Pollo guisado is a delicious chicken dish with meat that falls off the bone. It's a popular dish in Puerto Rico, Cuba, and the Dominican Republic.

2 1/2 pounds chicken (with skin on, thighs, legs, breast, and wings, cut-up)
1/2 to 1 teaspoon adobo seasoning
1 tablespoon extra virgin olive oil
1/2 cup sofrito
1 packet ​ sazón seasoning (or 1 tablespoon annatto/achiote oil )
1/4 cup olives (pimento-stuffed Spanish Manzanilla, pitted)
1 teaspoon ground cumin
1 bay leaf
Optional: 1 culantro leaf
Optional: 1/2 teaspoon Italian seasoning
8 ounces tomato sauce (canned, seasoned with peppers and onions)
1 cup chicken broth (or water)
1 large potato (cut into bite-sized cubes)
Garnish: cilantro (chopped)
Garnish: parsley (chopped)

Steps:

  • Gather the ingredients.
  • Season the chicken pieces with the adobo seasoning.
  • Heat the olive oil over medium heat in a heavy skillet or a Dutch oven .
  • Add the chicken pieces and brown them for about 5 minutes per side.
  • Add the potato cubes, tomato sauce, chicken broth, culantro, olives, cumin, Italian seasoning, bay leaf, achiote oil, and sofrito. Stir well and turn the chicken pieces to coat them with the sauce.
  • Cover the pot with a tight-fitting lid and reduce the heat to low. Simmer the chicken stew for 35 minutes or until a thermometer inserted in the thickest piece, away from the bone, reads 160 F.
  • Remove the bay leaf and the culantro leaf.
  • Serve hot and enjoy!

1/4 taza de jugo de limón amarillo (lemon)
3 cucharadas de azúcar morena
2 cucharaditas de mostaza Dijon GREY POUPON Dijon Mustard
1/4 cucharadita de pimienta negra
6 pechugas de pollo deshuesadas y sin pellejo de tamaño pequeño (1.5 lb)
1 paquete (20 oz) de tortitas de papa para asar a la parrilla de corte grueso ORE-IDA Grillers Golden Thick Cut Potatoes

Steps:

  • Mezcla bien todos los ingredientes excepto las pechugas y las papas; viértelos sobre las pechugas en un molde poco profundo. Dales vuelta a las pechugas para recubrirlas por ambos lados de forma pareja. Ponlas a marinar en el nefrigerador durante 1 hora.
  • Calienta la parrilla a fuego medio. Retira las pechugas de la marinada; deshazte de la marinada. Asa las pechugas de 6 a 7 min. por lado o hasta que se cocinen (temperatura interna de 165°F). Mientras tanto, asa las papas según las instrucciones del paquete.
  • Sirve las pechugas con las papas.

A delicious and easy Spanish chicken stew, or pollo guisado. Great for entertaining and makes for great leftovers. Serve over white rice.

2 tablespoons olive oil
1 whole chicken, cut up
salt and ground black pepper to taste
1 medium onion, chopped
4 cloves garlic, minced
½ cup sofrito
2 potatoes, peeled and cubed
2 cups chicken broth
1 (8 ounce) can tomato sauce
1 (1.41 ounce) package sazon seasoning
½ teaspoon ground cumin
1 bay leaf
2 tablespoons cold water
1 tablespoon cornstarch

Steps:

  • Heat olive oil over medium-high heat in a Dutch oven. Season chicken with salt and pepper and add to the hot pot to brown, 6 to 7 minutes per side. Transfer chicken a bowl and cover with an aluminum foil tent.
  • Reduce heat to medium; add onion to the pot and saute until translucent, about 5 minutes. Add garlic and cook for 1 minute. Stir in sofrito and cook for 2 to 3 minutes. Add potatoes, chicken broth, tomato sauce, sazon, cumin, and bay leaf; bring to a boil. Return chicken to the pot. Cover and cook for 1 hour. Remove chicken.
  • Mix water and cornstarch together in a small bowl; stir into simmering mixture until nicely thickened. Place chicken back into the pot and continue to cook about 10 minutes more.

6 onzas de pasta de guayaba
1/4 taza de agua
1/4 cucharadita de pimienta roja molida (cayena)
1 paquete (6 oz) de jamón cocido al horno OSCAR MAYER Baked Cooked Ham, picado
1/2 taza de aderezo italiano fuerte KRAFT Zesty Italian Dressing, cantidad dividida
12 muslos (thighs) de pollo (2 lb)
1 bolsa (9 oz) de hojas de espinaca fresca

Steps:

  • Coloca la pasta de guayaba, el agua y la pimienta roja en un tazón mediano apto para microondas. Calienta esto en el microondas a potencia ALTA durante 1 minuto; revuelve la pasta hasta que se disuelva y la mezcla esté homogénea. Añade el jamón y revuelve; ponlo a un lado.
  • Calienta 1/4 de taza del aderezo en una sartén antiadherente grande a fuego medio. Agrega 6 de los muslos de pollo; cocínalos de 2 a 3 minutos de cada lado o hasta que ambos lados estén dorados. Retira el pollo de la sartén; tápalo para mantenerlo caliente. Repite el procedimiento con el 1/4 de taza de aderezo restante y los otros 6 muslos. Coloca todos los muslos en la sartén; cúbrelos con la mezcla de guayaba. Hazlos hervir. Reduce el fuego a medio-bajo; pon la tapa. Mantén un hervor suave durante 20 minutos o hasta que el pollo esté bien cocido (165ºF).
  • Retira el pollo y la salsa de la sartén; colócalos sobre un platón para servir. Pon la tapa para mantenerlos calientes. Incorpora la espinaca a la misma sartén; cocínala, revolviendo de vez en cuando, durante 5 minutos o hasta que se haya ablandado. Coloca la espinaca con una cuchara en el platón; completa el plato con el pollo.

After spending many years living in the Dominican Republic, nothing takes me back more than making a big batch of pollo guisado, the most tender, flavorful chicken you'll ever eat. Serve this with Dominican rice and beans and a slice of fresh avocado. The hard-to-find Dominican ingredients can easily be ordered online.

1 (3 to 3 1/2 pound) whole chicken, skin removed and cut into pieces
¼ cup rancho adobo sazon criollo, or to taste
1 red onion, chopped into large pieces
2 Cubanelle peppers, chopped
¼ cup sazon liquido
1 tablespoon garlic paste
⅓ cup vegetable oil
1 tablespoon light brown sugar
⅓ cup tomato paste
1 stalk celery, chopped
2 tablespoons chicken bouillon powder, or more to taste
1 cup water

Steps:

  • Place chicken pieces in a bowl and season generously with ranchero sazon criollo. Add onion, Cubanelle peppers, sazon liquido, and garlic paste. Toss to coat chicken evenly.
  • Put oil in the bottom of a heavy pot. Add brown sugar and do not stir. Turn heat to medium-high and cook until sugar is very, very dark brown but not burned, 5 to 10 minutes. Carefully add chicken pieces to the pot 1 at a time, reserving vegetables and any liquid left in the bowl. Stir chicken, coating each piece with sugar-oil mixture. Cover and cook for 8 to 10 minutes.
  • Add tomato paste, celery, and bouillon powder to the pot and stir to combine. Cover and reduce heat to medium-low. Let stew until chicken is cooked and tender, 15 to 30 minutes.
