Steps:
- Dissolve yeast in warm water in large bowl. Stir in potatoes, sugar, shortening, eggs, salt, and 3 c. of the flour. Beat until smooth. Mix in enough remaining flour to make dough easy to handle. Turn dough onto lightly floured surface, knead until smooth and elastic; about 5 minutes. Place in large greased bowl; turn greased side up. Cover bowl tightly; refrigerate at least 8 hours but no longer than 5 days.
- From here you can make anything. Each time you pull the dough out of the fridge just punch down the dough and take out what you need. With one batch of dough I made 4 huge hamburger buns and two full sized pizza crusts. Here are my pizzas:
- The pizza was great and the kids and I loved it. I'm not going to say that this rivals the crust of New York pizzerias but it beats bread in a can and it's a lot cheaper too.
- Here are instructions for all sorts of other kinds of bread made with this dough. Also feel free to substitute some whole wheat flour for all-purpose to make it healthier.
- Brown-and-Serve Rolls: shape dough as directed in any recipe below. Let rise 1 hour. Heat oven to 275°. Bake 20 minutes (do not brown). Remove from pans, cool to room temperature. Wrap in aluminum foil and store in refrigerator no longer than 8 days or freeze no longer than 2 months. At serving time, pre-heat oven to 400°, bake until brown, 8 to 12 minutes.
- Casseroles: shape ¼ of dough into 1-inch balls. Place in lightly greased round layer pan, 9 X 1 ½ inches. Brush with softened margarine, let rise 1 hour. Heat oven to 400° and bake about 15 minutes until golden brown. 3 dozen rolls.
- Cloverleaf Rolls: shape ¼ of dough into 1-inch balls. Place 3 balls in each greased muffin cup. Brush with softened margarine, let rise one hour. Heat oven to 400° and bake about 15 - 20 minutes until golden brown. 1 dozen rolls.
- Crescent Rolls: roll ¼ of dough into a 12-inch circle on a floured surface. Lightly spread with softened margarine. Cut into 16 wedges. Roll up tightly beginning at rounded edges, stretching dough as it is rolled. Place rolls with points underneath on a greased cookie sheet, curving slightly. Let rise one hour. Heat oven to 400° and bake about 15 minutes until golden brown. 16 rolls.
- Fan Tans: roll ¼ of dough into a 13X9 inch rectangle on a well-floured surface. Spread with softened margarine. Cut lengthwise into 6 strips, each about 1 ½ inches wide. Stack strips evenly; cut into 12 pieces, each about an inch wide. Place cut sides down in greased muffin cups. Brush with softened margarine. Let rise one hour. Heat oven to 400° and bake about 15 - 20 minutes until golden brown.
- 1 dozen rolls.
- Four-Leaf Clovers: shape ¼ of dough into 2-inch balls. Place each ball into a greased muffin cup. With scissors, snip each ball completely into halves, then into quarters. Brush with softened margarine. Let rise one hour. Heat oven to 400° and bake about 15 - 20 minutes until golden brown. 1 dozen rolls.
- Pan Biscuits: use half of dough recipe. Roll dough into 13X9 rectangle on a well-floured surface. Place in greased, oblong pan (13X9X2). Cut dough into rectangles, each about 3X2 ½ inches. Brush with softened margarine. Let rise one hour. Heat oven to 400° and bake about 25 minutes until golden brown. 15 rolls.
- Parker House Rolls: roll ¼ of dough into a 12X9 rectangle on a well-floured surface. Cut into 3-inch circles with a floured cutter. Brush with softened margarine. Make a crease across each circle; fold so top half slightly overlaps bottom half. Press edges together. Place close to each other in a greased square 9X9X2 pan. Brush with softened margarine. Let rise one hour. Heat oven to 400° and bake about 15 - 20 minutes until golden brown. 1 dozen rolls.
- Leftover Turnovers: prepare ¼ dough as if for Parker house Rolls. After cutting into 3-inch circles, roll out to 4-5 inch circles. Make crease, fill bottom half with 2-3 tbsp. of leftovers. Fold over and press edges together. Let rise 30 minutes. Heat oven to 400° and bake about 15 - 20 minutes until golden brown

- Boil and mash potatoes.
- While hot add potato water.
- Mash so there are no lumps; add butter.
- Add cold water with the powdered milk, sugar and eggs.
- Add yeast when not too hot.
- Add 2 cups flour; mix.
- Add rest of flour; mix until smooth.
- Put in a covered container so that it is only 1/4 full.
- Put in refrigerator overnight.
- Next day make buns size of walnut; put on cookie sheet.
- Work with dough while cold.
- If you don't want to work with all the dough at one time, return rest to refrigerator and use next day; this dough is supposed to last in refrigerator for 6 days.
- Grease the buns with pure lard or oil.
- Let rise until nearly double.
- Make dents in the center and put in the filling.
- Bake at 450 degrees Fahrenheit for 10 to 12 minutes until golden brown.
- Remove from oven; grease with shortening; cool.
- If to be frozen, cool slightly and pack in air tight contaners.
- Before they get too cold, freeze; if packed slightly warm it keeps in the freshness.

- Place water, softened butter, egg, egg yolk, milk powder, potato flakes, sugar, salt, flour and yeast in the pan of the bread machine in the order recommended by the manufacturer.

This is a recipe that my family has created for a portable breakfast. It uses a bread machine for the dough preparation. The filling can be with a variety of things. We like the sausage, cheese, and hash browns for a breakfast meal. I prepare the recipe by filling the kolaches the night before, and keeping them in the refrigerator overnight. In the morning, I set out the kolaches to warm to room temperature while the oven is preheating, and then cook them for a quick, hot breakfast.

- In the order suggested by the manufacturer, place milk, egg, egg yolk, bread flour, salt, butter, sugar and bread machine yeast in bread machine. Select Dough cycle, and press Start.

- Scald milk and shortening; add sugar.

- Place the cream cheese and butter in a large bowl; beat with electric mixer until smooth and creamy. Beat 1/2 cup of confectioners' sugar into the butter mixture. Slowly beat in the flour; mix well. Cover bowl and refrigerate at least 3 hours, or overnight.
- Preheat an oven to 375 degrees F (190 degrees C).
- On a well floured board, roll out chilled dough to 1/8 inch. Use a pizza wheel to cut dough into 2 1/2 inch squares. - Scald milk. Add sugar and butter and stir to dissolve. Allow it to cool to warm, then add the yeast and let it begin to work. Add eggs.
- Put milk mix in a large mixing bowl. Measure the flour and salt into another bowl.
- With a mixer slowly work the flour mix into the dough bowl. When the dough becomes too thick for the mixer to handle, start working in the flour by hand.
- When dough starts to come together and leave the sides of the bowl, it's just right.
- Form the dough into a ball and cover. Let rise in warm place until double its size.
- Turn the dough out on a lightly floured surface and knead gently until it comes together and is soft and elastic.
- Divide dough into egg-size pieces. Flatten and form into square or round. Make a depression in the center with your floured thumb.
- Fill the depression with 1 rounded teaspoon of filling. Let the filled kolaches rise about 20 minutes. Brush tops with beaten egg mixed with a little milk and sugar.
- Bake at 350° for 15-20 minutes or until lightly browned.
- Sprinkle you fresh out-of-the-oven kolaches with powdered sugar before serving.
- FILINGS:
- Apricot: Place 1 lb dried apricots in a pan with cool water. Let soak several hours. Bring to slow simmer and add sugar to taste. Cook until very soft. Stir to get a smooth consistency.
- Prune: Made the same way as the apricot filling.
- Pineapple: Simmer well drained canned, crushed pineapple until it thickens.
- Poppy seed: 1/2 lb ground poppy seeds, 1/2 tsp salt, 1 cup sugar, 1 tsp vanilla. Add enough milk to make a thick mis. Let stand overnight to absorb the liquid.
- Cream cheese: 8 oz cream cheese, 1/2 cup sugar, 1 tsp lemon juice, 3/4 tsp vanilla, 1 tsp sour cream. Mix together until smooth.
- Sausage: Take a small piece of sausage and wrap dough around the piece and bake.
- You can use just about any fruit filling in the kolaches, just don't use jam or jelly. They liquefy with the heat in the oven.

- Dissolve yeast in water and sprinkle with 1 teaspoon sugar.
- In large bowl or mixer, cream sugar and shortening or margarine together.
- Add yolks and salt and mix well.
- Add the dissolved yeast and about á cup of the flour.
- Mix slowly with mixer.
- Add all the milk and continue adding the remaining flour, using mixer or stirring with a wooden spoon until dough becomes glossy.
- Cover; let rise in a warm place until double in bulk, about one hour.
- Preheat oven to 425F and lightly grease your baking pans.
- After the dough has risen, cut off small portions of dough about the size of an egg.
- Using a tablespoon, shape into balls and place on a greased pan about 1 inch apart.
- Brush with melted butter to improve flavor, cover loosely and let rise until light.
- Make a small indentation in each piece and place filling there.
- Sprinkle with topping and bake in preheated oven for 15 minutes.
- Brush the kolaches with melted butter when they come out of the oven and cool on wire racks.
- Kolaches are best if they're eaten the day they are made.
- For the posypka: Mix ingredients together until it resembles coarse meal. Store in refrigerator.
- For the prune filling: Cook prunes slowly in water to cover until soft and tender. Remove any stones from the cooled prunes and add 1/2 teaspoon cinnamon and mix well. Do not overmix or prunes will lose their color. Filling for about 2 dozen kolaches.
- For the apricot filling: Cook a 10-oz package of dried apricots slowly in enough water to cover until fruit is soft and water is cooked out. Do not cover or fruit turns dark. Add 1 1/2 cups sugar or more to taste and mash with a potato masher until well blended. Filling for about 2 dozen kolaches.
- For the cottage cheese filling: If using cottage cheese as a filling, be sure to enclose cheese in the dough. Spread dough balls out, place cheese in the middle and pinch all sides together to seal completely. Place sealed side down on the greased pan and butter the pastry. Let rise until light, sprinkle with topping and bake. If commercial cottage cheese is used. Mix together until blended. If cheese is too moist, add very finely rolled crackers, about 10 or 12 to absorb liquid. If using country-style cottage cheese, cream cheese can be omitted or used for added flavor, according to taste.

- Put the milk and butter in a large saucepan or 2 cup Pyrex type microwave-safe measuring cup and heat until it just begins to boil. Remove from heat (or microwave) stick a thermometer in it. Let cool to 130 degrees.
- Meanwhile, combine only 2 cups of the flour, salt, sugar, yeast and potato flakes in a mixing bowl – preferably a stand mixer bowl so you can use the dough hook. Add the milk mixture and stir until blended, then add the egg and stir until well blended.
- Add another 1/3 cup of flour – dough should still be a little sticky, but not wet. Start kneading with the dough hook. If a lot of the dough still sticks to the sides of the bowl as you start to knead, continue adding flour a few tablespoons at a time. If you weighed your flour, you will probably use the entire 2 2/3 cup (12 oz) of flour. If you are a heavy handed scooper who doesn’t weigh, you may need only the 2 1/3 cup. Knead until dough is smooth and elastic. It should be easy to handle at this point.
- Transfer to a greased bowl and let it pick up some of the butter/oil from the bowl, then flip it so you have a nice, greasy, ball. Cover and let rise for 1 hour or until doubled in bulk.
