CREAMY CIDER & SAUSAGE BRAISE WITH APPLES & MASH

Creamy cider & sausage braise with apples & mash image

Pan-fry apples and onions with cider for a fresh take on the classic sausage and mash, made extra creamy with crème fraîche

Provided by Katy Greenwood

Categories     Dinner, Main course

Time 35m

Number Of Ingredients 9

500g Maris Piper or King Edward potatoes , peeled and cut into chunks
4 tbsp crème fraîche
knob of butter
½ tbsp olive oil
2 apples , cored and each cut into 12 wedges
8 sausages
1 onion , sliced
500ml medium-dry cider
1 tbsp English mustard

Steps:

  • Put the potatoes in a large pan, cover with water and bring to the boil. Cook for 15-20 mins until tender, then drain and mash with 2 tbsp of the crème fraîche. Season to taste.
  • While the potatoes cook, heat the butter and oil in a large lidded frying pan. When the butter is just foaming, add the apple wedges. Cook over a medium heat for about 2 mins each side, or until just turning golden. Remove from the pan with a slotted spoon and set aside.
  • Add the sausages and onion to the pan and cook for 6-7 mins - turn the sausages so that they brown all over, and stir the onion so it doesn't catch. Pour in the cider and bring to the boil, then cover and cook for 10 mins.
  • Stir in the mustard, remaining crème fraîche and the apples. Season to taste and serve with the mash.

PORK SAUSAGES BRAISED IN CIDER WITH APPLES AND JUNIPER

Pork Sausages Braised in Cider with Apples and Juniper image

Braised sausages seem to have turned up many times in my books over the years, and because I love them so much, here is yet another version - a lovely, comforting, warm, winter supper dish that needs copious amounts of fluffy mashed potato to spoon the sauce over. Crushing the juniper berries releases their lovely flavour.

Categories     Casseroles and Stews     Easy Entertaining     Pork recipes     Succulent sausages

Yield Serves 3-4

Number Of Ingredients 14

6 large pork sausages, weighing about 1 lb (450 g), preferably outdoor-reared pork
8 oz (225 g) lean smoked bacon, roughly chopped
1 level tablespoon plain flour
a few sprigs fresh thyme
2 bay leaves
salt and freshly milled black pepper
15 fl oz (425 ml) strong dry cider
1 tablespoon cider vinegar
1 Bramley apple, cored and sliced into rings (unpeeled)
1 Cox's apple, cored and sliced into rings (unpeeled)
1 level dessertspoon juniper berries, crushed slightly either in a pestle and mortar or with the back of a tablespoon
2 dessertspoons olive oil
8 oz (225 g) onions, peeled and sliced into rings
1 large clove garlic, peeled and chopped

Steps:

  • Begin by taking a large, heavy-based frying pan, place it on a medium heat and add 1 dessertspoon of the oil to it. As soon as it's hot, fry the sausages until they are nicely browned on all sides, then, using a draining spoon, transfer them to a plate. Now add the onions, garlic and bacon to the frying pan and cook these until they have also browned at the edges - about 10 minutes. Meanwhile, place the casserole on to another heat source, again turned to medium, add the other dessertspoon of oil, then, when it's hot, add the apple rings and brown these on both sides, which will take 2-3 minutes. After that, add the sausages, followed by the bacon, onion and garlic, then sprinkle the flour in to soak up the juices, stirring it gently with a wooden spoon. Next add the cider and cider vinegar, a little at a time, stirring after each addition. Then add the thyme, bay leaves and crushed juniper berries, season with salt and pepper, but not too much salt because of the bacon. After that, put the lid on and simmer very gently on the lowest possible heat for 1 hour. Serve with mashed potato which you can watch being made on our Cookery School Video on this page.

PORK SAUSAGE WITH BRAISED PURPLE CABBAGE AND APPLE CHUTNEY

Pork Sausage with Braised Purple Cabbage and Apple Chutney image

Yield Makes 4 servings

Number Of Ingredients 32

For the pork sausage:
3/4 pound pork butt, cut into cubes
4 ounces bacon
4 ounces fatback
1 1/2 tablespoons packed dark brown sugar
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon smoked paprika
1/2 teaspoon ground coriander
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
3 dashes Worcestershire sauce
All-natural hog casing, soaked in water 30 minutes and then flushed with water
1 to 2 tablespoons olive oil
1 tablespoon butter
For the purple cabbage:
1/4 cup olive oil
1 medium red onion, diced
3 cloves garlic, minced
1 head purple cabbage, shredded
3/4 cup cider vinegar
2 cups chicken stock or low-sodium chicken broth
Salt and freshly ground black pepper
For the apple chutney:
2 medium Granny Smith apples, cored and diced
1 medium red onion, diced
1/2 cup packed dark brown sugar
1/2 cup cider vinegar
1/4 cup water
Salt and freshly ground black pepper
Equipment:
Meat grinder fitted with a medium die

Steps:

  • Make the pork sausage:
  • At least 30 minutes before grinding the meat, chill all of your tools, including the bowl of the stand mixer, in the freezer.
  • In a large bowl combine the pork butt, bacon, fatback, brown sugar, salt, pepper, paprika, coriander, garlic and onion powders, and Worcestershire sauce and stir well to combine.
  • Using your meat grinder, grind the meat mixture through the medium die into the chilled bowl of the stand mixer. Cover the meat mixture and refrigerate until ready to use. Stuff the meat mixture into the sausage casings, and for best results, chill in the refrigerator overnight.
  • Make the purple cabbage:
  • In a medium saucepan over moderate heat, warm the olive oil. Add the red onion and garlic and sauté, stirring occasionally, until translucent. Add the cabbage, vinegar, and chicken stock and cook, stirring occasionally, until the cabbage is tender. Season with salt and pepper and keep warm.
  • Make the apple chutney:
  • In a small saucepan over moderate heat, combine the apples, onion, brown sugar, vinegar, and water and cook, stirring occasionally, until the mixture is jammy and slightly reduced. Season with salt and pepper and keep warm.
  • Cook the sausage:
  • Using a toothpick, prick each sausage a few times. In a heavy, large skillet over moderate heat, warm the olive oil and butter until hot but not smoking. Add the sausage and cook, turning over a couple times, until golden brown on both sides, 8 to 10 minutes total. Transfer the sausage to a cutting board and cut into smaller pieces for serving.
  • To serve:
  • Divide the cabbage among 4 plates then top with sausage and apple chutney.

NORMANDY PORK WITH APPLES & CIDER

Normandy pork with apples & cider image

True comfort food for chilly winter evenings, this slow-cooker recipe combines meltingly tender pork, smoked bacon and cider

Provided by Cassie Best

Categories     Dinner, Main course, Supper

Time 8h50m

Number Of Ingredients 15

2 tbsp rapeseed oil or olive oil
600g pork shoulder or pork cheeks, fat and sinew trimmed, cut into chunky pieces
1 large onion, chopped
2 carrots, cut into chunky pieces
2 celery sticks, cut into chunky pieces
200g pack smoked bacon lardons
250ml dry cider (or use 100ml apple juice mixed with 3 tbsp cider vinegar and 100ml water)
2 eating apples (we used Braeburn), cored and cut into chunky pieces
1 chicken stock cube
1 bay leaf
3-4 thyme sprigs, plus extra to serve (optional)
140g crème fraîche
1-2 tbsp Dijon mustard, plus extra to serve (optional)
1-2 tsp cornflour, optional
mashed potato and greens, to serve

Steps:

  • Heat half the oil in a large pan and brown the meat in batches. Don't overcrowd the pan, and only turn the meat when it has a deep brown crust on the underside, as this will add lots of flavour to the stew. When one batch is cooked, tip it into the slow cooker and continue with the next batch, adding more oil as you need it.
  • When all the meat has been transferred to the slow cooker, add the onion, carrots and celery to the pan and cook for 5-10 mins to just soften, scraping any meaty bits up from the bottom of the pan. Tip the veg into the slow cooker. Add the lardons to the pan and fry until crispy. Pour in the cider, bubble for 1 min, again scraping the bottom of the pan, then tip the cider and lardons into the slow cooker too. Add the apples, stock cube and herbs to the slow cooker, pour in 400ml water, season well and turn the heat to Low. Cover with the lid and cook for 6-8 hrs until the meat is very tender. (If you don't have a slow cooker, tip all the ingredients back into the pan, cover with a lid and cook for 3 hrs over a low heat, stirring every now and then to prevent it from catching on the bottom. You may have to add a splash of water during cooking if the sauce looks dry.)
  • Turn your slow cooker up to High. Add the crème fraîche and mustard to the stew and check the seasoning. If the sauce is thin, you can thicken it with the cornflour - ladle 2 spoonfuls of the sauce into a pan and bring to a simmer, mix the cornflour with 1-2 tsp cold water to make a paste, then stir it into the sauce. Once thickened, return the sauce to the slow cooker and cook for 10 mins more on High, stirring occasionally (or for 5 mins on the hob). Serve with mashed potato, greens and extra mustard and thyme, if you like.

APPLE CIDER PORK POT ROAST

Apple Cider Pork Pot Roast image

Chunky apples, plus onion, thyme, and cider make this comforting pork braise especially appropriate for the holidays.

Provided by Sabrina Snyder

Yield Serves 12

Number Of Ingredients 8

1 (5-pound; 2.3 kg) boneless pork shoulder (6 pounds; 2.7 kg if bone-in)
1 teaspoon kosher salt
½ teaspoon coarsely ground black pepper
1 tablespoon vegetable oil
2 yellow onions, cut into 2-inch (5 cm) wedges
2 cups (475 ml) apple cider
2 tart apples (I like Granny Smith), cored and cut into 2-inch (5 cm) cubes
2 sprigs fresh thyme or 1 teaspoon dried thyme

Steps:

  • Preheat the oven to 325°F (165°C).
  • Season the pork with the salt and pepper.
  • Heat the oil in a large Dutch oven over medium-high heat. Once the oil is hot, add the pork and brown well on all sides, 3 to 4 minutes per side.
  • Remove the pork and add the onion wedges to the pot. Cook for a few minutes, letting them get a little color but being careful not to let them burn.
  • Return the pork to the pot, placing it on the bed of onions. Add the cider and 1 cup (235 ml) water and bring to a simmer, then wedge the apple pieces under the meat among the onions. Toss in the thyme.
  • Cover and transfer to the oven. Cook for 3 hours, or until the meat is fork-tender, shreds easily, and is a deep brown color; the apples will have caramelized.
