Great potato and cauliflower side dish. Goes especially well with a pork meal.

2 large potatoes, peeled and chopped
1 head cauliflower, cut into florets
3 tablespoons butter
3 tablespoons all-purpose flour
1 cup heavy cream
1 cup shredded Swiss cheese
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium casserole dish.
  • In a pot with enough water to cover, boil the potatoes 10 minutes, or until tender but still firm. Drain, and set aside.
  • In a pot, place the cauliflower in a steamer basket over boiling water. Steam 5 minutes, until tender but still firm. Set aside.
  • Melt the butter in a saucepan over medium heat, and whisk in the flour. Gradually stir in the heavy cream until thickened. Remove from heat, and mix in 1/2 cup Swiss cheese until melted. Season with salt and pepper.
  • Arrange the potatoes and cauliflower in the prepared casserole dish. Pour the cream sauce over the potatoes and cauliflower, and sprinkle with the remaining Swiss cheese.
  • Bake 20 minutes in the preheated oven, or until bubbly and lightly browned.

I took my favorite parts of several different recipes to come up with this rich and flavorful vegetarian curry. I usually serve it with steamed rice, which can cook as the curry comes together. Sometimes I throw a few cardamom pods in when I steam the rice. It adds a great flavor. Don't forget to remove the pods before you serve the rice!

2 teaspoons salt, divided
8 small Yukon Gold potatoes, cut in half
2 cups cauliflower florets, or more to taste
3 tablespoons water, or as needed
2 tablespoons curry powder
1 teaspoon ground coriander
¼ teaspoon cayenne pepper, or to taste
1 pinch saffron
2 tablespoons ghee (clarified butter)
1 teaspoon whole cumin seeds
1 small onion, diced
1 lemon, juiced
1 (15 ounce) can garbanzo beans, drained
1 cup frozen peas
1 cup unsweetened coconut milk
3 tablespoons chopped fresh cilantro

Steps:

  • Bring a large pot of water to a boil with 1 teaspoon salt. Add potatoes; boil until easily pierced with a fork, about 10 minutes. Transfer potatoes to a strainer using a slotted spoon; rinse with cold water. Add cauliflower to boiling water; cook until easily pierced with a fork, 3 to 5 minutes. Transfer cauliflower to strainer using slotted spoon; rinse with cold water. Reserve 1/2 cup cooking liquid.
  • Combine 3 tablespoons water, curry powder, coriander, cayenne, and saffron in a small bowl until paste forms. Let curry paste stand until flavors blend, about 10 minutes.
  • Heat ghee in a stockpot over medium heat. Add cumin seeds; cook and stir until seeds begin to pop. Add onion and remaining 1 teaspoon salt; cook and stir until onions begin to soften, about 3 minutes. Add curry paste; cook and stir until fragrant, about 2 minutes more. Add lemon juice, reserved cooking liquid, potatoes, cauliflower, and garbanzo beans; stir well to combine.
  • Stir green peas, coconut milk, and cilantro into potato-cauliflower mixture; simmer until vegetables are heated through and mixture has thickened slightly, about 10 minutes.

Roasted Potatoes and Cauliflower With Chives image

Adapted from a recipe I found at epicurious.com. You could use more olive oil if it is your preference. I tend to cook with as little oil as I can get away with.

10 ounces ruby gold baby potatoes
3/4 lb cauliflower, cut into small flowerets
olive oil flavored cooking spray
2 teaspoons minced garlic
salt and pepper
1/4 cup fresh chives, chopped
fat free sour cream (for serving) (optional)

Steps:

  • Preheat oven to 450 degrees F.
  • Cut potatoes in half, about ½ inch pieces. In a large Ziploc bag, toss potatoes, garlic, a few sprays of cooking spray to coat, and salt and pepper to taste.
  • Put potatoes in a glass baking dish and roast, uncovered, for about 15 minutes, turning occasionally.
  • While potatoes are roasting, put cauliflower in the same Ziploc bag, toss with more salt and pepper to taste, and a few sprays of cooking spray to coat.
  • When 15 minutes are up, stir the cauliflower into the potatoes, mixing well. Roast for 10-15 minutes more, until cauliflower is tender and starting to golden.
  • Toss with fresh chives and serve with sour cream if desired!

3 large russet (baking) potatoes
3 tablespoons olive oil
1 small head of cauliflower, cut into small flowerets
1/3 cup thinly sliced fresh chives plus 8 whole chives for garnish if desired

Steps:

  • Peel the potatoes, with a melon-ball cutter scoop out as many balls as possible from them, and in a jelly-roll pan toss the balls with the oil and salt and pepper to taste. Roast the potatoes in the middle of a preheated 450°F. oven, turning them occasionally, for 15 minutes. Add the cauliflower, toss the mixture well, and roast it for 10 minutes, or until the cauliflower is tender and golden in spots. Toss the vegetables with the sliced chives and salt and pepper to taste and serve them garnished with the whole chives.

2 tbsp vegetable oil
1 large onion, chopped
large piece ginger, grated
3 garlic cloves, finely chopped
½ tsp turmeric
1 tsp ground cumin
1 tsp curry powder, or to taste
227g can chopped tomatoes
½ tsp sugar
1 cauliflower, cut into florets
2 potatoes, cut into chunks
1 small green chilli, halved lengthways
squeeze lemon juice
handful coriander, roughly chopped, to serve
naan bread and natural yogurt, to serve

Steps:

  • Heat the oil in a saucepan. Cook the onion for 10 mins until soft, then add the ginger, garlic, turmeric, cumin and curry powder. Cook for 1 min more. Stir in the tomatoes and sugar. Add the cauliflower, potatoes and split chilli, seasoning to taste. Cover with a lid and gently cook for a good 30 mins, stirring occasionally, until the vegetables are tender - add a drop of water if you need to, but it is meant to be a dry curry.
  • When the vegetables are cooked, remove the chilli, if you like, stir in a squeeze of lemon juice and scatter with coriander. Serve with your choice of Indian bread and a dollop of yogurt.

1 head cauliflower, stemmed and chopped
2 large red potatoes, cut into 1-inch pieces
5 baby carrots, cut into 1/2-inch slices, or more to taste
2 teaspoons dried onion flakes, or to taste

1 cube chicken bouillon
1 (10.75 ounce) can condensed cream of chicken soup
½ cup milk
½ (8 ounce) package cream cheese
1 tablespoon bacon bits, or more to taste
¼ cup chopped fresh parsley, or more to taste
½ cup shredded Cheddar cheese

Steps:

  • Stir cauliflower, potatoes, carrots, and onion flakes together in a pot; add enough water to cover and stir in chicken bouillon cube. Bring to a simmer and cook until cauliflower is tender, about 10 minutes.
  • Transfer vegetable mixture and about 1 cup cooking liquid to a slow cooker. Stir cream of chicken soup, milk, cream cheese, and bacon bits into vegetable mixture.
  • Cook on Low, stirring occasionally, for 2 1/2 hours.

4 medium potatoes
1 head cauliflower, cut into florets
1/2 cup sour curd, beaten
1/4 cup tomato puree
1 black cardamom pod
1 bay leaf
1 1/2 tablespoons oil
1 pinch asafoetida powder
1/4 teaspoon turmeric powder
1/2 teaspoon anise seed (saunf)
1/4 teaspoon carom seeds (ajwain)
1 teaspoon kashmiri chili powder
1 teaspoon coriander powder
3/4 teaspoon salt
1/2 teaspoon garam masala
2 tablespoons coriander, for garnishing

Steps:

  • Peel potato skins.
  • Pierce whole potatoes with a fork at 3-4 places all over.
  • Place them on the circumference of a microwave turntable.
  • Microwave on high for 3 1/2 minutes so that they are partially cooked.
  • Allow standing time of 5 minutes.
  • Heat oil in a frying pan.
  • Add black cardamom, bay leaf and asafoetida.
  • Cut potatoes into big cubes and deep fry in hot oil on medium flame till pink in colour.
  • Deep fry cauliflower florets similarly.
  • Remove onto a tissue paper.
  • Microwave oil on high for a minute in a glass dish.
  • Add turmeric powder, aniseeds, carom seeds, red chilli powder, corriander powder, salt and garam masala to oil.
  • Mix it really well.
  • Add 6 tbsp of water.
  • Microwave on high for 1 1/2 minutes uncovered.
  • Add tomato puree now and microwave uncovered on high for a minute.
  • Add fried potatoes and cauliflower.
  • Mix well.
  • Add curd.
  • Mix and microwave on medium for 3 minutes uncovered.
  • Serve immediately garnished with chopped corriander.
