CREAMY CHEESY CHILI POTATO CASSEROLE

After making way too much homemade chili, I came up with this recipe to use up the leftovers. I haven't seen this one anywhere else, but it is delicious, easy, cheap, and filling.

Number Of Ingredients 6

Ingredients

2 medium potatoes, peeled and sliced 1/8 ",thick
3 cups of your favorite chili
1 (8 ounce) package cream cheese, cubed
1 can cream of mushroom soup
3 cups sharp cheddar cheese
salt and pepper

Steps:

Layer sliced potatoes, chili, cubed cream cheese, cream of mushroom soup, and cheddar cheese in a greased casserole dish.
Repeat layers (like lasagna).
Bake covered in a 350 degree oven for 1 1/2 hours.
Top with additional cheddar cheese and bake uncovered for 10 minutes.
Allow casserole to set for 20 minutes and serve.

Ingredients

2 lbs red potatoes
1/3 cup heavy cream
2 tablespoons butter
4 ounces cheddar cheese (or mexican cheese blend)
salt
4 ounces green chilies, canned

Steps:

Peel potatoes and dice into 1/2 inch pieces. Boil some water, add potatoes, and boil for about 15-20 minutes. (until potatoes are soft)
Meanwhile heat heavy cream over low heat and add cheddar until combined and smooth.
Drain potatoes and return to pot. Mash potatoes with potato masher.
Add all ingredients to potatoes except chiles and salt. Mix until smooth.
Add chiles to desired spiciness and salt to taste.
You can also add finished potatoes to casserole dish and melt additional cheese over top.

I'm also asked to bring this as a dip with tortilla chips at parties, a big favorite.

1 lb ground chuck
1 lb spicy bulk sausage
1/2 cup green onion (chopped)
1 tablespoon Worcestershire sauce
1 (1 lb) box Velveeta cheese (cubed)
1 (10 ounce) can Rotel Tomatoes
1 teaspoon garlic powder
2 tablespoons chili powder
1 teaspoon cumin
1/4 cup cilantro (chopped)
1 tablespoon white wine vinegar
1 (10 3/4 ounce) can cream of mushroom soup
20 ounces Simply Potatoes Diced Potatoes with Onion

Steps:

Brown sausage and ground chuck in skillet.
Drain well.
Place meat and all other ingredients into crockpot and cook until cheese is melted and bubbly.
Stir occasionally.
SUPER EASY!
