has a high melting point, so it can be grilled or pan fried. Its rich robust texture makes it a satisfying vegetarian protein that's perfect in this simple pita wrap.

2 tbsp Better Than Bouillon Seasoned Vegetable Base
2 tbsp lemon juice
2 tbsp olive oil
1 tbsp honey
12 oz halloumi cheese, cut lengthwise into 1/2-inch thick slices
.5 cup hummus
4 large pita breads, warmed
2 cups shredded lettuce
1 cup chopped cucumber
1 cup halved grape tomatoes
.5 cup thinly sliced red onions

Steps:

  • Preheat grill to medium-high heat; grease grate well. In bowl, whisk together vegetable base, lemon juice, oil and honey; toss gently with halloumi slices.
  • Grill halloumi for 2 to 3 minutes per side or until well marked.
  • Spread hummus down along center of each pita, leaving border at top and bottom. Top with halloumi, lettuce, cucumber, tomatoes and red onions. Fold up bottom of pita over filling, then fold in sides and roll up tightly.

4 Greek-style pocketless pitas
1 pound Halloumi cheese, sliced 1/4 inch thick
2 plum tomatoes, sliced crosswise 1/4 inch thick
1 small red onion, thinly sliced
1 small head red leaf lettuce, rinsed and dried
1 cup Tzatziki

Steps:

  • Light one chimney full of charcoal. When all charcoal is lit and covered with gray ash, pour out and spread the coals evenly over entire surface of coal grate. Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Clean and oil the grilling grate. Place pita on grill and cook until warm and pliable, about 30 seconds per side. Remove pita from grill.
  • Grill cheese until well browned on both sides, 1-2 minutes per side.
  • Transfer cheese to warmed pita and top with tomato slices, red onion, lettuce, and tzatziki. Serve immediately.

3 tablespoons sweet chili sauce (Mae Ploy or Thai Sweet Chili Sauce)
4 pita breads
half lime, juice and zest
4 cups mixed salad greens, approximately
cucumber, slices
1 small red onion
1 tablespoon olive oil

Steps:

  • In a bowl, mix the sweet chili sauce and the juice and zest of half a lime; set aside.
  • Slice the halloumi into thickish pieces, then toss in olive oil.
  • Heat a griddle pan over a medium heat and cook the halloumi slices in batches for about 2 minutes on each side or until nice and charred.
  • Toss the halloumi in the sweet chilli and lime mixture.
  • Serve warm in a toasted pita with mixed leaves, cucumber and red onion slices.

1½ tsp. kosher salt

½ small head of red cabbage (about 10 oz.), cut into 1" pieces
1 medium red onion, cut into 8 wedges through root end
1½ lb. winter squash, preferably delicata, halved, seeds removed, sliced crosswise ½" thick
1 large pita bread, split into 2 layers, cut or torn into 1½"-2" pieces
8 oz. Halloumi cheese, cut into 1" pieces
2 Tbsp. apple cider vinegar
1½ tsp. ground sumac
Mint springs (for serving)

Steps:

  • Preheat oven to 425°F. Coat a rimmed baking sheet with 1 Tbsp. oil. Mix garlic, salt, Aleppo-style pepper, and 3 Tbsp. oil in a large bowl. Add cabbage, onion, and squash and toss to coat. Spread out on prepared baking sheet (keep bowl handy) and roast until squash is browned underneath, 25-30 minutes.
  • Toss pita, Halloumi, and remaining 1 Tbsp. oil in reserved bowl. Scatter over vegetables, then turn vegetables over with a large spatula. Roast until squash is fork-tender and cabbage, onion, pita, and Halloumi are browned in spots (cheese should be soft inside), 15-20 minutes. Remove from oven and drizzle with vinegar.
