2 tablespoons sugar
1 tablespoon extra-virgin olive oil, plus more for greasing
1/2 teaspoon active dry yeast
3.55 cups pizza flour, preferably Caputo Nuvola Super
3.55 cups soft wheat flour, preferably Caputo Type 1
10 teaspoons kosher salt
Fine semolina, for dusting
80 leaves fresh basil
20 grape tomatoes, halved
8 truffle burrata, preferably Belgioioso
Olive oil, for drizzling
16 slices prosciutto di Parma

Steps:

  • For the pizza dough: Combine the sugar, oil, yeast and 2 cups cold water in the bowl of a stand mixer fitted with a dough hook. Let the mixture sit until foamy, about 10 minutes.
  • Mix the two types of flour and salt in a bowl. With the motor running, slowly add the flour mixture to the yeast mixture. Keep mixing until a smooth, elastic dough forms, about 10 minutes.
  • Transfer the dough to a lightly greased baking sheet and cover loosely with plastic wrap. Let sit at room temperature for 1 hour.
  • Divide the dough into four 12-ounce pieces and shape into balls. Transfer the balls to a lightly greased 9-by-13-inch baking dish and brush with oil. Cover tightly with plastic wrap and refrigerate for at least 24 hours (see Cook's Note).
  • For the pizza: Place a pizza stone under the oven broiler. Preheat the broiler for 30 minutes.
  • Working in batches, dust a ball of dough heavily with semolina flour. Using your fingertips, press the dough from the center out into a 10-inch circle about 1/4-inch thick, leaving a 1-inch thick crust around the edges.
  • Hold the dough straight up, and with your fingertips circling the crust, let the dough naturally fall. Slide your fingers around the crust in a circular motion (like you would turn a steering wheel), until the dough in the center is stretched to about 1/8-inch thick. Repeat with the remaining dough balls. Transfer the dough to a semolina-dusted pizza peel.
  • Spread each pizza with about 20 leaves fresh basil, then layer on 10 cherry tomato halves and break 2 burrata on top of each pizza and spread it on. Drizzle with oil.
  • Slide a pizza onto the stone and broil until the cheese melts and the crust is puffed and charred in spots, 3 to 4 minutes. Repeat for the remaining pizzas. Top hot pizzas with 4 slices prosciutto and serve hot. Enjoy!

This is a Sarah Foster recipe. You could double this recipe to fill an entire 12 cup muffin tin. Fontina would also be great! You might even try a pesto before putting in the egg. Remember prosciutto is salty. Extra pies are delicious the next day. And if you substitute in pre cooked bacon, go ahead.

6 slices prosciutto, thinly sliced
6 large eggs
1 cup spinach, loosely chopped and packed
1/4 cup cheddar cheese, shredded
12 cherry tomatoes, halved
sea salt
black pepper

Steps:

  • Preheat the oven to 350 degrees.
  • Lightly spray a 6 cup muffin tin.
  • Line the muffin cups with the prosciutto slices, pressing the prosciutto into the bottom and sides of each cup (the prosciutto slices will overlap each other on top of the tin).
  • Crack 1 egg into each cup.
  • Sprinkle the spinach over the eggs, then the Cheddar cheese, dividing them evenly.
  • Top each serving with 4 tomato halves and season with salt and pepper. Bake the pies for 18 to 20 minutes, until the egg whites are firm and the yolks are starting to set but are still soft in the center. Timing might vary due to oven differences and preferences.
  • Set them aside to cool for about 5 minutes.
  • Run a knife around the edges of each cup to loosen, then lift the pies out of the tin. Serve warm or at room temperature.

1 loaf (1 pound) frozen pizza dough, thawed
1 tablespoon plus additional extra virgin olive oil, divided
5 to 6 ounces fresh baby spinach
1/3 cup plus additional grated Parmesan cheese, divided
3 tablespoons sour cream
1 small garlic clove, minced
1/4 teaspoon sea salt
1/8 teaspoon plus additional coarsely ground pepper, divided
4 large eggs

Steps:

  • Preheat oven to 500°. Line two 15x10x1-in. baking pans with parchment; sprinkle lightly with cornmeal. Cut dough into 4 pieces; stretch and shape into 6- to 7-in. circles and place in pans., Meanwhile, in a large skillet, heat 1 tablespoon olive oil over medium-high heat. Add spinach; cook and stir until just starting to wilt, 1-2 minutes. Combine spinach with next 5 ingredients; spread spinach mixture over each pizza. Leave a slight border of raised dough along edge. Bake on a lower oven rack about 5 minutes., Remove from oven; break an egg into center of each pizza. 1/3 recipe Basic Pizza Dough, or 3/4 pound store-bought dough
8 ounces fresh mozzarella, grated (about 1 1/2 cups)
Freshly ground black pepper
3 to 6 thin slices prosciutto
Extra-virgin olive oil
Coarse salt

Steps:

  • Preheat oven to 475 degrees. Form dough (as directed in Basic Pizza Dough recipe) in a 9-by-13-inch rimmed baking sheet. Cover with mozzarella in an even layer. Sprinkle with pepper.
  • Bake until cooked through, crust is golden on edges and bottom, and cheese is golden-brown in spots, about 20 minutes.
  • Remove from oven. Immediately arrange prosciutto slices in even intervals across pie. Using a metal spatula, slide pie onto a cutting board. Drizzle with oil and sprinkle with salt. Slice into 6 pieces and serve.

9 ounces (about 1/2 bunch) asparagus, trimmed and cut into 2-inch lengths
2 pounds frozen pizza dough, thawed
All-purpose flour, for work surface
8 ounces ricotta cheese
8 ounces mozzarella cheese, sliced
2 large tomatoes, sliced
4 ounces oil-cured black olives, pitted and halved
Coarse salt and freshly ground pepper
4 large eggs
4 ounces prosciutto, thinly sliced
Fresh basil, thinly sliced, for garnish

Steps:

  • Preheat a pizza stone in a 400 degree oven for 20 minutes. Prepare an ice bath. Bring a pot of water to a boil. Add asparagus; cook until bright green and just tender, about 2 minutes. Transfer to ice bath to stop the cooking. Drain; set aside.
  • Divide dough into four pieces. On a lightly floured surface, roll each piece into a 7-inch round. Top rounds with ricotta, mozzarella, asparagus, tomatoes, and olives. Season with salt and pepper.
  • Bake until crust is golden and cheese has melted, 10 to 12 minutes. Break an egg into a bowl, and slide onto a pizza; repeat. Continue baking until eggs are set, about 4 minutes. Arrange prosciutto and basil over the top, and serve hot.
