COTTAGE CHEESE PANCAKES
A breakfast of cottage cheese with ketchup and pepper might seem scandalous to some, but to President Nixon it was standard morning fare. The cottage cheese in these flapjacks adds nice texture and an old-fashioned flavor reminiscent of blintzes. If you want to top them with something red, I suggest strawberry syrup.

Steps:
- In a small bowl, whisk eggs, cottage cheese and butter until blended. Add flour; stir just until moistened., Lightly grease a griddle; heat over medium heat. Pour batter by 1/4 cupfuls onto griddle. Cook until bottoms are golden brown. Turn; cook until second side is golden brown.

COTTAGE CHEESE PANCAKES
Steps:
- Gather the ingredients.
- In a large mixing bowl, whisk together the cottage cheese, oil, and eggs to create a batter. The batter will be lumpy from the cottage cheese, but that's the texture that's needed.
- In a separate bowl, add the baking soda to the flour.
- Sift the flour mixture over the cheese and egg batter and whisk thoroughly until there are no flour lumps. The batter is ready when it is light and frothy with bubbles on the surface. Set aside.
- Heat a large non-stick skillet over medium heat. Add some butter to sufficiently grease the pan and drop 1/4 cup of the batter into the pan.
- Cook on one side for 2 to 3 minutes until bubbles are forming on the surface.
- Flip over and cook for a further 3 minutes. If the skillet is large enough, you can make two or three at the same time. Remove from the pan and wrap in a tea cloth to keep warm while you repeat the process with the remaining butter and pancake batter.
- Serve your pancakes warm with your favorite sides.

POLISH COTTAGE CHEESE DIP (GZIK)
This is a simple dip with infinite possibilities. The classic version, called gzik, comes from the Wielkopolska province in Poland. It's built from a farmer's cheese called twarog, which is essentially a dry version of what Americans know as cottage cheese. The cheese, which comes molded into a thick disc, is mashed with a fork, then loosened with a few tablespoons (or more, depending on the dryness of the cheese) of yogurt or cream. Radishes and some members of the allium family, most often chives or onions, add flavor; dill or other herbs sometimes make an appearance. The classic way to eat it is on boiled or baked potatoes still in their jackets, but gzik on buttered rye bread is a popular breakfast dish. Although you can use any style of cottage cheese for this recipe, smaller curds work better than large because the dip should be slightly smoother than cottage cheese.

- In a large nonstick skillet, heat 2 teaspoons oil over medium. Working in batches, drop cottage cheese mixture by 1/4 cupfuls into pan (2 or 3 at a time).
- Cook until bottoms are set and tops have small bubbles, about 1 minute. Turn pancakes and cook until just firm in the center, 1 to 3 minutes more. Repeat, using remaining 3 teaspoons oil for the other batches.

LATVIAN COTTAGE CHEESE PANCAKES (BIEZPIENA PLACENISI)
This is my adaptation of a common Latvian dish. It was a common breakfast or lunch dish in Latvia. It was topped with a little butter and honey. My kids like to put maple syrup on instead. I almost always double the recipe because it is easy to reheat for a quick snack.

- Mix together cottage cheese, raisins, eggs, sugar, vanilla extract, cinnamon, and salt in a large bowl until well combined. Add flour slowly, mixing until incorporated and batter is very thick.
- Heat oil in a large skillet over medium heat. Drop batter by tablespoonfuls onto the hot skillet and cook for 1 minute. Flip and flatten slightly with a spatula, cook until browned on the other side, about 2 minutes more. Flip back to the first side and cook until browned, about 1 more minute.
