This was something original I came up with that suits shrimps and prawns well. It has a slightly tart flavor suited to anyone who is not a sweet tooth, it has an interesting and quite powerful flavour.

2 tablespoons poppy seeds
1 cup plain yogurt (I used Greek)
1 teaspoon garlic, crushed
1 teaspoon curry powder
1/4 teaspoon onion powder
1 tablespoon malt vinegar (or other dark vinegar)

Steps:

  • Mix all ingredients well in a bowl and transfer to a dipping dish.
  • Serve with boiled or grilled shrimps or prawns.

1 (4-inch) piece hothouse cucumber, finely diced
1/3 cup lowfat plain yogurt
1/3 cup mayonnaise
1 teaspoon fresh lemon juice
1/4 teaspoon hot chili oil
Spring Rolls
1 medium shallot, roughly chopped
2 cloves garlic, peeled
1 large carrot, peeled, and cut into 2-inch pieces
1 cup (3 1/2 ounces) assorted mushrooms, such as shiitake, cremini, and button
3/4 pound medium shrimp, peeled and deveined
2 tablespoons sugar
2 tablespoons soy sauce
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
16 spring roll wrappers
1 egg, beaten
1 1/2 cups cooked cellophane noodles or bean threads, cut into 2-inch pieces
Vegetable oil, for frying

Steps:

  • For the Cucumber-Yogurt Dip: Combine all the ingredients in a small bowl. Cover and refrigerate until ready to use.
  • For the Spring Rolls: In the bowl of a food processor, pulse together the shallot, garlic, and carrot until finely chopped. Add the mushrooms and pulse until coarsely chopped. Add the shrimp, sugar, soy sauce, salt, and pepper. Pulse until the shrimp is chopped into 1/4-inch pieces.
  • Place a spring roll wrapper on a work surface. Brush the edges with the beaten egg. Place a heaped tablespoon of the filling about 1-inch from the closest edge of the
  • wrapper. Spread the filling into a log, approximately 4 1/2-inches long and 1-inch wide. Place a heaped tablespoon of the cooked noodles on top. Fold the closest edge of the wrapper over the filling. Fold the right and left edges of the wrapper over the filling. Roll up the spring roll tightly and place, seam side down, on a parchment paper-lined baking sheet until ready to cook. Repeat with the remaining spring roll wrappers.
  • In a high-sided saucepan, heat the vegetable oil over medium-high heat until it registers 375 degrees F on a deep-fry thermometer. Cook the spring rolls, in batches, for 2 to 3 minutes, turning occasionally, until golden brown. Drain on paper towels.
  • Cut the spring rolls in half diagonally and transfer to a serving platter. Serve immediately with the Cucumber-Yogurt Dip.

5 small red grapefruit, divided
1/2 cup KRAFT Creamy Poppyseed Dressing
12 uncooked large shrimp, peeled with tails left on, deveined

Steps:

  • Squeeze juice from 1 grapefruit; mix with dressing. Pour half over shrimp in shallow dish; turn to evenly coat both sides of each shrimp. Refrigerate 15 min. to marinate. Meanwhile, heat grill to medium heat. Cut each of the 4 remaining grapefruit into 4 slices.
  • Remove shrimp from marinade; discard marinade. Arrange shrimp evenly onto 4 skewers. Place 8 grapefruit slices on grill grate; top with shrimp skewers. Brush with some of the reserved dressing mixture.
  • Grill shrimp 5 min.; turn. Add remaining grapefruit slices to grill. Cook 8 to 10 min. or until shrimp turn pink, turning shrimp and grapefruit occasionally and brushing with the remaining dressing mixture.
  • Remove shrimp and grapefruit slices from grill. Discard grapefruit slices under shrimp. Serve shrimp with remaining grilled grapefruit slices.

  • In a large saucepan, combine shrimp, 3 cups water, soy sauce, anise, peppercorns and ginger. Bring to a boil, then turn off heat and let sit, undisturbed, for about 30 minutes. If you are not serving right away, refrigerate shrimp in liquid; recipe may be prepared to this point a day before serving.
  • When ready to serve, drain shrimp, and put on a platter. Whisk together hoisin and sesame oil in a small bowl; serve shrimp with this sauce.

1 1/2 pounds medium-size raw shrimp
1 large sweet red pepper, cored and seeded
1 large green pepper, cored and seeded
2 tablespoons butter
Salt and freshly ground pepper to taste
2 teaspoons paprika
1 tablespoon finely chopped shallots
1 teaspoon finely chopped garlic
2 tablespoons Cognac
1/2 cup sour cream
1 cup drained plain yogurt
4 tablespoons chopped fresh coriander

Steps:

  • Shell and devein the shrimp.
  • Cut the red pepper into 1/2-inch cubes.
  • Slice the green pepper into 1 1/2-inch-long strips.
  • Heat the butter in a large nonstick skillet. Add the shrimp, salt, pepper and paprika. Stir with a wooden spatula. When the shrimp become pink (they should take 2 to 3 minutes), remove them with a slotted spoon, leaving the cooking liquid in the pan.
  • In the same skillet, add the red and green peppers, shallots, garlic, salt and pepper. Cook, stirring, about 3 to 4 minutes over medium-high heat. Add the Cognac, shrimp and any juices that have accumulated. Cook over medium heat for 2 minutes more.
  • Add the sour cream and the yogurt. Blend well and check for seasoning. Add the chopped coriander, and bring to a simmer for about 30 seconds. Do not boil, or the sauce will separate. Serve immediately.
