Categories     Main

Time 8h35m

Number Of Ingredients 20

2 cups boiling water
1/4 cup kosher coarse sea salt
2 tbsp brown sugar
2 cups cold water
2 1 inch thick bone-in pork chops
1 tbsp olive oil
1 tbsp butter
Sea salt and freshly cracked pepper, to taste
2 tbsp flour
1 tbsp butter (if needed)
1 shallot, finely diced
2-3 tsp mixed peppercorns, crushed
1 clove of garlic, minced
1/4 cup dry white wine
1 cup + 2 tbsp chicken broth, divided
1/2 tsp Dijon mustard
2-3 fresh thyme sprigs
1/4 cup heavy cream
2 tbsp corn starch
Sea salt and freshly cracked pepper, to taste

Steps:

  • Make the brine by combining the hot water with the salt and brown sugar; mix until completely dissolved. Add the cold water and place it into the refrigerator until it is cold. Add the pork chops to the COLD brine; cover and refrigerator for 6-8 hours.
  • Preheat the oven to 400 degrees.
  • Remove the chops from the brine and give them a brief rinse in cold water. Pat dry with paper towels until very dry.
  • Heat the olive oil and one tablespoon of butter in an OVEN PROOF cast iron skillet over medium-high heat.
  • Season both sides well with freshly cracked black pepper and a little bit of sea salt.
  • Dredge both sides of the seasoned pork chops in the flour then place into the HOT skillet.
  • Sear the chops until lightly golden brown on both sides, about 7 minutes then place the skillet into the preheated oven to cook for 12-15 minutes; or until they reach about 135 degrees (they will finish cooking in the sauce later); remove from the oven and place the chops on a plate covered loosely with a tin foil tent; set aside.
  • Heat the same skillet over medium-high heat; add a bit more butter if needed.
  • Add the shallots & peppercorns then cook, stirring often, for 2 minutes.
  • Add the garlic and cook, stirring constantly, for 30 seconds.
  • Add the wine and cook, stirring often, until mostly evaporated, about 2 minutes.
  • Add 1 cup of chicken broth and the thyme sprigs and bring to a simmer. Reduce the heat and simmer for 5 minutes.
  • Add the cream and mix well.
  • To thicken gravy, combine the reserved chicken broth with the corn starch; mix until thoroughly combined then add to the simmering sauce and stir well.
  • Taste and season with sea salt and freshly cracked pepper, if needed.
  • Nestle the chops & their juices back in the sauce until heated through.
  • Serve and enjoy!

PORK CHOPS WITH PEPPERCORN CHOPS

Pork Chops With Peppercorn Chops image

These delicious, thick Pork Chops with Peppercorn Sauce are an incredible easy dinner perfect for any night of the week or a special occasion. A creamy peppercorn sauce that requires just a few ingredients drizzled over perfectly cooked pork chops.

Provided by Joanna Cismaru

Categories     Dinner     Main Course

Time 35m

Number Of Ingredients 12

1 tablespoon butter (unsalted)
1 tablespoon olive oil
4 pork chops (thick cut (bone in or boneless))
½ teaspoon salt (or to taste)
½ teaspoon pepper (or to taste)
1 tablespoon butter (unsalted)
¼ cup shallots (finely chopped)
½ cup cognac (or brandy)
1 cup beef broth (or chicken broth)
1 teaspoon Dijon mustard
1 cup heavy cream
1 tablespoon whole peppercorns (coarsely crushed)

Steps:

  • Cook the pork chops: Add the butter and oil to a large skillet and heat over medium-high heat. Add the chops and sear on all sides, about 4 to 6 minutes per side. Do not flip them over until properly seared on each side. Make sure to sear the sides of the chops as well, especially is using thicker cut pork chops.
  • Rest the pork chops: If using a meat thermometer, check the internal temperature and cook until they reach 135°F. Transfer the pork chops to a cutting board and let them rest for 10 minutes before slicing into them. The residual heat will bring the temperature up to 145°F.
  • Cook the shallots: Add the tbsp of butter to the same hot skillet and melt over medium heat. Add the shallots and cook for about 1 to 2 minutes until the shallots soften and begin to turn golden.
  • Make the sauce: Stir in the cognac and let it simmer, scraping the bottom of the pan. Cook until most of it has reduced and can no longer smell the alcohol. Add the beef broth and Dijon mustard to the skillet and bring to a simmer. Cook for 2 to 3 minutes or until the sauce reduces a bit. Stir in the heavy cream and peppercorns to the skillet and continue simmering for another 2 minutes. Taste the sauce and adjust with salt and pepper as needed.
  • Serve: Serve pork chops with sauce spooned over them, along side mashed potatoes.

PORK CHOPS WITH RED CHILE PEPPER SAUCE

Pork Chops with Red Chile Pepper Sauce image

Provided by Food Network

Categories     main-dish

Time 45m

Yield Yield: 10 servings

Number Of Ingredients 10

10 to 12 loin pork chops, medium thick cut with bone
3 jalapeno peppers
2 tablespoons solid vegetable shortening or lard
1 teaspoon kosher salt
1 teaspoon garlic powder
1 teaspoon fresh ground black pepper
1/2 cup water
1/4 teaspoon salt
3 cloves garlic
2 (15-ounce) cans whole peeled tomatoes, 2 whole tomatoes reserved and 1/4 cup liquid reserved for Spanish Rice

Steps:

  • Wash pork chops and set on paper towels to dry. Roast whole jalapenos on the comal or in a cast iron skillet until all sides are toasted, approximately 10 minutes.
  • Wet a small tea towel, then wrap the jalapenos in the tea towel and let them rest for 20 minutes. (This will help to soften them for peeling)
  • While peppers rest, heat shortening in large cast iron skillet on medium-high.
  • Cut pork chops into small and medium pieces (the sections with bone will be bigger). Season both sides of chops with kosher salt, garlic powder and crushed black pepper. Cook pork chops in skillet for about 15 to 20 minutes, periodically adding water to steam. Pork is done when chops have caramelized and water has evaporated.
  • Take peppers out of tea towel and peel off skin. Cut off the ends of the peppers and place, one at a time in a food processor, and grind down with the salt and garlic. Add 1 tomato at a time (from the 2 cans of tomatoes), and grind all ingredients until sauce forms. Taste to determine if more salt is needed. Add the sauce to the pan with pork chops and simmer on low heat, uncovered, for about 10 to 15 minutes.

Time 45m

Yield 4 servings

Number Of Ingredients 12

4 pork chops
Flour for dredging
1 tablespoon Hungarian paprika
1 tablespoon peanut or vegetable oil
1 small onion, diced
1 clove garlic, minced
1/2 teaspoon thyme
1 cup dry white wine
1 tablespoon Dijon-type mustard
1 tablespoon green peppercorns
Coarse salt and freshly ground pepper
1 tablespoon chopped parsley

Steps:

  • Wipe the pork chops dry with paper towels. Dredge them with flour, shaking off the excess, and sprinkle with paprika.
  • Heat the oil in a pan large enough to contain the pork chops comfortably. Brown the chops on both sides. Add the onion, garlic and white wine. Bring to simmer, turn heat down, cover and cook slowly for about 30 minutes, or until the chops are pale whitish-pink in the center. Be careful not to overcook them or they will become dry and tough.
  • Remove the chops to a heated serving platter. Stir the mustard and peppercorns into the sauce. Add salt and pepper to taste and spoon the sauce over the chops. Sprinkle with parsley and serve.

PEPPERCORN PORK CHOPS WITH WARM PICKLED PEPPER RELISH

Peppercorn Pork Chops with Warm Pickled Pepper Relish image

If you are a lover of pepper in all its forms, you really must experience this dish. With 4 kinds of peppercorns producing a fairly spicy crust, these tender, moist chops topped with a sweet and sour pickled pepper sauce are perhaps the most flavorful you will ever enjoy in your life. Serve with scalloped potatoes, if desired.

Provided by Chef John

Time 1h45m

Yield 2

Number Of Ingredients 17

1 teaspoon black peppercorns
1 teaspoon white peppercorns
1 teaspoon green peppercorns
1 teaspoon pink peppercorns
2 (8 ounce) boneless center-cut pork chops
1 ½ teaspoons kosher salt, or to taste
2 teaspoons olive oil
⅓ cup chicken broth
2 tablespoons cold butter
Quick Pickled Pepper Relish:
¼ cup diced poblano pepper
2 tablespoons diced orange bell pepper
2 tablespoons diced red bell pepper
2 cloves garlic, minced
¼ teaspoon kosher salt
3 pinches cayenne pepper
¼ cup seasoned rice vinegar

Steps:

  • Place all peppercorns on a cutting board and use the flat bottom of a heavy pan to crush them as finely or coarsely as you like. Transfer crushed pepper into the pan.
  • Make 3 cuts through the fat on each pork chop and season generously with salt. Apply a generous coating of crushed peppercorns to both sides, pressing into the meat firmly as you do, until fully coated.
  • Transfer chops to a rack set over a pan and let sit out at room temperature for 1 hour, turning halfway through and reapplying crushed peppercorns as necessary. Or, place in the refrigerator for 4 to 12 hours.
  • Meanwhile, prepare the pepper relish while the chops are dry-brining: combine poblano pepper, orange and red bell peppers, garlic, salt, cayenne, and rice vinegar. Mix to combine and cover with plastic wrap. Leave on the counter for 1 hour.
  • Heat oil in a pan over medium-high heat until very hot and starting to shimmer. Add pork chops and sear for 5 minutes per side. Use tongs to turn chops while you brown the edges for another 1 to 2 minutes. Reduce heat to medium if the pan is too hot and begins to smoke. Chops should firm up and spring back to the touch. Do not overcook. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C).
  • Turn off the heat and transfer chops to a plate. Cover loosely with foil and let rest.
  • Add chicken broth to the hot pan. Turn heat to high and bring to a rolling boil. Add pickled pepper relish and stir with a spoon, scraping all the bits from the bottom of the pan. Cook until liquid in the pan reduces by about half, about 3 minutes.
  • Turn off the heat. Add cold butter and any accumulated juices from the plate of pork and stir until butter has melted.
  • Serve pork chops with plenty of hot pickled pepper relish over top.

PORK CHOPS WITH ROASTED RED PEPPER CREAM

Pork Chops With Roasted Red Pepper Cream image

This recipe was included in an email that I received this morning from Cooks Illustrated: This recipe cooks quickly because the sauce is prepared in the same pan used to cook the chops-and the sauce will pick up valuable flavor from the browned bits left behind by the meat.

Provided by senseicheryl

Categories     Pork

Time 25m

Yield 4 pork chops, 4 serving(s)

Number Of Ingredients 10

4 center-cut pork chops, about 1 inch thick (or use the bone-in-rib ones)
salt and pepper
1 tablespoon vegetable oil
1/2 onion, sliced thin
6 garlic cloves, minced
3/4 cup low sodium chicken broth
3/4 cup heavy cream
1 (12 ounce) jar roasted red peppers, drained and chopped
2 teaspoons light brown sugar
1/4 cup fresh basil, chopped

Steps:

  • Pat chops dry with paper towels and season with salt and pepper. Heat oil in large skillet over medium-high heat until just smoking. Add chops and cook until well browned and meat registers 145 degrees, about 5 minutes per side. Transfer to serving platter and tent with foil.
  • Add onion to empty skillet and cook until softened, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds. Stir in broth, cream, roasted peppers, and sugar and simmer, scraping up any browned bits with wooden spoon, until sauce is slightly thickened, about 5 minutes. Off heat, add any accumulated pork juices back to pan and stir in basil. Season with salt and pepper. Spoon sauce over chops. Serve.

PORK CHOPS IN GARLIC MUSHROOM SAUCE

Pork Chops in Garlic Mushroom Sauce image

This recipe is my twist on a fancy restaurant meal we got on Valentine's Day. The recipe has half the amount of garlic than was originally used. Hope everyone else enjoys it just as much as we do. Garnish with fresh parsley, chives, or thyme leaves.
