These Vietnamese Salad Rolls are a deliciously easy and have nice fresh ingredients. The perfect spring and Sumer appetizer recipe everyone enjoys!

1 pound large shrimp (31-40 count, peeled and deveined)
2 cups shredded lettuce
1/2 cup rough chopped cilantro
2 sprigs mint (leaves removed and chopped fine)
2 scallions (thinly sliced)
8 ounces vermicelli rice noodles (cooked per directions on the box, and drained)
2 cups fresh bean sprouts
14 rice paper wrappers
1/2 cup hoisin sauce
1 tablespoon smooth peanut butter
1 teaspoon rice wine vinegar
1 teaspoon soy sauce
1/2 teaspoon toasted sesame oil
1/4 teaspoon garlic powder
1/4 teaspoon onion powder

Steps:

  • Fill a large stockpot halfway with water and bring to a boil. Add the shrimp to the water and cook until cooked through and opaque, about 5 minutes stirring occasionally. Drain and place the shrimp in a bowl with ice water until cold, 10 minutes, drain, and set aside.
  • Place the shredded lettuce, chopped cilantro, mint, and scallions into a medium-sized bowl and toss together to combine, set aside.
  • Get your workstation ready. Place your shrimp, lettuce mix, rice noodles, bean sprouts, and rice paper wrappers around your station.
  • Fill a very large bowl, big enough to submerge the wrappers, ⅔ of the way high with hot tap water. Place 1 rice paper wrapper into the water until it softens and becomes flexible, 30 seconds to 1 minute. Place the wrapper onto your clean workstation.
  • On the bottom ⅓ of the wrapper, place some of the lettuce mixture, followed by the noodles, then the sprouts. Take the bottom of the wrapper and fold it over the filling.
  • Place the shrimp into the center of the wrapper right next to the fold, fold in the flaps on the sides.
  • Continue to tightly roll the wrapper until it is fully secure. Place it on a sheet tray while you roll the rest.
  • To make the dipping sauce, place the hoisin sauce, peanut butter, rice wine vinegar, soy sauce, sesame oil, garlic powder, and onion powder into a medium-sized bowl and whisk together.
  • Serve the spring rolls with the dipping sauce on the side.

1 (8 ounce) package rice vermicelli
8 ounces cooked, peeled shrimp, cut in half lengthwise
8 rice wrappers (6.5 inch diameter)
1 carrot, julienned
1 cup shredded lettuce
¼ cup chopped fresh basil
½ cup hoisin sauce
water as needed

Steps:

  • Bring a medium saucepan of water to boil. Remove from heat. Place rice vermicelli in boiling water, remove from heat, and let soak 3 to 5 minutes, until soft. Drain, and rinse with cold water.
  • Fill a large bowl with hot water. Dip one rice wrapper in the hot water for 1 second to soften. Lay wrapper flat, and place desired amounts of noodles, shrimp, carrot, lettuce and basil in the center. Roll the edges of the wrapper slightly inward. Beginning at the bottom edge of wrapper, tightly wrap the ingredients. Repeat with remaining ingredients.
  • In a small bowl, mix the hoisin sauce with water until desired consistency has been attained. Heat the mixture for a few seconds in the microwave.
  • Serve the spring rolls with the warm dipping sauce.

These are like unfried spring rolls and are quite fresh and delicious. Nuoc Cham is a tradtional South East Asian condiment that is served with the salad rolls.

24 rice paper sheets (available in Chinatown)
1 cup fish sauce
4 tablespoons lime juice
1 teaspoon garlic, minced
2 teaspoons chili
4 tablespoons water
2 tablespoons sugar
1 tablespoon ginger
2 tablespoons lemongrass
1/2 tablespoon garlic
2 tablespoons lime
1 tablespoon chili paste
1 tablespoon hoisin
2 tablespoons sesame oil
1 small napa cabbage, fine chiffonade
1 cucumber, peeled, seeded and finely julienned
2 red peppers, finely julienned
1 carrot, finely julienned
2 tablespoons ginger, minced
2 to 3 tablespoons cilantro, chopped
2 to 3 tablespoons mint, chopped
2 to 3 tablespoons nuoc cham
4 ounces shredded chicken breast
4 ounces sliced beef sirloin tip
4 ounces coarsely chopped shrimp
12 to 16 small lettuce leaves
10 to 12 sprigs of mint
10 to 12 sprigs of cilantro
1 cucumber, cut into small spears
1/2 cup mung bean sprouts
1 carrot, julienned
10 to 12 chiles (preferably fresh Thai Bird)
10 to 12 lime wedges

Steps:

  • Assemble all ingredients and let stand in a bowl that it may be presented in later.
  • To Assemble and Serve:
  • Soak the rice papers a few at a time in hot water. Have a towel ready to work on and to take up some of the extra moisture.
  • Have your fillings ready and seasoned.
  • Roll a variety of salad rolls (some just chicken, just vegetable, some combos, etc.) until all filling and wrappers are used.
  • Arrange the garnishes on a platter along with the fresh salad rolls and the nuoc cham dipping sauce.
  • Tradition has it that the guests using a lettuce leaf as a cup will garnish his or her own salad roll as they choose and dip into nuoc cham.
  • Cut all vegetables carefully and mix with herbs. Wait to season with nuoc cham until you are ready to roll.
  • Brush chicken, beef and shrimp with marinade and cook, preferably on grill. Cool after grilling.
  • Cut chicken, beef and shrimp into desired size and toss with any leftover marinade to season.

An authentic, delicious, and relatively easy Vietnamese recipe of spring rolls. Filled with pork, shrimp, rice noodles and veggies, this is a great snack you can prepare ahead of time too!

1/2 lb pork belly
1 medium onion (halved)
1 tsp sugar
1 tsp salt
1/2 lb shrimp (31/35 size)
1/4 tsp salt
1 head green leaf lettuce (or red leaf lettuce)
1/2 bunch mint
1/2 bunch chives
1/2 pack dried spring roll wrapper ((rice paper))
1/3 pack dried rice noodles or dried bánh hỏi
2 tbsp oil
2 tbsp minced garlic
8 tbsp hoisin sauce
2-3 tbsp peanut butter
1 c water
Sambal chile paste (to taste, optional)

Steps:

  • Add pork, onion, salt and sugar to a small pot and add enough water to cover about 1 inch above the pork. Bring to a boil on high heat and then lower to medium and cook for about 25-30 minutes or until pork juices run clear when poked at the thickest part, or it registers 145 F with an instant read thermometer at the thickest part.
  • Cover the pork in a bowl as it cools so it doesn't darken. Once cool, slice the pork as thinly as you can to make rolling easier later.
  • Defrost shrimp in water bowl. Once defrosted, de-vein the shrimp. Hold a shrimp up to a light to locate the vein, pierce the whiter part (joint) of the shrimp just below the vein with a toothpick, and pull the toothpick upwards towards the shrimp back. Do this slowly to remove the vein. Piece again at another joint if the vein breaks to remove all traces of vein. Repeat with all your shrimp.
  • Cook the shrimp: add shrimp, salt, and enough water in a small pot to barely cover your shrimp. Boil on medium-high heat for only about 1.5 to 2.5 minutes or until the shrimp is no longer translucent. Drain and run under cold water to stop the cooking process.
  • Remove the shells and tails from shrimp, and cut the shrimp in half along the body.
  • Cook either your rice noodles according to the package instructions. Timing can vary wildly depending on noodle thickness and brand. This can be anywhere from 2 to 10 minutes. Drain and cool the noodles under cold, running water to stop it from cooking further.
  • Prepare your vegetables by rinsing and drying them.
  • Add warm water to a plate and soak the rice paper sheet for about 5-10 seconds. Soak the rice paper just enough so that it is pliable and easy to handle, but remove the sheet before it gets too soft and sticky. Lay rice paper on a plate and begin to assemble your roll.
  • Add lettuce towards the bottom of the rice paper. Leave 1 to 1½ inches of space on either side of the rice paper. Layer with mint and chives. Try to not add too many items because it will be harder to roll and might tear your rice paper.
  • Add shrimp in the middle of the rice paper with the orange skin facing down.
  • Layer the sliced pork on top of the shrimp.
  • Add the noodles across the vegetables, spread evenly across.
  • Fold the left and right sides towards the middle so that it's snug. Lay some chives lengthwise with one end poking out. Then fold the bottom up to cover the noodles. You want to keep the roll tight, so lightly squeeze it together as you roll. Continue to roll upwards to complete the spring roll.
  • In a pan over medium heat, saute garlic in oil until fragrant.
  • Add in hoisin sauce, peanut butter, and water and mix thoroughly.
  • Bring to boil, and then immediately turn off the heat and pour into a heat safe dipping bowl. The sauce will slightly thicken as it cools.
  • Sprinkle ground peanuts on each sauce dipping bowl, and leave the chile paste on the side so others can add to their own dipping bowl as desired.

2 ounces rice vermicelli, cooked
8 large rice paper sheets
8 large cooked shrimp, deveined, peeled, and cut in half lengthwise
1 1/2 tablespoons chopped fresh basil
3 tablespoons chopped of fresh mint
3 tablespoons chopped fresh cilantro
2 leaves lettuce, chopped
3 tablespoons hoisin sauce
1 tablespoon peanut butter
1 teaspoon chili sauce
1 teaspoon finely chopped peanuts

Steps:

  • Fill a large bowl with warm water. Soak one rice wrapper in the water until soft (a couple of seconds). Lay wrapper flat.
  • In a row across the center, place two shrimp halves, then below that a handful of vermicelli, then basil, mint, cilantro, and lettuce, leaving two inches free on each side.
  • Fold uncovered sides inward, then then tightly roll the wrapper, starting with the lettuce which should be closest to you.
  • Repeat for remaining wrappers.
  • In a small bowl, mix Hoisin sauce, peanut butter, chili sauce, and peanuts. Use as dipping sauce for the completed rolls.
