An unusual recipe for Polish pickle soup or zupa ogórkowa is from the women of Gwizdaly village in the Mazowsze region of Poland.

8 cups chicken or vegetable stock
1 pound potatoes (peeled and quartered)
2 large carrots (peeled and diced)
1 large parsnip peeled and diced
1 rib celery (diced)
6 dill pickles (shredded)
1 cup sour cream
Optional garnish: fresh dill (chopped)

Steps:

  • In a large saucepan, bring the stock to a boil. Add potatoes, carrots, parsnip, and celery. Return to the boil, reduce heat, and simmer until vegetables are tender.
  • Add pickles and any accumulated juices, and combine well.
  • Temper the sour cream in a small heatproof bowl by adding a few ladles of hot soup and whisking constantly.
  • Transfer the tempered sour cream back to the soup, and heat through until starting to simmer but do not boil or the sour cream will break.
  • Serve hot in heated bowls with chopped fresh dill and slices of rye bread with caraway seeds .

My Mom in Law found this recipe in a local newspaper and asked me to make it. It's very tasty. We served it with toasted seedless rye bread. If you like dill pickles you will love it.

1 lb fresh kielbasa
1 Tbsp bacon fat or butter
1 small onion chopped
3/4 c dill pickle juice
to taste salt and pepper
2 yukon potatoes cubed
2 c julian carrots
1/2 c sour cream
2 Tbsp flour
1 c chopped dill pickles
1 tsp dried dill

Steps:

  • 1. Place kielbasa in soup pot. Cover with 1 inches of water. Bring to a boil. Lower heat and simmer 1/2 hour.
  • 2. Remove kielbasa from pan saving liquid. Slice kielbasa to desired thickness and set aside.
  • 3. In a separate skillet heat the bacon fat or butter and saute the onion till soft. Add that to the reserved juice in the kielbasa pot.
  • 4. To the kielbasa pot add 1cup water, pickle juice, salt and pepper. Bring to boil. Add potatoes and carrots. Cook uncovered for 20 minutes.
  • 5. Combine sour cream and flour in a medium bowl, then slowly stir in 1/2 cup of the broth until smooth.
  • 6. Whisk that mixture back in the sauce pan. Bring just to a boil then remove from heat.
  • 7. Stir in the chopped pickles, kielbasa and dill.
  • 8. Simmer 5 minutes.

Finely chopped dill pickles are combined with lots of seasonings in chicken broth to make a very unique soup. This does sound like an odd recipe, but it really is good!

2 tablespoons butter
½ cup all-purpose flour
7 cups chicken broth
½ cup finely chopped dill pickles
2 tablespoons dill pickle juice
2 tablespoons white sugar
1 tablespoon Worcestershire sauce
2 teaspoons minced garlic
4 teaspoons onion salt
1 teaspoon dill weed
1 teaspoon curry powder
½ teaspoon white pepper
2 bay leaves
2 cups warm milk

Steps:

  • Melt butter in a large stockpot over medium heat. Whisk in flour, and cook until the flour just begins to turn from white to a pale beige, 1 to 2 minutes. Whisk in chicken broth until thickened and smooth. Increase heat to medium high, add dill pickles, pickle juice, sugar, Worcestershire sauce, garlic, onion salt, dill weed, curry powder, white pepper, and bay leaves. Bring to a simmer, then reduce heat to medium-low and simmer for 5 minutes, whisking frequently. Remove from heat and whisk in milk. Remove bay leaves before serving.

  • In a large pot heat up the oil, add the bay leaf, onion and leek, stir and cook over a medium heat for 3-4 minutes until soft.
  • Add the celeriac, carrot, potatoes and dill pickles, stir and continue cooking for 5 more minutes, stirring occasionally.
