2 pork tenderloins (about 3/4 pound each), trimmed and silver skin removed
1 tablespoon smoked paprika
1 teaspoon salt
1 teaspoon pepper
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon white pepper
1/4 teaspoon cayenne pepper
1/4 cup balsamic vinegar
3 tablespoons honey
1 tablespoon Dijon mustard
2 teaspoons olive oil
12 dried figs, halved
12 cherry tomatoes
1/2 cup crumbled blue cheese
4 fresh basil leaves, thinly sliced

Steps:

  • Cut pork into 1-in. cubes. Combine next seven ingredients; rub over pork. Refrigerate, covered, until ready to grill. Meanwhile, make a glaze by whisking vinegar, honey, mustard and oil. Set aside., On water-soaked wooden skewers, thread pork cubes and fig halves. Grill, covered, on a greased rack over medium-high direct heat, turning occasionally, until a thermometer reads 145°, 8-10 minutes. During last half of grilling, brush cooked surfaces frequently with glaze., Let skewers stand for 5 minutes; add a tomato to each. kosher salt (to taste)
1/4 tsp garlic powder
1 1/2 tbsp balsamic vinegar
2 tbsp fig butter
optional chopped parsley for garnish

Steps:

  • Preheat the oven to 375°F.
  • Season the pork with salt and garlic powder and place on a baking pan.
  • Combine the vinegar and fig butter and generously brush it all over the pork.
  • Roast until the center of the pork reaches 145°F with a meat thermometer, about 25 to 30 minutes depending on the size of your pork and your oven.

I found this recipe in a site promoting the other white meat. Balsamic vinegar combines with a touch of brown sugar to make a delectable glaze for this pork.. A quick browning gives the pork color and seals in the juices for a more tender dish. This recipe is simple and very tasty both hot or cold.I made 2 so I can have leftovers. Add baby potatoes to your pan and you will get these great roasted potatoes.

1 1/2 lbs pork tenderloin
1 teaspoon olive oil
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1/3 cup balsamic vinegar
1/2 teaspoon crushed garlic
2 tablespoons firmly packed brown sugar

Steps:

  • Preheat oven to 375°F.
  • Rinse pork under cool running water. Trim excess fat. Season with salt and pepper.
  • Heat a large skillet over medium-high heat; place pork in skillet. Sear each side to brown entire surface. Remove meat from pan; set aside on a warm plate.
  • Add vinegar to skillet, stirring to scrape any cooked bits of meat from skillet. Reduce heat to medium; stir in brown sugar and garlic; mix wel and simmer a few minutes to make a glaze. Return tenderloin to skillet; spoon glaze over meat.

1 pork tenderloin
salt and ground black pepper to taste
1 tablespoon olive oil
1 ½ plums, pitted and chopped
2 tablespoons balsamic vinegar
1 tablespoon brown sugar
1 tablespoon honey
2 tablespoons blueberry juice

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with foil.
  • Season the pork tenderloin with salt and pepper. Heat olive oil in a heavy skillet over high heat until the oil shimmers; gently lay the tenderloin into the hot oil. After about 1 minute, gently loosen the meat from the bottom of the skillet, if necessary. Cook until the pork is seared a golden brown color, about 3 minutes per side. Transfer the pork to the lined baking sheet.
  • Roast the seared tenderloin in the preheated oven until a thermometer inserted into the center of the pork reads at least 145 degrees F (63 degrees C), about 15 minutes. Remove the pork from the oven and allow to rest for 10 minutes before slicing into medallions.
  • Cook the plums, balsamic vinegar, brown sugar, honey, and blueberry juice in a small saucepan over medium-low heat, stirring often, until the plums are soft, about 10 minutes. Transfer the sauce to a blender and blend until smooth. Return the sauce to the saucepan and simmer until reduced and thickened to the consistency of apple butter, about 5 more minutes. 1 lb. pork tenderloin (approximately)
1 Tbsp balsamic vinegar
Salt and freshly ground pepper
Mini potatoes (optional)
For the sauce:
1/2 Tbsp butter
2 shallots (finely diced or about 3 Tbsp finely diced red or white onion)
1/4 cup chicken stock
1 Tbsp fig jam (or fig spread)
1 Tbsp + 1 tsp balsamic vinegar
Pinch Thyme leaves (fresh or dried)
Salt/Pepper

Steps:

  • Preheat oven to 450F. Grease a cast-iron skillet with a bit of oil and set aside. (Alternately, you can use a rimmed baking sheet. Brush some oil on the baking sheet, as well).
  • Prepare the pork tenderloin by removing any visible fat and removing the silverskin. Brush pork with balsamic vinegar and season with salt and pepper. Place into a prepared pan or baking sheet, placing it along the side or at the end, if cooking potatoes alongside. Tuck the thin end of the tenderloin under, so that the pork is evenly thick from end to end.
  • (If cooking potatoes alongside, halve or cube the potatoes, toss with olive oil, salt and pepper. Place into the skillet or onto the baking sheet, cut side down.)
  • Place into preheat oven and roast for 25-30 minutes, or until the pork registers 145F when measured with an instant-read thermometer and the potatoes are golden.
  • Remove from oven. Remove the potatoes to a bowl and loosely cover with foil to keep warm. Remove the pork to a plate to rest while you make the sauce.
  • In the same skillet you used to cook the pork (or a fresh skillet if you cooked on a baking sheet), melt the butter over medium heat. Add the shallots or onion and cook, stirring until softened. Add the chicken broth, balsamic vinegar and fig jam. Increase the heat to medium high and cook, stirring, until sauce reduces and thickens. Taste and season with salt and pepper as needed. Add a few thyme leaves to the sauce, if using.
  • Return pork to the pan and re-warm, flipping it over a couple of times to coat with sauce. Remove pork to a plate and spoon warm sauce over-top or alternately, slice pork, then spoon sauce over-top. Serve with roasted potatoes.

  • One pork tenderloin, pepper and salt to taste. Heat olive oil and butter in skillet, sear tenderloin. Set skillet aside. Rub tenderloin with fresh thyme. Roast or grill tenderloin to desired temperature, ~ 155F. Tent tenderloin. Warm skillet, add a generous tablespoon of good balsamic vinegar, warm and blend. Add 1/4 cup or more of good Zinfindal or Rhone. Add lengthwise quartered figs to poach. Simmer for 4-5 minutes, then reduce liquid with figs still in skillet. Don't be shy, get it thick. Slice tenderloin and serve skillet contents on top.

1 large onion, roughly chopped
3 -4 garlic cloves, roughly chopped
1 (1 lb) pork tenderloin
balsamic vinegar
kosher salt

Steps:

  • Pre-heat oven to 350 degrees.
  • In a large skillet, I use 12" skillet, pour enough olive oil to coat the bottom of the pan. Sweat the garlic and onion together, do not burn the garlic, it will become too nutty. Once the garlic and onion is cooked down, the onion is tranparent, remove from the oil and place in a 9X13 pan. I usually take the ground pepper and salt and mix them together so that coating the pork is easier. Take the pork out of the vacume sealed bag, rinse and pat dry. Take the salt and pepper and pat onto the pork, sear on all sides. After searing on all sides, place in the 9X13 pan on top of the garlic and onions. Deglaze the pan with the balsamic vinegar, reduce and then pour over the pork, onions, and garlic. Place in middle rack for about 20-25 minutes until middle of pork is about medium well to well done.
  • When serving, I slice the pork and then take the glaze and onion/garlic mixture and pour over the pork. It's delicious -- ENJOY.
