This polska kielbasa stir fry is packed with vegetables and kielbasa sausage, topped with teriyaki sauce for a new upgraded stir fry. It's a delicious dinner served over rice.

Ingredients

1 Polska Kielbasa Sausage ((sliced))
1 cup sliced yellow onion
2 garlic cloves ((minced))
1 cup sliced carrots
1 cup sliced celery
1 cup sliced bok choy
½ cup diced mushrooms
½ cup sliced bell peppers
1 cup sugar peas
1 TBS olive oil
⅓ cup teriyaki sauce
2 cups cooked rice

Steps:

Add 1 TBS olive oil to a large saute pan over medium heat
Stir in the onion and saute until translucent - about 5 minutes
Add the minced garlic, saute 1 more minute
Stir in and saute the carrots and celery for a couple of minutes
Add the rest of the vegetables and kielbasa sausage and saute until al dente
Finally, add the teriyaki sauce for seasoning and warm
Serve over cooked rice

For some reason, I was craving this one evening even though I had never had it before. I decided to try it and the family declared it a winner. I use Hillshire Farm's Turkey Polish Kielbasa, but I'm sure any kind will work.

Ingredients

1 tablespoon olive oil
13 -16 ounces kielbasa, cut into bite size pieces
1 medium sweet vidalia onion, cut into slivers
16 ounces frozen mixed peppers, strips thawed (or fresh equivalent)
prepared long grain and wild rice blend or prepared couscous

Steps:

Heat olive oil in large skillet over medium high heat. Add the onions and peppers and stir fry until tender.
Add kielbasa and continue to stir fry until everything is golden and heated thoroughly, about 10-15 minutes.
Serve over prepared long grain wild rice or couscous. (The garlic and/or Parmesan couscous varieties go especially well with it. My kids also like to add ketchup to theirs.).

I love polska kielbasa, but the only way I'd ever had it was drowned in BBQ sauce. Since I'm not a BBQ sauce fan, I needed to find another way to utilize this delicious sausage. This is especially good served with pierogi. This dish holds up well for leftovers as well.

Ingredients

4 slices bacon
1 lb polska kielbasa, sliced on a diagonal
1 medium yellow onion, cut into strips
1 large summer squash, sliced
1 large sweet red pepper, cut into strips
1 tablespoon butter
1/8 teaspoon ground black pepper
2 teaspoons Mrs. Dash seasoning mix
1/2 teaspoon sea salt
2 cups fresh spinach
1 dash nutmeg

Steps:

Over a large skillet, use kitchen shears to cut the bacon into pieces. Fry until bacon is crisp.
Add the polska kielbasa slices. Stir fry about 2 minutes.
Add the butter to the pan, followed by the squash, onion, and red peppers.
Continue to cook, stirring frequently, until the onions are translucent.
Add salt, pepper and Mrs. Dash. Stir lightly.
Add spinach and nutmeg, stirring just enough to incorporate the two.
Cook until the spinach is wilted and serve immediately.
