Wine spritzers were the precursor to wine coolers. Today, they offer up an easy way to mix and match fruit, soda, and wine in a no-fuss cocktail.

2 small oranges, zested (or 1 large orange, zested)
1 bottle Pinot Grigio wine
3 cups sparkling water

Steps:

  • In a small bowl, toss the citrus zests together. Divide the zest mixture among an empty ice cube tray, top with water and freeze for 3 to 5 hours.
  • In a large pitcher, combine the wine with the sparkling water and the citrus zest ice cubes. Stir and serve.

Steps:

  • Fill a wine glass halfway with the super-chilled wine ... the glass should frost ... that's when you know your wine's cool enough.
  • Splash in the club soda until the glass is three-quarters full. (Note: You can also use ginger ale or lemon lime soda!)
  • Then take a slice of lime and put it on the rim of the glass.

Instead of using ginger ale or seltzer, I really like them made with Fresca. Freshens up the wine and is really tasty! Add more or less Fresca for your tastes. Great for summer evenings on the deck.

800 g ripe cooking plums
50 g light brown sugar
1 orange
1 tsp ground cinnamon
1 tsp plain flour

Steps:

  • Preheat the oven to 180°C/350°F/Gas Mark four.
  • Grease a 20 cm (eight-inch) pie dish and line with baking parchment.
  • Roll out two-thirds of the pastry on a lightly floured surface until it is large enough to fit over the top of your pie dish with some overhang.
  • Transfer to the dish and press into the base and up the sides. Trim off any excess pastry with a sharp knife.
  • Refrigerate for 30 minutes.
  • In a bowl, mix together the sugar, orange zest, and cinnamon until well combined.
  • Add the plums and flour, tossing everything together until coated. Stir in a few tbsp of juice from the bowl.
  • Spoon into your pastry case and top with overhanging pastry, crimping the edges together to seal.
  • Cut a small hole or slit in middle of pie crust to allow steam to escape then transfer to oven and bake for 40-45 minutes until golden brown.
  • Serve warm with custard, cream, or ice cream.

1 cup sugar
1 cup water
1/4 teaspoon whole black peppercorns
Salt
6 prune plums, cut into 1-inch pieces
Seltzer
Red wine

Steps:

  • Bring sugar, water, peppercorns, and a pinch of salt to a boil in a saucepan. Add plums; return to a boil. Let cool. Refrigerate until ready to use (up to 1 week). Serve over ice, topped with seltzer or a combination of seltzer and red wine.

WILD PLUM SPRITZER

Number Of Ingredients 4

4 cups of pitted wild plums with skin on.
1/4 cup + 1 3/4 cups water
1 3/4 cups sugar
2 liters sparkling water

Steps:

  • In a medium pot add 1/4 cup of water and pitted wild plums Bring to a boil. Lower heat and simmer for 8 minutes or until pulp pulls away from skins. Stir regularly and smash wild plums as you stir. Place a mesh strainer over a large liquid measuring cup or bowl. Slowly stir with a spoon until juice seeps through to measuring cup or bowl. Discard the pulp. Repeat in batches until all pulp has been pressed and juice has filled measuring cup or bowl. If doing a bowl, you'll want to measure out mixture to see how much juice you got from your plums. Whatever amount you received will be the equivalent for the sugar and water. I received 1 3/4 cup of plum juice...so my simple syrup would have 1 3/4 cup water and 1 3/4 cup sugar. However if you got 1 1/2 cups plum juice, you'll do 1 1/2 cups water and 1 1/2 cups sugar. I hope this makes sense. So in a separate larger pot, add the correct amount of sugar and water. For me it was 1 3/4 cup water and 1 3/4 cup sugar. Bring to a boil and boil for 5 minutes. Remove from burner and add wild plum juice. Stir. If mixture is has too much pulp, strain again with a finer mesh strainer or cheese cloth. Place mixture in a quart canning jar and refrigerate for several hours or overnight. When ready to serve, fill glass 1/3 full with plum syrup and add sparkling water to make a full glass. Gently stir and drink!
