Pomegranate Pear Salad with Walnuts is loaded with flavors and would be a delicious addition to your Holiday dinner table! A vibrant salad full of different textures that is easy to whip up and makes every dinner special.

8 oz. mixed baby greens ((225g))
1/2 cup caramelized walnuts ((60g))
2 pears (cored and thinly sliced)
1/2 cup shaved Parmesan cheese (or crumbled Blue Cheese (60g))
1/2 cup pomegranate seeds ((60g))
1/4 cup cider vinegar ((60ml))
1 Tbsp honey
1 1/2 tsp dijon mustard
1/4 cup extra-virgin olive oil ((60ml))
1/4 tsp salt
1/8 tsp freshly ground black pepper

Steps:

  • In a large bowl combine baby greens, caramelized walnuts, thinly sliced pears, parmesan cheese (or blue cheese), and pomegranate seeds.
  • In a small bowl, mason jar, or dressing shaker, combine the vinegar, honey, mustard, olive oil, salt, and pepper. Whisk/shake until the dressing is smooth.
  • Just before serving, add the dressing to the salad and toss until everything is evenly coated. Serve immediately!

A wonderful salad. The dressing is one of our favorites and we frequently serve it atop lettuce with raspberries, pear, and walnuts. Recipe adapted from a Trader Joe's recipe.

1 tablespoon red wine (I always use Port)
1 tablespoon balsamic vinegar (I tend to use cherry balsamic)
1 tablespoon red wine vinegar (I tend to use raspberry vinegar)
1/2 teaspoon sugar (may sub Splenda)
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
4 tablespoons olive oil
1/2 tablespoon honey
1/4 teaspoon dried basil (crushed between your fingers)
7 ounces arugula (may use half romaine and half arugula)
1/2 cup pomegranate seeds
1 cup thinly sliced pear
1/2 cup walnut pieces
4 tablespoons blue cheese, crumbles

Steps:

  • Place arugula, pomegranate seeds and walnut pieces in a salad bowl. Pour in dressing and toss.
  • Divide salad among plates, top each salad with pears and blue cheese.

  • Toast the walnuts in a preheated 350 oven. To toast the walnuts: spread the walnuts out on a rimmed baking sheet and toast them in the oven until lightly browned and fragrant, this happens fast (10mins or so and it is best to keep an eye on things so you don’t burn them – don’t ask me how I know – he-he). I like to shake the pan a couple times to get an even hue. Once complete, pour the walnuts on a plate to cool and set aside.
