SIMPLE BANANA COFFEE CAKE
This is a no-frills cake that tastes great with morning beverages or as a snack. It's good for using up those overripe bananas that you hate to throw away.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch square baking dish.
- Beat butter and sugar with an electric mixer in a large bowl until light and fluffy; beat in eggs one at a time, allowing each egg to blend into the butter mixture before adding the next. Stir bananas into butter mixture.
- Sift flour, baking soda, and salt together in another bowl. Stir flour mixture into banana mixture until batter is evenly blended. Pour batter into prepared baking dish.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 30 minutes.

GRANDMA RILEY'S BANANA CAKE
This favorite recipe has been passed down through my husband's family. His grandmother wrote this out for me shortly after we were married. Steps:
- Cream sugar and shortening together; add eggs and vanilla. Mix in buttermilk and mashed bananas., In a separate bowl, combine flour, soda, baking powder and salt; add to banana mixture and mix until ingredients are combined. Spoon into a greased 13x9-in. baking pan or two 9-in. round cake pans., Bake at 350° for 25-30 minutes or until toothpick inserted into center comes out clean. Cool cake for 30 minutes before frosting. , For frosting, mix butter, powdered sugar and milk until smooth; add vanilla and salt. If frosting is too thick, add more milk 1 tsp. at a time until reaching desired consistency. Spread on warm banana cake.

This is a moist and fruity banana cake, originated from Wisley Gardens Cafe and has been made for many years. You can replace the sultanas with walnuts if preferred. Yum.Caz

- Pre-heat the oven to 180/gas4. Butter a 900g loaf tin and line bottom and sides with non-stick baking parchment.
- Peel and mash bananas. Put the sugar into a mixing bowl and cream together until light and fluffy. Stir in bananas and sultanas. Sift together the flour, baking powder and bicarbonate of soda. Add the flour mix and the beaten egg, each about a third at a time, to the banana mix, beating well between each addition. Finaly stir in the oil.
- Pur into loaf tin and bake for 40-45 mins until well risen and golden brown and skewer inserted in the middle comes out clen. Leave in tin for 10 mins and then turn out on to a wire rack to cool completely.
- When cool make frosting by creaming everything together. This makes enough to fill and decorate top.

Steps:
- Combine the sugar, cornstarch and salt in a heavy saucepan; stir well.
- Combine egg yolks, half and half, and milk and beat until blended.
- Gradually stir into sugar mixture until smooth.
- Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil 1 minute, stirring constantly.
- Transfer to a glass bowl; stir in butter and vanilla. Cover with plastic wrap and cool to room temperature.
- Slice one banana and toss with 1 teaspoons of lemon juice to prevent browning. Arrange the sliced banana in the bottom of pastry shell.
- Pour cooled custard gently over banana, cover, and chill until firm.
- Beat whipping cream and powdered sugar until stiff peaks form. Spread over pie filling.
- Slice remaining banana and toss with remaining 1 teaspoons of lemon juice; drain juice if any, and arrange on top of pie.
