BUTTER POACHED FISH
Butter poached fish is delightful.

Steps:
- Heat two tablespoons of the butter in a medium-sized saucepan over medium heat. Add chopped shallots and cook until they are translucent. Make sure that the butter does not brown. Add lemon juice and remaining butter.
- When the butter has melted, add the fish. Gently place the fish into the pan. The cooking liquid should cover the fish 2/3 up the side of the fish. Turn the temperature high and allow the fish to cook for three minutes once the cooking liquid begins to boil. Turn the heat down and allow to cook on low for an additional minute.
- Finish the recipe with a touch of sea salt!

- Heat oven to 200C/180C fan/gas 6. Put the celeriac into a roasting tin, drizzle with 2 tbsp oil, then sprinkle over the fennel seeds. Season and bake in the oven for 45 mins, stirring halfway through, until lightly charred.
- While the celeriac cooks, put the spring onions in a dry pan and cook over a high heat for 3-4 mins, turning occasionally, until starting to char. Spread two large sheets of foil out on your work surface. Divide the spring onions between the foil sheets, then top with the grated courgette, garlic and fish. Season and drizzle over the lemon juice and the remaining 1 tbsp olive oil. Scrunch up the edges of the foil to seal and create two parcels. Put the parcels on a baking sheet and bake in the oven for 10-12 mins.
- When the celeriac is cooked, mash the pieces with a potato masher or a fork and season well. Pile the smashed celeriac onto plates, then carefully open the fish parcels - the contents will be hot - and gently slide onto the plates next to the celeriac. Garnish with parsley and serve with rocket leaves and lemon wedges.

POACHED COD ROE WITH PICKLED CELERIAC MAYO

Steps:
- Rinse the cod roe in cold water. Wrap the roe in either alu-foil or baking paper.
- Bring 1 liter of water to a boil. Add salt, bay leafs, pepper, red onion and dill.
- Turn the heat down to medium, Add the cod roe and leave to simmer, lid on, for 25-30minutes.
- Drain the cod roe and leave it to cool a bit before serving.
- Whisk the egg yolks, mustard, vinegar, salt and pepper together in a bowl. Keep whisking while adding the oil droplet by droplet until the texture is thick and creamy. Cover the bowl and leave it to rest in the fridge.
- Cut celeriac and carrots into small squares (0,5x0,5cm). Mix water, vinegar, sugar, salt and a little pepper in a pot and bring to a boil. Add the vegetables and boil over medium heat for 5 minutes. Remove the pot from the heat and leave to cool.
- Drain the vegetables, transfer them to a bowl and stir in 4-6 tbsps of the mayonnaise. Add mustard, vinegar, salt and pepper to taste. Fold in the herbs and serve straight away together with the poached cod roe.
POACHED COD WITH TOMATO AND SAFFRON
You want to cook the cod at a lazy simmer; it will make all the difference between buttery, flaky fish and rubbery, tough fillets.

- Heat oil in a medium skillet over medium heat. Add garlic and Aleppo pepper and cook, stirring often, until fragrant (garlic should not take on any color), about 3 minutes.
- Add tomatoes, crushing with your hands as you add them, wine, bay leaves, saffron, and 1/2 cup water. Bring to a boil, reduce heat, and simmer until flavors meld, 5-7 minutes; season with salt and pepper.
- Reduce heat to medium-low; season cod with salt and pepper and place in skillet. Cover and cook at a bare simmer until cod is opaque throughout and beginning to flake, 5-7 minutes (thicker pieces will take longer to cook).
- Gently transfer cod to shallow bowls and spoon poaching liquid over.

- For the poached cod: Pat the cod dry with a paper towel, sprinkle it with salt and black pepper and let sit at room temperature for 5 minutes.
- Heat a deep medium nonstick or enamel skillet over medium-high heat. Add the coriander seeds and pink peppercorns and cook until fragrant, about 1 minute. Slowly add the olive oil and bring the oil to 180 degrees F. Carefully add the cod to the oil. The cod should be fully submerged; if it's not, gently flip the fillets halfway through cooking, or add more oil to the skillet. Cook until the cod is opaque, 8 to 10 minutes.
- Meanwhile, for the dressing: Combine the creme fraiche, buttermilk, vinegar, cilantro and peppercorns in a blender and puree. Add salt to taste.
- For the avocado salad: Combine the avocado, radishes, shallot and teardrop peppers in a medium bowl. Sprinkle with a pinch of salt and a splash of champagne vinegar and toss gently; stir in the cilantro.
- Using a fish spatula, transfer the cod to a paper towel-lined plate. Place 1 piece of cod in the center of each of serving plates. Tuck the avocado salad next to the cod. Drizzle the salad with dressing and top with the crushed fried onions.

- Place butter in a large skillet or sauce pan over low heat until melted. Allow to cook until the milk solids float to the top. Once the butter stops bubbling, use a spoon to skin the foam off the top of the butter, then discard. What remains is clarified butter!
