KALE, WHITE BEAN, AND POTATO STEW

Steps:
- Heat oil in a medium saucepan over medium heat. Saute onion, celery, and carrot until tender, 6 to 8 minutes.
- Add potatoes and 4 cups water. Season with salt and pepper. Bring to a boil; reduce to a simmer. Cook until potatoes are tender, about 10 minutes. Mash half the contents of the pot until slightly thickened.
- Add kale and beans and continue cooking until kale is tender, 6 to 8 minutes more.
- Stir in vinegar and adjust seasoning if necessary. Drizzle with oil before serving.
LOW FODMAP VEGETARIAN POTATO KALE AND BEAN HASH

- Heat garlic oil in a skillet over medium-high heat. Add the diced potatoes and ½ Tbsp salt, toss well to coat.
- Cover the skillet and cook for 7-9 minutes, tossing occasionally to ensure that all sides of the potatoes are browned evenly.
- Add 1/2 can of Garbanzo beans to the skillet with the potatoes, mix well and arrange the beans into a single layer in the pan. Leave to cook for 3-5 minutes, flipping once or twice so that the beans can brown.
- Add 3 cups kale and cook briefly until slightly wilted, about 2 minutes.
- Remove from heat and sprinkle in lemon zest, pepper, ¼ cup Parmesan cheese, salt to taste, and crushed pepper flakes (optional).

SAUTEED POTATOES WITH KALE
This is a delicious sauteed kale recipe that I got from my mom and tweaked a bit. It tastes so good that even my 18-month-old son will eat it! Serve with extra olive oil and salt, if desired. We enjoy this recipe with plenty of salt and oil. I do not measure exactly. It's a recipe you can play around with!

- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender but still holding their shape, about 15 minutes. Drain.
- Meanwhile, heat 2 tablespoons olive oil in a large frying pan over medium-high heat until quite hot. Toss in pieces of kale; reduce heat to medium. Cover and cook, stirring often, until kale begins to soften and crisp slightly, about 5 minutes. Add onion; cook until softened and translucent, 2 to 3 minutes. Stir in garlic.
- Add remaining olive oil when onions are beginning to brown. Stir in potatoes and season with salt and pepper. Cover and cook until potatoes are completely softened, about 5 minutes. Remove lid; cook and stir until potatoes just begin to brown, about 10 minutes more.

- Heat the olive oil in a large Dutch oven over medium heat; cook and stir the onion until softened and translucent, about 5 minutes. Stir in the carrot and garlic, and cook for 5 minutes more.

SWEET POTATO AND KALE HASH WITH FRIED EGGS
Corned beef hash is one of my all-time-favorite diner breakfasts. This lightened-up version ditches the meat, swaps the white potato for sweet, and introduces a few fistfuls of healthy kale. Lunch is a dairy-free risotto that's as indulgent as those made with butter and parmesan, while dinner is an aromatic, filling, and flavorful vegetable chili that I like to serve it with extra jalapenos.

- Set a large skillet over medium-high heat. Add 2 tablespoons of the coconut oil, the sweet potato, and a pinch of salt and cook until the potatoes begin to soften and brown, about 5 minutes. Add the kale, bell pepper, scallion, cumin, paprika, a pinch of salt, and a twist of black pepper and cook until the kale wilts and softens, about 5 minutes. Taste, adding salt and pepper as needed.
- Meanwhile, in a small nonstick skillet, heat the remaining 1/2 tablespoon coconut oil over medium heat. When the pan is hot, carefully crack the eggs into the pan. Cover and cook until the whites are set but the yolks are still runny, about 3 minutes. Season with a pinch of salt and a twist of black pepper.
- Top the hash with the eggs and serve.
POTATO, KALE, AND WHITE BEAN HASH

- Heat olive oil in a heavy bottomed skillet over medium-high heat. Add the potatoes and a generous pinch of salt, toss well to coat. Cover the skillet with a tight fitting lid and cook for 7-9 minutes, tossing or flipping occasionally to ensure that all sides of the potatoes are browning and getting crisp. Add the onions and the white beans to the skillet with the potatoes, mix well and gently arrange the beans and onions into a single layer in the pan. Leave to cook for 3-5 minutes, flipping once or twice, to ensure that the beans are browning and getting crisp. Add the ribbons of kale and cook briefly until the kale wilts slightly. Remove from the heat and sprinkle in lemon zest, black pepper, red pepper flakes, and additional salt to taste. Serve immediately.
KALE WITH BEANS AND POTATOES
This recipe was inspired by a kale side dish recipe I got from a friend. It is a very colorful and flavorful dish. I modified it to be more in keeping with a Nutritarian eating style and added beans and sunflower seeds to make it into a main course. You can reduce prep time by using pre-chopped or frozen kale, frozen onion and carrots and jarred garlic.

- Remove the center stem from the kale and discard. Wash and chop kale leaves and set aside. If you don't know how to remove the stems from kale, Google: remove kale stems.
- Prepare onion, pepper, carrots, garlic and potatoes. Combine with water and set aside.
- Combine tomatoes, beans, vinegar, rosemary and sunflower seeds and set aside.
- Coat large covered non-stick frying pan or Dutch oven (at least 5 quarts) with oil. Add onion, pepper, carrots, garlic, potatoes, tomatoes and water. Bring to a boil, stirring frequently to prevent sticking or burning.
- Reduce heat and simmer 10-15 min or until vegetables are tender.
- Add kale, cover and cook until kale is wilted.
- Add beans, vinegar, rosemary and sunflower seeds. Stir until heated through.

KALE & POTATO HASH
From Eating Well magazine, this can be served as a side dish with a steak or pork chops or set a poached egg on top for a hearty breakfast or brunch. A 1- to 1 1/2-pound bunch of kale yields 16 to 24 cups of chopped leaves.When preparing kale for this hash, remove the tough ribs, chop or tear the kale as directed, then wash it--allowing some water to cling to the leaves. The moisture helps steam the kale during the first stages of cooking. Fresh, partially cooked, shredded potatoes for hash browns can be found in the refrigerated produce section and sometimes in the dairy section of most supermarkets. Alternatively, boil potatoes until they can just be pierced with a fork but are not completely tender. Let cool slightly, then shred.
