Potato Ham Bake image

I like to make this casserole with the leftovers from a baked ham. It's a great meal all by itself.

3 medium potatoes, peeled and thinly sliced
2 cups cubed fully cooked ham
1 medium onion, sliced and separated into rings
8 slices process American cheese
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1/2 cup frozen peas, thawed

Steps:

  • In a greased 3-qt. baking dish, layer half of the potatoes, ham, onion, cheese and soup. Repeat layers. Cover and bake at 350° for 1-1/4 hours or until potatoes are almost tender. , Sprinkle with peas. Bake, uncovered, for 10 minutes or until heated through.

1 Cup Chopped Celery
1/2 tsp. Salt
1 1/2 Cups Boiling Water
1 1/2 Cups Potatoes, cubed
Milk
1/4 Cup Butter or Margarine
1/4 Cup Chopped Onion
1/4 Cup Flour
2 Cups Cubed Ham
2 Tbs. Parsley
1 Cup Cooked Peas
1/2 Cup Sharp Cheese, grated

Steps:

  • Add chopped celery and salt to boiling water. Cook for 10 minutes. Add potatoes and cook 15 minutes longer. Drain and reserve liquid. Add enough milk to potato water to make 1 1/2 cups. In a large saucepan melt butter. Add onion and cook on low heat until it turns yellow. Add flour and blend well. Gradually add liquid, stirring constantly until sauce thickens. Boil for 1 minute. Remove from heat and add ham, parsley, celery, potatoes and peas. Spoon into greased 1 1/2 quart casserole dish and top with grated cheese. Bake Uncovered at 325 degrees for about 30 minutes or until hot and bubbly. If refrigerated before baking, bake at 350 degrees for 45 minutes.

1 cup hot mashed potatoes (with added milk and butter)
1 large egg yolk, beaten
1/4 cup shredded cheddar cheese
Dash dill weed
2 teaspoons butter
1 can (8-1/2 ounces) peas, drained

Steps:

  • In a bowl, combine potatoes and egg yolk; mix well. Stir in the cheese. , Spoon 2 mounds onto a greased baking sheet. With the back of a spoon, shape each mound into a 4-in. nest. Sprinkle with dill; dot with butter. Bake at 350° until potatoes are golden brown, 30-35 minutes. Fill nest with peas. Bake until heated through, about 10 minutes longer.

12 sm new potatoes
4 gr onions
2 c. frozen peas
2 tbs butter
2 tbs flour
1 1/2 c. vegetable liquid or milk
Salt and pepper
2 c. cubed ham*
1/2 c. shredded cheese

Steps:

  • Scrub and cook potatoes in salted water until partially tender. Add onions and peas. Cook until vegetables are tender. Drain and reserve liquid. Make a white sauce: melt butter, add flour and cook 1 minute. Add reserved vegetable liquid or milk. Season with salt and pepper. Continue to cook until thickened. Pour sauce over vegetables and add ham and cheese. Heat through and serve.

  • Heat oven to 450.
  • Combine potatoes and egg in a large bowl.
  • Use hands to mix well.
  • Coat regular muffin pan with nonstick cooking spray.
  • Spoon 2 heaping tablespoons of potato mixture into each muffin cup.
  • Use fingers and back of spoon to press mixture firmly on bottom and sides of muffin cup.

1 (8 ounce) container sour cream
½ cup butter, melted
salt and ground black pepper to taste

2 tablespoons flour
3/4 cup chopped onion

10 ounces peas

Steps:

  • Boil the potatoes, carrots and peas to cook, then drain.
  • Lightly brown Spam and onions in butter.
  • Stir in flour.

  • Cook until thickened slightly.
  • Add soup and stir well.
  • Add potatoes and carrots.
  • Pour into 9X13 inch pan.
