POLISH SAUSAGE AND CABBAGE DINNER
This is a meal in one. This meal is great on a cold winter night. It even taste better the next day.

Steps:
- Start by cleaning your vegetables. Cut the cabbage and onion into six lengthwise slices. Cut potatoes crosswise into two pieces.
- In a large pot layer your ingredients in this order: cabbage, potato and onion.
- Pour chicken broth over the top of ingredients. Add salt and pepper to taste.
- The final step is to add the polish sausage on top of the ingredients. Cover and cook over med. heat until desire tenderness.
- Stir the ingredients so that you do not break the cabbage apart too much. So just be careful in stirring.
KIELBASA, CABBAGE, POTATO & ONION DIVERSITY CASSEROLE
My MOST DELICIOUS casserole recipe is a combination of German, Irish, Polish, and Cajun influences. This ultimate comfort food soothes the cockles of my little multi-ethnic tummy 8-)

Steps:
- Heat oven to 325º. Butter or spray 9 x 13 casserole dish with Pam.
- In a large Dutch oven on medium/high heat, sauté sliced sausage in a bit of olive oil until browned. Remove to a bowl.
- Reduce heat to medium and add butter. Sauté onions, carrots, potatoes, bell pepper, and cabbge until lightly caramelized - about 20 minutes. Add salt, pepper and onion soup mix. Stir in milk, vinegar, and sugar. Add sausage and drippings. Bring to boil. Reduce heat to medium-low; simmer for 5 minutes. Remove pot from heat and let cool slightly, then gently stir in eggs.
- In a large zip-lock bag, crush crackers with caraway seeds. Into the pot of veggies and sausage, add ½ of the cracker mixture. Pour into prepared casserole dish. Dust top evenly with remaining crackers. Bake at 325º for 45 minutes, or until heated through and top is golden brown.

POLISH CASSEROLE
I saw this one-dish (actually two) meal made on a PBS fundraising show. it is delicious. Everyone who loves Polish sausage, cabbage, and pierogies, raves about this dish. Great for potlucks because it's so easy to prepare.

Steps:
- Melt butter in large oven proof skillet.
- Saute onion, add sausage. Stir.
- Add chopped cabbage, cover.
- Parboil frozen pierogies.
- When cabbage has wilted, add salt and pepper to taste.
- Add pierogies.
- Put into 350 degree oven with skillet lid.
- Bake 20 minutes.

SLOW COOKED POLISH SAUSAGE, CABBAGE AND POTATO SOUP
My version/combination of several other recipes. I only cook for myself but this lasts several days in the fridge for reheating portions. Delicious with a crusty roll!

Steps:
- Wash and dice the potatoes (no need to peel unless it's how you prefer them) and place them at the bottom of the slow cooker/crock pot. Two small potatoes approximately 450g total weight.
- Slice the sausage length ways and then cut into slices. I personally slice them in half again so the pieces are roughly the same size (or slightly larger) than the diced potato. Put the sausage on top of the potatoes in the pot.
- Finely dice the onion and add that on top of the sausage.
- Chop the cabbage and add that on top of the onion.
- Season with garlic, parsley and plenty of cracked black pepper. Don't add salt as the amount of salt coming from the sausage can vary.
- Prepare the chicken stock to make up 1 litre (the stock cubes I use are 1 cube per 500ml so I mix two) and pour the stock over the other ingredients. Again, I use reduced salt stock cubes. You can always add more salt later.
- Cook on high for 6 hours, medium for 8 hours or low for 10 hours (based on Morphy Richards slow cooker). Stir half way through to ensure everything gets a good 'submerging' or if you can't then closer to the finish time is fine.

I wanted a polish sausage casserole recipe that combined the flavors that my family seemed to most like. When I couldn't find it, I decided to make my own and this was met with rave reviews from youngest to oldest! This will definitely go on our regular line up.

- Preheat the oven to 400 degrees. Place the oil (or melted butter) in a 9 x 13 baking dish. Spread the chopped onion and then the shredded potatoes evenly to cover the bottom of the pan. Sprinkle lightly with salt and pepper. Bake this first layer in the oven for 20 minutes, to crisp it up.
- While the potato layer is baking you will have time to make the cheese sauce: Melt the butter in a medium saucepan over medium heat. Then add the flour, dry mustard, and salt & pepper. Whisk the mixture together, allowing it to slightly brown and become smooth and just bubbly. Pour in the milk and whisk until smooth and thick. Then add the cheese and whisk again until the cheese has melted, remove from heat.
- Remove the baking dish from the oven and cover the top of the potatoes with the thinly sliced polish sausage. Place uncooked asparagus over the top of the sausage and pour the cheese sauce evenly over the top of the asparagus. Sprinkle the breadcrumbs over the casserole and put into the oven to bake for 40 minutes.

- Peel and chop the potatoes, rinse the potatoes and place them in a medium-size glass bowl. Sprinkle the potatoes with ½ teaspoon salt and ¼ teaspoon black pepper, stir or toss with your hands. Microwave the potatoes for 4 minutes, stir and microwave an additional 2-4 minutes until fork tender.
- While the potatoes are cooking, warm a large skillet over medium-high heat. Add the oil and as soon as it's shimmering, add the onions. Saute for a few minutes, until the onion is barely tender and lightly browned. Add the garlic and the kielbasa. Cook while stirring frequently, for about 3 minutes. When the potatoes are tender, add them to the skillet. Toss to coat, adding a small additional drizzle of oil only if needed. - Add the cabbage and sprinkle with 1/4 teaspoon salt and the remaining 1/4 teaspoon pepper. Toss to combine, add 2 tablespoons water to the skillet and reduce heat to medium-low. Cover with lid. Cook for about 2 minutes, until the cabbage is bright green and barely wilted. Taste and add additional salt, only if needed. Enjoy!

- Line a large rimmed baking sheet with heavy-duty foil; spread the sausage coins, potatoes and cabbage out evenly over the foil.
