HASH BROWN POTATO CASSEROLE
This creamy, cheesy Southern classic casserole can be served with breakfast, brunch or dinner. You'll need frozen diced potatoes, cheddar cheese, onion and cream of chicken soup. Perfect for the holidays!

Steps:
- Preheat oven to 400 °F.
- In a large bowl, combine the diced potatoes, 2 cups of the cheddar, cream of chicken soup, sour cream, butter, onion and House Seasoning.
- Place in a buttered 9×13-inch pan and bake for 35 minutes. Remove from the oven and top with remaining cheddar. Return to the oven and bake for 10 minutes longer.

Steps:
- Preheat oven to 350 degrees F.
- Spread mashed potatoes evenly on bottom of casserole dish.
- Layer sour cream evenly over top.
- Sprinkle House Seasoning, to taste.
- Saute onion and bell pepper in butter; evenly layer over top of sour cream.
- Slice potatoes and layer over onions and bell peppers.
- Add butter.
- Sprinkle House seasoning.
- Finally top with cheese.
- Bake for 25 to 30 minutes.
- Remove from oven and crumble bacon over top.
- Cook's Note: Leftover mashed potatoes work wonderfully in this recipe.
- House Seasoning:
- 1 cup salt
- 1/4 cup black pepper
- 1/4 cup garlic powder
- Mix ingredients together and store in an airtight container for up to 6 months.
POTATO CASSEROLE
Twice baked potato casserole is the perfect recipe for leftover mashed potatoes. Just grab a bell pepper, onion, sour cream, cheddar cheese and crispy bacon to put this delicious dish together.

- Preheat oven to 350 °F. Spread mashed potatoes evenly on bottom of casserole dish. Layer sour cream evenly over top. (Each time you add a layer, sprinkle on a little House seasoning.) Sauté onion and bell pepper in butter; evenly layer over top of sour cream. Next, layer with 1/2 cup Cheddar cheese. Slice potatoes and layer over cheese until top is completely covered with potatoes. Finally top with remaining 1 cup cheese. Bake for 25-30 minutes. Remove from oven and crumble bacon over top.
- Leftover mashed potatoes work wonderfully in this recipe.

I doctored this up a bit--used the whole piece of bread and didn't remove the crusts, added fresh basil, fresh tomatoes, and spinach. Recipe posted as written.

- Preheat the oven to 350. Spray a 13x9 inch baking dish with nonstick cooking spray.
- In a large skillet, cook the sausage over medium heat, stirring frequently, until browned and crumbly, about 10 minutes, drain well on paper towels.
- Cut and discard the crusts from the bread. Cut the slices in half and arrange in a single layer in a prepared baking dish, cutting pieces to fit as necessary to cover the bottom of the dish. Sprinkle with the sausage and cheese.
- In a large bowl, whisk together the eggs, milk, mustard, seasoned salt, and pepper. Carefully pour the mixture over the cheese.
- Bake casserole until set and golden, about 40 minutes. Let stand for 10 minutes before serving.

- Brown meat in hot oil.
- Add water, Worcestershire sauce, garlic, bay leaves, onion, salt, sugar, pepper, paprika, and allspice.
- Cover and simmer 1 1/2 hours.
- Remove bay leaves and garlic clove.
- Add carrots and celery.
- Cover and cook 30 to 40 minutes longer.
- To thicken gravy, remove 2 cups hot liquid. Using a separate bowl, combine 1/4 cup water and cornstarch until smooth.
- Mix with a little hot liquid and return mixture to pot.
- Stir and cook until bubbly.

- Preheat oven to 375º. Grease a 13×9-inch baking dish. Peel back film at corner of each package of potatoes to vent. Microwave on HIGH for 3 minutes. In a large bowl, combine potatoes, cream cheese, and pepper; beat at medium speed with a mixer until combined. - Bring a pot of water to the boil and add the hash browns. Cook for 5 minutes and drain.
