1/2 cup pepperoni chunks (1/2 inch)
1/2 cup green pepper squares (3/4 inch)
1/2 cup fresh mushrooms, cut in half
1/4 cup KRAFT Zesty Italian Dressing
1/4 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese

Steps:

  • Heat oven to 350°F.
  • Thread bread, meat and vegetables alternately onto 8 skewers.
  • Place in single layer on foil-covered baking sheet. Brush with dressing; sprinkle with cheese.
  • Bake 20 min. or until kabobs are heated through and cheese is melted.

24 Totino's™ Pizza Rolls™ frozen cheese or pepperoni pizza snacks
1/2 medium red or green bell pepper, cut into 8 pieces
8 small fresh button mushrooms
8 canned pineapple chunks, drained
8 medium pimiento-stuffed olives
1 small zucchini, halved lengthwise, each half cut into eight 1/2-inch slices
3 tablespoons Italian or French dressing
1 jar (14 oz) pizza sauce, heated until warm

Steps:

  • Soak skewers in water at least 15 minutes; drain.
  • Meanwhile, place pizza snacks on microwavable plate. Microwave uncovered on High 30 to 40 seconds or until thawed. Set aside.
  • Heat oven to 425°F. On each skewer, thread 1 pizza snack and your choice of two other items. Brush vegetables with dressing; place on cookie sheet.
  • Bake 7 to 9 minutes, turning once, until pizza snacks are hot and vegetables are crisp-tender.
  • Serve kabobs with warm sauce.

½ cup teriyaki sauce
½ cup honey
½ teaspoon garlic powder
½ pinch ground ginger
2 red bell peppers, cut into 2 inch pieces
1 large sweet onion, peeled and cut into wedges
1 ½ cups whole fresh mushrooms
1 pound beef sirloin, cut into 1 inch cubes
1 ½ pounds skinless, boneless chicken breast halves - cut into cubes

Steps:

  • In a large resealable plastic bag, mix the teriyaki sauce, honey, garlic powder, and ginger. Place red bell peppers, onion wedges, mushrooms, beef, and chicken in the bag with the marinade. Seal, and refrigerate 4 to 24 hours.
  • Preheat grill for medium-high heat.
  • Discard marinade, and thread the meat and vegetables onto skewers, leaving a small space between each item.
  • Lightly oil the grill grate. Grill skewers for 10 minutes, turning as needed, or until meat is cooked through and vegetables are tender.

8 ounces Italian turkey sausage links
2 cups whole fresh mushrooms
2 cups cherry tomatoes
1 medium onion, cut into 1-inch pieces
1 large green pepper, cut into 1-inch pieces
30 slices turkey pepperoni (2 ounces)
1 tube (13.8 ounces) refrigerated pizza crust
1-1/2 cups shredded part-skim mozzarella cheese
1-1/4 cups pizza sauce, warmed

Steps:

  • Preheat oven to 400°. In a large nonstick skillet, cook sausage over medium heat until no longer pink; drain. When cool enough to handle, cut sausage into 20 pieces. On 10 metal or wooden skewers, alternately thread sausage, vegetables and pepperoni., Unroll pizza dough onto a lightly floured surface; cut widthwise into 1-in.-wide strips. Starting at the pointed end of a prepared skewer, pierce skewer through one end of dough strip. Spiral-wrap dough strip around skewer, allowing vegetables and meats to peek through. Wrap the remaining end of dough strip around skewer above the first ingredient. Repeat with remaining dough strips and prepared skewers., Arrange kabobs on a baking sheet coated with cooking spray. 1/2 medium red bell pepper, cut into 1-inch pieces (1/2 cup)
1/2 package (8-oz size) fresh whole mushrooms
2 tablespoons reduced-fat Italian dressing
1 teaspoon pizza seasoning
2 tablespoons grated Parmesan cheese
1/4 cup pizza sauce (from 14-oz jar)

Steps:

  • Heat gas or charcoal grill. On each of two 11-inch metal skewers, thread chicken, bell pepper and mushrooms alternately, leaving 1/2-inch space between each piece. Brush kabobs with dressing; sprinkle with pizza seasoning.
  • Cover and grill kabobs over medium heat 9 to 11 minutes, turning once, until chicken is no longer pink in center. Sprinkle immediately with cheese.

Most people think of chunks of meat on a skewer when they think of kabobs, but here I'm showing the other style of kabob, also known as kofta. Now that grilling season is upon us, this is definitely something you're going to work into the rotation. Serve with grilled pita bread and a blend of diced tomatoes, cucumbers, and red onions sprinkled with salt and olive oil, all topped with freshly chopped parsley and dried sumac.

2 teaspoons ground cumin
½ teaspoon ground coriander
2 teaspoons Aleppo chile flakes
1 ½ teaspoons kosher salt
1 pinch cayenne pepper
1 pinch ground cinnamon
1 teaspoon ground sumac
1 pound ground lamb
2 tablespoons cold water
8 bamboo skewers
1 cup plain Greek yogurt
2 cloves garlic, crushed
2 tablespoons minced fresh parsley
1 tablespoon fresh lemon juice
¼ cup water, or as needed

Steps:

  • Combine cumin, coriander, Aleppo chile flakes, salt, cayenne, and cinnamon in a small bowl and mix well to combine. Use your spoon to push off about 1/3 of the spice blend to the side.
  • Place ground lamb in a mixing bowl and add 2/3 of the spice blend along with 2 tablespoons cold water. Mix with by hand until thoroughly combined. Cover with plastic wrap and chill in the refrigerator for 1 hour.
  • While meat is chilling, place bamboo skewers in water to soak for 1 hour.
  • Remove meat from the refrigerator and roll into 8 equal-sized meatballs using slightly damp hands. Skewer each meatball through the center and shape into an oval, about 3 inches long. Use your fingers to taper each end of the kabob down to a point where it meets the skewer. Place on a plate and refrigerate until chilled, about 30 minutes, or until ready to grill.
  • Whisk Greek yogurt, garlic, parsley, lemon juice, and 1/4 cup water together in a bowl until smooth and combined. Refrigerate until serving.
  • Stir sumac into the remaining 1/3 spice blend. Remove kabobs from the refrigerator and sprinkle spices on top.
  • Preheat an outdoor charcoal grill to medium-high heat.
  • Grill kabobs over charcoal, turning occasionally, until browned and firm, 10 to 12 minutes total. An instant-read thermometer inserted into the center of a kabob should read at least 135 degrees F (57 degrees C). Serve with yogurt sauce.
