This British dessert, apple and plum crumble, is easy and quick to prepare. Use tart apples and ripe plums. Learn how to perfect any fruit crumble recipe.

225g (½lb) apples, peeled, cored and cut into 1cm (½in) slices
450g (1lb) plums, washed, stoned and halved
30ml (2 tbsp) caster sugar
175g (8oz) plain flour, sieved
120g (4oz) golden caster sugar
120g (4oz) butter
15ml (1 tbsp) oats

Steps:

  • Heat the oven to 190°C/170°C/gas mark 5.
  • Toss the apples and plums with caster sugar and place them in a 23cm (10in) round baking dish. Flatten the mixture.
  • Place the flour and golden caster sugar in a bowl and slice in the butter.
  • Rub mixture with your fingertips until a breadcrumb consistency is achieved.
  • Pour the crumbs over the fruit evenly and flatten the mixture.
  • Sprinkle with oats.
  • Bake in the oven for 35 minutes or until the top is golden and the apples are soft.
  • Leave to cool for 10 minutes before serving with cream, custard or ice cream.

4 plums (approximate weight 200g / 7oz before de-stoning) (any variety, note 2)
¼ teaspoon ground cinnamon
2 tablespoons white sugar
2 tablespoons water
160 g plain flour ((all purpose flour))
115 g unsalted butter (cut into small cubes)
85 g brown sugar
2 tablespoons oats (any kind such as jumbo or quick cook)

Steps:

  • Preheat the oven to 170°C fan / 190°F / 375°F.

6 large plums
3 Bramley apples, about 500 g (1lb 2oz)
50 g (2oz) light brown soft or caster sugar
1 tsp. ground cinnamon
Finely grated zest of 1 lemon
For the crumble topping
175 g (6oz) plain flour
125 g (4oz) butter, chilled and cut into cubes
50 g (2oz) rolled oats
75 g (3oz) demerara sugar

Steps:

  • Preheat oven 200°C (180°C fan) mark 6. Halve and stone the plums, then roughly chop and put into a large pan. Peel and core the apples, roughly chop, and add to the pan with the sugar, cinnamon, lemon zest and 5tbsp water. Cover and heat gently until apples are softening, about 5min.
  • Empty fruit into a shallow, ovenproof serving dish. Set aside.
  • To make the topping, put the flour into a bowl and rub in the butter with your fingers until the mixture resembles fine rubble. Mix in the oats and demerara sugar, then scatter the topping over the fruit.
  • Bake for 25-30min or until the crumble is golden. Serve immediately with our Foolproof Custard (see left) or vanilla ice cream.

1 cup white sugar
½ cup applesauce
⅓ cup orange juice
¼ cup oil
2 eggs, lightly beaten
2 teaspoons minced fresh ginger
2 teaspoons vanilla extract
3 tablespoons white sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease a 9-inch square baking pan.
  • Sift together flour, baking powder, baking soda, cinnamon, salt, and nutmeg into a large bowl. Toss 1/2 of the apples and 1/2 of the plums into the flour mixture. Place remaining apples and plums in a second bowl and toss with melted butter.
