PIZZA BUNS
These are nice to serve for a snack. My Mom used to serve them for her Bridge Group. I have served them with a bowl of soup for supper. If you like pizza, I think you will like these. This mixture can be kept in the fridge for several days and spread on buns when you are ready to use.

Steps:
- Slice bacon into small pieces and then brown it.
- Drain fat from bacon.
- Cut the pepperoni into slices and then quarter the slices.
- Add onion, green pepper, and mushrooms to the bacon and heat until onions begin to soften. Stir often.
- Add spaghetti sauce, pepperoni, oregano and garlic powder and heat through.
- Cool.
- Stir in cheese.
- Spread on open-faced buns and broil until bubbly and cheese melted.
- Enjoy!

- PUT PIZZA SAUCE IN BOWL.
- DRAIN JUICE FROM MUSHROOMS AND ADD.
- CHOP ONION& GREEN PEPPER INTO SMALL PIECES AND ADD TO MIXTURE ALSO.
- GRATE MOZZARELLA CHEESE, LEAVE SOME FOR TOP OF BUNS.
- MIX INGREDIENTS, UNTIL FAIRLY THICK CONSISTENCY.
- SLICE TOMATOES, AND MEAT IF DESIRED.
- PUT PIZZA BUN MIXTURE FROM BOWL ON BUNS OR BREAD, TOP WITH TOMATOES, MEAT, AND MOZZARELLA CHEESE.
- PLACE BUNS ON COOKIE SHEET AND BAKE FOR 15 MINUTES OR SO UNTIL COOKED, THEN BROIL FOR A FEW MINUTES UNTIL CHEESE IS BROWN.
PIZZA BUNS
The elementary school I attended back in the 1950's used to make these, and were a favorite of most everyone. My wife and I spent a lot of time trying to recreate these when we were first married. Our kids (now in their 30's) still request these when they come to visit. We use canned pizza sauce but spice it up. Left-overs are easily reheated in the toaster oven.

- Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
- Place bun halves, crust sides down, onto a baking sheet. Broil the buns until just toasted, about 1 minute. Watch them carefully, they burn easily. Set the toasted buns aside.
- Turn oven heat to 350 degrees F (175 degrees C).
- In a large skillet over medium heat, cook and stir the ground beef until the meat is browned and crumbly, about 10 minutes. Drain excess grease, and stir in the onion. Cook and stir the beef mixture until the onion is translucent, about 5 more minutes, then stir in the pizza sauce, Parmesan cheese, Italian seasoning, garlic powder, onion powder, crushed red pepper flakes, and paprika. Bring the sauce to a boil, and simmer for 10 to 15 minutes to blend the flavors, stirring often.
- Spoon the beef sauce over the buns on the baking sheet, and top each bun with about 1/4 cup of the shredded mozzarella cheese. Return the buns to the oven, and bake until the cheese is bubbly and lightly browned, about 10 minutes.

EASY PIZZA ROLLS
Somewhere between a pizza slice and a garlic knot, these pizza rolls make for a great appetizer! Make it your own by swapping in your favorite pizza toppings. Serve with warmed marinara or more pizza sauce for dipping!

- Preheat the oven to 350 degrees F (175 degrees C). Spray two cake pans with nonstick cooking spray.
- Roll out pizza dough on a lightly floured cutting board. Flatten out into a rectangle.
- Brush surface of the pizza dough with as much pizza sauce as you like.
- Cover dough with alternating slices of large pepperoni and mozzarella slices. Dot with small pepperoni slices.
- Starting at the long side, roll up the dough carefully into a jelly roll, making sure the filling stays in and pinch closed along the side. Slice into 1/2-inch rounds and place them inside the cake pans flat. Tuck the ends around as necessary and sprinkle Parmesan cheese over each slice.
- Bake in the preheated oven until golden brown, 15 to 20 minutes.
- Stir together olive oil, parsley, and garlic in a shallow bowl. Brush warm pizza rolls with garlic oil.

- In a large bowl, combine the cheese, sausage, pepperoni, peppers and onion. Stir in pizza sauce until combined. Place about 1/4 cup filling in the center of each egg roll wrapper. - Preheat the oven to 425°F (220°C). Grease a baking sheet with nonstick spray.
- In a small bowl, mix together the basil, oregano, thyme, red pepper flakes, garlic powder, salt, and pepper. Set aside 1 tablespoon of the spice mixture for garnish.
- In a medium bowl, toss together the Cabot New York Extra Sharp Cheddar Cheese and Cabot Monterey Jack Cheese. Fold in the remaining spice mixture and the pepperoni. Stir in the marinara sauce until evenly distributed.
- Place a wonton wrapper on a cutting board. Brush the edges of the wrapper with water. Scoop a heaping teaspoon of the cheese mixture onto the center of the wrapper. Fold the top edge of the wrapper down over the filling, and then fold the bottom edge up to overlap for a long, rectangular shape. Press lightly to seal. Wet the short edges of the rectangle and fold toward the center to make a smaller rectangle.
- Brush both sides of the pizza roll with water, then roll in the bread crumbs to coat. Repeat with the remaining ingredients.
- Arrange the pizza rolls on the prepared baking sheet, seam side up. Lightly spritz the rolls with nonstick spray, then sprinkle each one with a pinch of the reserved spice mixture.
- Bake the pizza rolls for 10-12 minutes, or until golden brown.
- Let the rolls cool slightly, then garnish with parsley and serve with warm marinara sauce alongside for dipping.

- For the dough: In a large bowl or the bowl of a stand mixer fitted with the kneading hook, mix together 2 cups of the flour, the sugar, salt and instant yeast. In a measuring cup, combine the warm water with the oil. Add the water mixture to the dry ingredients and mix to combine. Knead by hand or with the mixer, add more flour in small increments, as needed, until the dough comes together into a smooth dough. It shouldn't stick to your hands or be dry and crumbly. Grease a bowl and place the dough ball into the bowl. Cover with plastic wrap and let rise until doubled, about 30 - 45 minutes, depending on how warm your kitchen is.
- Remove the dough to a floured cutting board. Cut the dough evenly in half. Cut each half in half again. Cut each piece in half again and then in half again, to make a total of 16 roughly equal sized pieces.
- Take a piece of dough. Form it in to a rough ball, then stretch in to a circle about 4-5 inches in diameter. (You don't need to stretch them completely at this point. Once the dough has rested a few minutes on the baking sheet, they will be easier to shape, so you will be going back and stretching them out a second time later.) Place the dough circle onto the prepared baking sheet. Repeat with each piece of dough, placing 8 on each on the prepared sheets (you can place them fairly close together as they don't spread much, but don't allow them to actually touch each other). Go back to the first pieces you formed and stretch them a little more, as needed.
