NANAIMO BARS III
Because it's three layers, this sounds hard but it's worth it. My son is famous for making and taking these in to work. I've heard other names but here in the Northwest everyone knows them as Nanaimo bars. They are sold on British Columbia Ferries and at coffee stands. If you can't find custard powder, I've used instant pudding mix with good results.

Steps:
- In the top of a double boiler, combine 1/2 cup butter, white sugar and cocoa powder. Stir occasionally until melted and smooth. Beat in the egg, stirring until thick, 2 to 3 minutes. Remove from heat and mix in the graham cracker crumbs, coconut and almonds (if you like). Press into the bottom of an ungreased 8x8 inch pan.
- For the middle layer, cream together 1/2 cup butter, heavy cream and custard powder until light and fluffy. Mix in the confectioners' sugar until smooth. Spread over the bottom layer in the pan. Chill to set.
- While the second layer is chilling, melt the semisweet chocolate and 2 teaspoons butter together in the microwave or over low heat. Spread over the chilled bars. Let the chocolate set before cutting into squares.

POLYNESIAN BARS
A low-guilt sweet treat that my hippie mother made all the time. So good, most people don't guess they're not terrible for you.

Steps:
- Combine filling ingredients in a medium saucepan and bring to low boil, stirring frequently to prevent scorching. Continue to stir/cook until mixture reaches a thick consistency and the dates have absorbed the juice.
- Remove from heat and set aside to cool slightly.
- Then, in a medium-large bowl, combine ingredients for the crust. Once mixed fully, it will be crumbly, but slightly sticky.
- Press about half of the crust mixture into a 9x13 inch pan. Top with the filling, then crumble the remainder of the crust mixture atop the filling.
- Bake in an oven preheated to 350 degrees for 30-40 minutes. Allow to cool thoroughly before cutting.

POLYNESIAN BURGERS
Steps:
- Preheat grill to medium-high heat.
- Grate 1 teaspoon zest each from an orange, lemon and lime, and add to a medium saucepan. Juice oranges, lemons and limes into saucepan, reserving 2 tablespoons juice in a small bowl. Add sugar. Stir to combine, adding more sugar to taste, if necessary. Bring to boil. Whisk cornstarch with reserved juice until smooth. Whisk into saucepan, and simmer until mixture is thickened. Set aside.
- Form beef into 6 patties. Season with salt and pepper.
- Grill burgers, along with pineapple, bell peppers and onion slices. Grill burgers, turning once, until cooked to desired doneness, about 5 minutes per side. Cook pineapple, peppers and onions, turning once, until both sides have distinct grill marks and peppers and onions have softened slightly, about 3 to 5 minutes per side.
- To build burgers, place 1 onion slice on the bottom half of bun, followed by burger, pineapple, and peppers. Drizzle with sauce. Place a thin slice of star fruit on top. Serve any additional onion, pineapple, peppers or starfruit on the side as garnish.
HAWAIIAN JOY BARS
With the hint of rum plus the nuts and coconut, these bars are like a trip to the islands. I served them to my family and at my work and church, and I always hear murmurs of appreciation. -Jennifer Neckermann, Wentzville, Missouri
