This recipe quickly becomes the favorite of pretty much everyone that tries it. It's so tasty, it's easy to make, and the ingredients are interchangeable! You can use the dressing immediately or make it in advance and store in refrigerator up to a couple of days. I have substituted pears and mandarin oranges for the strawberries and feta instead of blue cheese. Be creative! YUM!

¼ cup white vinegar
½ cup vegetable oil
⅓ cup white sugar
1 tablespoon poppy seeds
2 teaspoons finely minced onion
½ teaspoon Worcestershire sauce
¼ teaspoon paprika
1 (10 ounce) bag baby spinach
1 cup sliced fresh strawberries, or as needed
1 (4 ounce) package crumbled blue cheese, or as needed
½ cup roasted pecan halves, or as needed

  • Whisk vinegar, vegetable oil, sugar, poppy seeds, onion, Worcestershire sauce, and paprika together in a bowl until sugar is completely dissolved.
  • Layer spinach, strawberries, blue cheese, and pecans in individual bowls; drizzle dressing generously over each salad.

For the citrus poppyseed dressing:
1/3 c. extra-virgin olive oil
1/4 c. freshly squeezed orange juice
1 tbsp fresh squeezed lime juice

1 pear (cored and sliced)
1/2 lb strawberries (hulled and sliced)
2 Tbsp pumpkin seeds
8 oz 1/2 lb Spinach Leaves
makes enough vinaigrette for 2 salads
1/4 cup cold filtered water
1/4 cup olive oil
1/4 cup red wine vinegar (or to taste)
1/2 lb fresh strawberries (hulled and halved (about 1 1/2 cups))
2 Tbsp honey
1/2 tsp poppy seeds

Steps:

  • In a food processor or blender, combine 1/4 cup water, 1/4 cup olive oil, 1/4 cup cider vinegar, 1/2 lb strawberries and 2 Tbsp honey and puree until smooth.

1/3 cup crumbled feta cheese (plus extra to taste)
3/4 cup fresh ripe blueberries
1/4 cup candied walnuts*
1/4 cup fresh lemon juice
1 TBSP minced sweet yellow onion or shallot
2 TBSP honey or sugar
1/2 tsp Dijon mustard
1/4 tsp salt
1/8 tsp black pepper
1/3 cup avocado oil
1/2 TBSP poppy seeds

Steps:

  • First make your dressing! Blend lemon juice, onion, honey/sugar, Dijon mustard, salt and pepper in a blender until smooth. Stream avocado oil slowly into the mixture while blender is running to fully incorporate. Add poppy seeds and pulse blender a few times, just to mix seeds into the dressing. You can also use an immersion blender or food processor if needed. Set dressing in the fridge to chill for a few minutes if a chilled dressing is preferred.
  • Wash and dry your spinach and combine with blueberries, feta, and candied walnuts in a large bowl (you want to have enough room to toss the salad without everything flying all over your counter, lol) - Add 1/3 of the dressing to the salad and toss/mix until spinach is coated. Serve right away with additional dressing on the side (add extra to taste) and feel free to save some for later if you have a little leftover!
  • When it comes to the feta, blueberries, and candied walnuts, feel free to add extra if desired! Salads are crazy flexible to suit varied tastes so keep it light or load 'em up! I like a little extra feta on mine!

1 apple, (cored and thinly sliced)
1 cup red seedless grapes ((sliced in half or quartered if large))

10 cups baby spinach (stems broken off)
1 lb strawberries (thinly sliced)
1 cup crumbled feta cheese
1 cup toasted almonds (*see recipe below)
1 container (6 oz) strawberry yogurt
3 tablespoons granulated sugar
3 tablespoons milk
2 tablespoons sour cream
2 tablespoons mayonnaise
1 tablespoon apple cider vinegar
1 tablespoon poppy seeds
1 cup sliced almonds
2 tablespoons butter
2 tablespoons granulated sugar

Steps:

  • Add the spinach into a large mixing bowl (or whatever bowl you are planning on serving the salad in). Add the sliced strawberries, crumbled feta cheese, and toasted almonds.
  • HOW TO MAKE TOASTED ALMONDS : Add the almonds, butter, and sugar into a skillet pan and cook over medium-high heat. Watch carefully and stir often! Once the almonds are lightly browned and smell toasty, take them off the heat and spread out the almonds on a plate or onto some parchment paper on the counter. Cool for about 5 minutes before adding to the salad. * Do not put the almonds onto paper towel to cool! They will stick to the paper towel and will be impossible to get off.
  • MAKE THE DRESSING : Add all dressing ingredients into a bowl and mix together well with a whisk.
  • Pour the dressing over the salad and mix together until all the spinach leaves are coated in dressing. The toppings tend to sink to the bottom of the mixing bowl so I like to scoop them up from the bottom and put them back on top of the salad. This just makes the salad look pretty and then you can see all the yummy toppings. Serve immediately. Leftovers keep well for like a day, spinach will be softer, but this salad is best served right away.
  • MAKE AHEAD INSTRUCTIONS : Place the spinach in the mixing bowl. Put the strawberries, feta cheese, and toasted almonds in their own seperate containers. Mix up the dressing and put that into a container. When you are ready to serve toss everything together.

  • For the dressing: In a small mixing bowl whisk together vinegar, sugar and salt until sugar and salt have dissolved.
  • Add mayonnaise, honey and poppy seeds and whisk until combined. Mix in milk to thin if desired. Store in refrigerator until ready to use.
  • For the salad: In a salad bowl layer spinach, mandarine oranges, pomegranate arils, avocado, almonds and walnuts.

1 cup lemon poppy seed salad dressing
1 (10-oz) bag baby spinach
1 pound strawberries (rinsed, hulled and sliced)
1 medium cucumber (washed and sliced)
1 small red onion (peeled, halved and thinly sliced)
1 handful fresh herbs (washed, patted dry and chopped)
½ cup crumbled Feta cheese (or more to taste)
½ cup chopped walnuts

Steps:

  • If you are making your own dressing, follow the instructions for this recipe (it makes about 1 cup, which is exactly what you need for this salad).
  • To make the salad, add all salad ingredients to a large bowl. Pour over the dressing and gently toss. Serve immediately.

Simple spinach salad with fresh strawberries, canned mandarin oranges, sliced almonds and goat cheese, all with a homemade poppy seed dressing.

4 cups baby spinach
5 oz mandarin orange segments (canned, drained, about 1/2 small can)
6 medium strawberries (halved)
1/4 cup sliced almonds
1/4 cup red onion (thinly sliced (optional))
1/3 cup Goat cheese (crumbled)
5 Tbsp white vinegar
1 Tbsp cider vinegar
2 1/2 Tbsp white granulated sugar (or 1 Tbsp honey)
3/4 tsp salt
1/8 tsp dried mustard powder
1/4 cup onion (finely diced)
1 cup vegetable oil (or other neutral tasting oil)
1 Tbsp poppy seeds

Steps:

  • To make the Poppy Seed Dressing: In a food processor or blender, add the white and cider vinegars, sugar, salt, mustard powder and onion. Process or blend for 30-45 seconds, or until pureed. With the food processor or blender running on high speed, very slowly start adding the oil, in a very slow, steady stream, until all the oil is added. Add the poppy seeds and blend briefly to combine. Use dressing immediately or put in a jar with a lid and refrigerate until needed. *Note: Dressing will separate as it sits in the fridge. Just shake it in the jar to mix it back up again before using.
  • For the salad: Add the baby spinach to a bowl. Add the strawberries, mandarin oranges, sliced almonds and red onion, if using. Toss to combine. Top with crumbled goat cheese, then drizzle with poppy seed dressing, to taste.

2 tbsp hemp hearts, optional
For the citrus poppyseed dressing:
1/3 c. extra-virgin olive oil
1/4 c. freshly squeezed orange juice
1 tbsp fresh squeezed lime juice
1 tbsp fresh squeezed lemon juice
3 T. honey
1/4 tsp. celtic sea salt
1 1/2 tsp. poppy seeds

  • In a large bowl, mix salad.
  • In a medium sized bowl, add all dressing ingredients and whisk well to combine.

1 pint strawberries washed, (hulled and sliced)
1/2 to 1 apple, (very thinly sliced)
1-2 avocados, ripe but still slightly firm (cut into chunks or sliced)
1 half a small red onion, (thinly sliced)
6 oz Gorgonzola, Feta, Goat, or Bleu Cheese (crumbled)
5-6 slices bacon, cooked and crumbled
1/2 cups roasted almonds, sliced or chopped pecans
1/2 cup Homemade Poppyseed Dressing*
Baked chicken (optional)

Steps:

  • Place the greens in a large bowl. Toss with strawberries, apple, avocado, onion, cheese, bacon and almonds. If adding cooked chicken, slice or dice the chicken and toss in with the other ingredients.

1 1/2 cups sliced strawberries
1 1/2 cups thinly sliced cremini or button mushrooms
1/2 large ripe avocado (, cubed)
1/4 cup sliced almonds
2 scallions (, diced)
6 tablespoons mayonnaise
2 tablespoons half n half
2 tablespoons granulated sugar
2 tablespoons apple cider vinegar
1 tablespoon poppy seeds
1/4 teaspoon dry mustard powder
pinch of salt

Steps:

  • In a large bowl, combine all the salad ingredients, except the dressing.
  • In another bowl, whisk together all the ingredients for the dressing until combined and smooth.

I like this salad because it isn't fruity like many spinach salads out there. My cousin always brings this to family dinners and everybody loves it, even the ones that don't like spinach! Be sure to make the dressing the night before! The original recipe called for 1 lb. of swiss cheese. I think that's a bit much and usually make it with 1/2 lb.

1 1/2 teaspoons salt
3/4 cup white vinegar
1 1/2 cups oil
1/2 cup sugar
1 tablespoon poppy seed
1 teaspoon dry mustard
1/2 red onion, sliced thinly
1/2 lb fresh mushrooms, sliced
1/2-1 lb swiss cheese, grated
1 lb bacon, cooked and crumbled
2 bunches spinach (I use a 10oz bag)

Steps:

  • Note for Dressing: This makes a lot, I usually only use about half.
  • Mix the dressing ingredients together and refrigerate overnight. Very important!
  • Toss salad ingredients together and mix in dressing just before serving.

1 Kiwi (peeled, sliced and quartered (optional))
5.3 oz container strawberry yogurt
1/4 cup mayonnaise
2 Tbsps sour cream
2 Tbsps milk
3 Tbsps sugar
1 Tbsp apple cider vinegar
1 Tbsp poppy seeds
1 Tbsp sesame seeds
1/2 tsp dry minced onion flakes ((optional))
1/2 Recipe Caramelized roasted and salted pistachios
1/3 cup feta cheese crumbles

Steps:

  • Caramelize pistachios according to directions. Set aside.*
  • Add all of the Strawberry Poppy Seed Dressing Ingredients (EXCEPT the poppy seeds and sesame seeds) to your blender; blend until smooth. Add poppy seeds and sesame seeds and pulse until combined. For a tangier dressing, add more vinegar, for sweeter, add more sugar. Add additional milk to thin if desired. Store in the refrigerator while you prepare salad.
  • Combine Spinach Salad ingredients in a large bowl and toss to combine. If serving entire salad immediately, drizzle with desired amount of dressing and toss to coat. If there might be leftovers, drizzle dressing on individual salad servings. Season with freshly ground salt and pepper to taste.
