1/2 cup (1 stick) unsalted butter (room temperature)
2 cups grated aged cheddar
1 1/2 cups all-purpose flour
1 teaspoon coarse salt
1/4 teaspoon cayenne pepper
1/4 teaspoon sweet paprika
2 tablespoons heavy cream

Steps:

  • Preheat oven to 325 degrees. Pulse butter, cheddar, flour, salt, cayenne pepper, and paprika in a food processor until mixture resembles coarse crumbs. Add heavy cream; pulse until just combined.
  • Divide dough into 4 pieces; shape into rectangles. Wrap each in plastic. Refrigerate until firm, about 30 minutes.
  • Working in batches, roll out each rectangle on a lightly floured surface to a 1/4-inch thickness, and cut into 1-inch squares. Transfer to a baking sheet leaving at least 1/4 inch between each. Refrigerate until chilled and firm, about 20 minutes. Bake until pale golden, 15 to 17 minutes.

  • Heat broiler.
  • Mix mayo and onions until blended; spread onto toast slices. Top with cheese.
  • Place on baking sheet.

1/3 cup walnuts
2 tablespoons vegetable oil
1 Granny Smith apple
1/3 cup pitted dates
2 cups grated extra-sharp Cheddar (about 8 ounces)
1/4 cup mayonnaise
2 tablespoons chopped fresh flat-leafed parsley leaves
2 tablespoons fresh lemon juice
1 tablespoon apricot preserves
3/4 teaspoon curry powder
three 5-inch pita loaves

Steps:

  • Chop walnuts and in a small skillet cook in oil over moderate heat, stirring, until lightly toasted. Cool nuts slightly.
  • Preheat broiler.
  • Coarsely grate apple and finely chop dates. In a bowl stir together all ingredients except pitas until combined well.
  • Horizontally split pitas and arrange, cut sides down, on a large baking sheet. Broil pitas about 4 inches from heat until golden and crisp, 1 1/2 to 2 minutes. Remove baking sheet from oven and turn pitas over. Divide Cheddar mixture among pitas, spreading evenly. Broil pitas until cheese mixture begins to bubble, about 2 minutes. Cut each pita into 6 wedges.

Steps:

  • Mix the cheese, green onions, and olives together in a bowl.
  • Add the mayonnaise and curry powder and mix well.
  • Divide the cheese mixture on to the toasted English muffin halves and spread to cover the surface of each muffin evenly.
  • Place the muffins on a baking sheet (cheese side up) and broil until they are puffed and golden, about 3 minutes.
  • Cut each muffin into four squares and serve immediately.
  • Note: These can be prepared ahead of time - Chill and then broil right before serving.

12 slices white bread, crusts removed
3 tablespoons butter, melted
1/2 pound ground beef
5 celery ribs, chopped
1/2 cup seasoned bread crumbs
2 teaspoons curry powder
1/2 teaspoon garlic salt
Optional: Cucumber raita and chopped fresh cilantro

Steps:

  • Preheat oven to 400°. Flatten bread slices with a rolling pin; brush tops with butter. Set aside., In a large skillet, cook beef and celery over medium heat until beef is no longer pink and celery is tender, 8-10 minutes, breaking beef into crumbles; drain. Stir in bread crumbs, curry powder and garlic salt., Spoon beef mixture evenly among bread slices. Roll up bread slices; secure with toothpicks. Place on a greased baking sheet. Bake until golden brown, 12-15 minutes. When cool enough to handle, discard toothpicks and cut each roll-up crosswise into 3 slices. If desired, serve warm with cucumber raita and chopped fresh cilantro.

2 spring onions , trimmed
400g skinless cod loin , cubed
¼ pack fresh coriander
1 large egg
2 tsp Madras curry powder
1 tsp lemon juice
1 tbsp cornflour
1 tbsp ground almonds
rapeseed oil , for frying
12 chunks fresh ripe mango
3 thick slices of cucumber , quartered
6 cherry tomatoes , halved
12 fresh coriander leaves
24 cocktail sticks

Steps:

  • Tip the spring onions into a food processor and pulse briefly to chop. Add all the remaining fishcake ingredients, except for the oil, and blitz to a paste. Shape into 24 mini cakes.
  • Heat a drizzle of the oil in a large non-stick frying pan. Fry half the fishcakes for 1-2 mins each side until firm and golden. Remove from the pan and repeat with the other fishcakes. Will keep in the fridge for up to two days.
  • To serve, thread the mango and cucumber onto 12 cocktail sticks, then the cherry tomato and a coriander leaf on the remaining sticks. Warm the fishcakes, if you like, at 180C/ 160C fan/gas 4 for 10 mins. Spear the mango version into the side of the fishcakes, then spear the cherry tomato version through the top of the remaining fishcakes.

  • Preheat oven to 375 degrees F (190 degrees C).
