PIZZA CHICKEN
All the best flavors of your favorite pizza pie, pizza chicken is a weeknight meal that's made in a skillet on the stovetop. Your family will beg you to make it over and over again!

Steps:
- In a large skillet* or sauteuse, heat the oil over medium until shimmering.
- Add the pancetta and cook until crispy. Transfer the pancetta to a paper-towel-lined plate.
- Season the chicken pieces with salt and pepper, and then add them to the pan with the pancetta drippings. Brown on one side, and then flip to finish the cooking the chicken through (to test, slice through a thick piece and inspect the insides for doneness). Transfer the chicken to a plate to rest.
- Add the anchovies, capers, olives and crushed red pepper to the pan. Stir until sizzling and fragrant.
- Mix in the garlic and continue cooking for 30 seconds more. Pour in both cans of tomatoes, the sprig of basil, plus a big pinch of salt. Give everything a good stir, and reduce the heat slightly to maintain a gentle simmer. Let the tomato mixture cook for 15 minutes. If splattering is a problem, partially cover the skillet with a lid or piece of foil.
- Remove the basil sprig, reduce heat to low, and return the chicken to the sauce and let rewarm. Arrange the mozzarella ball halves among the chicken. Top the skillet with the crispy pancetta and chopped basil leaves.
- Serve the Pizza Chicken with a salad or crusty bread.

PIZZA CHICKEN

- Place a rack in the center of your oven and preheat the oven to 375 degrees F.
- Season the chicken 3/4 teaspoon salt and 1/4 teaspoon black pepper, sprinkling both sides.
- In a large, heavy-bottomed, and ovenproof skillet, heat 1 tablespoon olive oil over medium high. Once hot, add the chicken breasts, top side down, and let cook undisturbed for 2 to 3 minutes, until the surface is golden brown. Flip and brown the other side. Remove to a plate (the chicken does not need to be cooked through).
- Reduce the heat to medium. Add the remaining 1 tablespoon oil, onion, and remaining ¼ teaspoon salt and ¼ teaspoon black pepper. Sauté until the onion is tender, about 5 minutes.
- Add the garlic, Italian seasoning, and red pepper flakes. Let cook until very fragrant, about 30 seconds.
- Pour in the pasta sauce and Worcestershire sauce. Let simmer for 5 minutes.
- Nestle the chicken back into the sauce.
- Sprinkle the Stella Fontinella Cheese over the top of the chicken.
- Arrange the pepperoni slices on top.
- Place the skillet in the oven and cook for 15 to 20 minutes, or until a thermometer inserted in the thickest portion of the chicken registers 165 degrees F and the juices run clear (my smaller breasts were done closer to the 15-minute mark; larger ones may need longer).
- Sprinkle with fresh basil and enjoy hot.

- Preheat oven to 400 degrees F (200 degrees C).
- Combine bread crumbs, Parmesan cheese, salt, and black pepper in a shallow bowl; place flour into a second bowl. Whisk egg and lemon juice together in a third bowl.
- Dip each chicken breast in egg mixture and dredge in flour; dip again in egg mixture and dredge chicken in crumb mixture until coated. Place coated chicken breasts into a baking dish.
- Bake in the preheated oven until chicken is heated through and crumbs are golden, about 20 minutes.
- Spoon 2 tablespoons pizza sauce onto each chicken breast, sprinkle each with half the mozzarella cheese, and top each with half the pepperoni slices.
- Bake until chicken is no longer pink inside and the juices run clear, about 10 more minutes. An instant-read meat thermometer inserted into the thickest part of a breast should read at least 160 degrees F (70 degrees C).

PIZZA-STUFFED CHICKEN

- Position an oven rack in the top third of the oven and preheat to 400 degrees F. Coat a 9-by-13-inch baking dish with cooking spray.
- Lay a chicken breast on a cutting board with the tapered end pointing at you. Using a sharp knife held horizontally to your work surface, begin slicing the chicken breast in half, starting at the thicker end of the breast and slowly working towards you, leaving an outer edge connected so you can open it like a book. Butterfly all the breasts in this manner and set in the fridge until ready to roll.
- Cut six 1/4-inch-thick slices from the mozzarella, then finely chop the rest.
- To build the pizza rolls: Open the butterflied chicken breasts so they lay flat on your cutting board. Sprinkle the chicken evenly with salt and pepper. Top with some spinach leaves, sausage, sun-dried tomatoes and chopped mozzarella. Roll the chicken around the filling and tuck into itself so that the seam is facing down. Place the rolled chicken in the prepared baking dish, seam-side down. Sprinkle with salt and pepper. Repeat with the remaining chicken and fillings.
- Bake the chicken until the internal temperature reaches 165 degrees F, 20 to 25 minutes. Meanwhile, heat up the pizza sauce. About 3 minutes before the chicken is done, top each piece with a slice of mozzarella.
- Spoon the warm pizza sauce over the chicken and garnish with the Parmesan and basil.
PIZZA CHICKEN BAKE RECIPE BY TASTY

- Preheat the oven to 350°F (180°C).
- Add the chicken to an ungreased 9 x 11-inch baking dish. Sprinkle the Italian seasoning, onion powder, salt, and pepper over the chicken. - Place the chicken bake under the broiler and broil for about 3 minutes, or until the cheese is browned (watch closely as it can burn quickly). Remove the chicken bake from the oven and let cool for about 10 minutes.
- Garnish the pizza chicken with shredded Parmesan cheese. Serve with garlic bread.
