SIMPLE MAPLE BAKED BEANS

I came up with this recipe in a pinch after running out of baked beans at our oldest daughter's birthday party. I dressed up canned beans with maple syrup and a few other ingredients to produce this sweet, saucy version that tastes like homemade. They're so easy to fix that I rarely make baked beans from scratch anymore.

1 medium onion, chopped
1 to 2 tablespoons canola oil
3 cans (28 ounces each) baked beans
1-1/2 teaspoons ground mustard
1 teaspoon garlic salt
3/4 to 1 cup maple syrup

Steps:

  • In a Dutch oven, cook onion in oil until tender. Add the beans, mustard and garlic salt. Cook over medium heat until bubbly, stirring occasionally. Add maple syrup; heat through, stirring occasionally.

Since my husband raises hogs and my parents produce maple syrup, this recipe's a natural for me! I usually prepare Maple Baked Beans just for us during the winter. In summer, I'll often make it for family picnics and get-togethers.

1 pound dried navy beans
4 quarts water, divided
6 slices bacon, cut up or 1 cup cooked ham cubes
1 medium onion, chopped
1 cup maple syrup or maple-flavored syrup
1/2 cup ketchup
1/4 cup barbecue sauce
5 teaspoons cider vinegar
1 teaspoon prepared mustard
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Sort and rinse beans; place in a 4-qt. Dutch oven. Cover with 2 qts. cold water. Bring to a boil; reduce heat and simmer for 2 minutes. Remove from the heat. Cover and let stand 1 hour. Drain and rinse beans. Return beans to Dutch oven; cover with remaining water. Bring to a boil; reduce heat and simmer for 30-40 minutes or until almost tender. Drain and reserve liquid. In a 2-1/2-qt. casserole or bean pot, combine beans with all remaining ingredients. Cover and bake at 325° for 2-1/2 hours or until tender. Stir occasionally; add reserved bean liquid, if necessary.

1 pound dry red kidney beans
2 quarts water
1 large yellow onion, cut in eighths
1 bay leaf
6 whole black peppercorns
3/4 cup medium amber pure maple syrup
1/2 cup light brown sugar, lightly packed
1/2 cup ketchup
1 tablespoon Chinese chili paste
1 tablespoon grated fresh ginger
1 teaspoon kosher salt
5 ounces thick-cut smoked bacon, cubed

Steps:

  • Place the beans in a large bowl and cover with cold water by 1-inch and cover with plastic wrap. Refrigerate overnight. Drain and rinse the beans and then drain again.
  • Place the beans in large pot with 2 quarts water, the onion, bay leaf, and peppercorns. Bring to a boil, then lower the heat and simmer for about 50 minutes, or until tender. A good test is to scoop up several beans in a spoon and blow on them: if the skin starts to peel off, they're done. Drain the beans, reserving the cooking liquid.
  • Preheat the oven to 225 degrees F.
  • In a small saucepan, whisk together the maple syrup, brown sugar, ketchup, chili paste, ginger, salt, and 1 1/2 cups of the cooking liquid, still reserving the remaining liquid. Bring to a simmer and cook over medium heat for 6 minutes.
  • Transfer the beans to a medium Dutch oven or a bean pot. Push half the bacon into the beans and place the rest on the top. Pour the maple syrup sauce over the beans. Place the lid on top and bake for 6 to 8 hours. Check occasionally; if the beans are too dry, add 1/2 cup more of the cooking liquid. If you like, you can remove the lid for the last 30 minutes to thicken the sauce. Discard the bay leaf. Serve hot.

  • 1. In a large pan, cover the beans with water. Bring to a boil and simmer until tender, about 1 hour.
  • 2. Preheat oven to 300°F.
  • 3. In a bowl, combine everything else except the bacon. Stir in the beans.
  • 4. Place 1 bacon strip at the bottom of a large ovenproof dish or Dutch oven. Pour the bean mixture over it, then push the other strip in.
  • 5. Add just enough boiling water to the pot to cover everything.
  • 6. Cover the pot with aluminum foil, then a lid. Bake for 5 hours, checking hourly to make sure the beans aren't drying out. (Add more water as necessary to keep them submerged.) 7 Uncover for the last half hour to brown the top, if desired.

1 large Vidalia onion, finely chopped
3 cloves garlic, finely chopped
Pinch red pepper flakes
4 (15-ounce) cans white beans, drained and rinsed
1 (14.5-ounce) can diced tomatoes
2 tablespoons light brown sugar
2 teaspoons fresh thyme leaves
1 cup porter-style beer
1/2 cup real maple syrup
2 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
3 dashes hot sauce
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Add bacon to a large Dutch oven over medium heat and cook until fat is rendered and bacon has begun to crisp.
  • Add onions, garlic, and red pepper flakes and saute until tender, about 4 minutes. Stir in the beans, tomatoes, brown sugar, thyme leaves, beef, maple syrup, apple cider vinegar, Dijon mustard, hot sauce, salt, and pepper and bring to a simmer.
  • Remove from the stovetop and bake uncovered 45 minutes until the mixture begins to bubble and thicken. Check at 30 minutes and add 1/2 cup water or chicken broth if it looks like it getting too dry.

8 cups water
2 1/2 cups small dried white beans
6 slices bacon, cut into 2 inch strips
1 onion, chopped
1 teaspoon salt
1/2 teaspoon dry mustard
1/2 cup real maple syrup
1/2 cup dark rum
2 tablespoons dark brown sugar
2 tablespoons melted butter

Steps:

  • Wash and pick over beans. Put beans and water in saucepan, cover. Bring to a boil. Boil for 2 minutes.
  • Remove from heat and let stand 1 hour.
  • Return to heat, bring back to a boil, lower heat and simmer, covered, for 40 minutes.
  • Drain beans thougha colander set over a bowl. Reserve 2 1/2 cups of the cooking liquid and set aside.
  • Put bacon in ovenproof casserole or bean pot. Cover with cooked beans.
  • In a bowl, combine onion, salt, mustard, syrup, rum and 2 cups of reserved cooking liquid.
  • Pour mixture over beans.
  • Cover and bake in a 325 degree oven for 3 hours, adding the last 1/2 cup cooking liquid during the last 30 minutes of cooking.
  • Remove from oven.
  • Combine brown sugar and melted butter. Drizzle over beans.
  • Bake, uncovered, for another hour or until liquid has evaporated.

Baked beans made from scratch in the slow cooker. It takes a lot of time to cook, but not a lot of work. Use Yellow Eye beans if they are available in your area, and grade A amber maple syrup if you can.

1 ½ pounds dry great Northern beans
1 large onion, cut into wedges
4 ounces salt pork, diced
¾ cup real maple syrup
¼ cup molasses
¼ cup brown sugar
1 teaspoon ground ginger
1 teaspoon mustard powder
½ teaspoon salt
¼ teaspoon ground black pepper
2 cups boiling water

Steps:

  • Soak the dried beans in a large pot of water overnight, then drain. Refill the pot with water, and bring to a boil. Simmer until beans are tender, about 1 hour.
  • While the beans are cooking, mix together the maple syrup, molasses, brown sugar, ginger, mustard powder, salt, pepper and water. Set aside.
  • Place onion wedges into the bottom of a 3 quart or larger slow cooker. Place salt pork cubes over the onion. Drain the beans, and transfer to the slow cooker. Pour the maple syrup mixture over the beans. If there is not enough liquid to cover the beans, add a little more hot water.
  • Cover, and cook on the Low setting for 10 to 12 hours, or cook on High for 5 to 6 hours. If cooking the beans on High, you will want to check occasionally in case they need a little bit more water. If the beans are too juicy for your liking, leave the lid off for the last 30 minutes to steam off some of the liquid.

  • Quick-soak beans:
  • Cover beans with water by 2 inches in a 4-quart heavy pot and bring to a boil. Remove from heat and let stand, uncovered, 1 hour.
  • Preheat oven to 300°F.
  • Drain beans and put in a 3-quart wide shallow pot or flameproof baking dish along with remaining ingredients, stirring to combine. Bring to a boil on top of stove, then cover tightly and bake in middle of oven until beans are just tender, about 2 hours. Uncover and bake until most of liquid is absorbed and top is slightly crusty, 1 to 1 1/2 hours more.

I've tried several baked bean recipes and this is one of my favorites. I grew up standing in line on Sunday mornings waiting for a coveted seat for breakfast at Parker's Maple Barn in NH. I was delighted that this recipe was on Food Network's FoodNation With Bobby Flay.

2 lbs kidney beans or 2 lbs navy beans
8 pieces salt pork (1-inch cubes)
1 Spanish onion, sliced
2 1/2 cups very hot water (for Bean Goop)
1/2 cup light brown sugar (for Bean Goop)
1/4 cup dark brown sugar (for Bean Goop)
1/2 cup molasses (for Bean Goop)
1/2 cup ketchup (for Bean Goop)
1/4 cup cider vinegar (for Bean Goop)
1/4 cup pure maple syrup (for Bean Goop. Recommended Parker's Maple Barn Pure Maple Syrup)
1 1/2 teaspoons dry mustard (for Bean Goop)
1 1/2 teaspoons salt (for Bean Goop)
1 1/2 teaspoons fresh ground black pepper (for Bean Goop)

Steps:

  • Preheat oven to 250 degrees F.
  • Fill a stockpot with the beans and enough cold water to cover them. Bring the water to a boil and parboil the beans for approximately 20 minutes. Drain the water and reserve for later use.
  • Put together Bean Goop: In a large bowl or medium-size saucepan, mix the hot water with the sugars and molasses to dissolve the sugars. Then mix in all remaining ingredients. Set aside for use in the Baked Beans. Yield: about 1 quart.
  • Place 4 salt pork cubes and half of the onion on the bottom of the bean pot. Fill the pot 3/4 full with beans. Add the Bean Goop. Fill the rest of the pot with the reserved water. Place the remaining cubes of salt pork and onion on top of the beans.
  • Cover first with a layer of plastic wrap, then a layer of aluminum foil. Bake in the oven for 10 hours.
  • Check beans at that time, blowing on them to see if the skin peels back. If so, they are finished. Time will vary depending on your oven and how long the beans were parboiled in the beginning. Cooking time could increase to as long as 12 hours total.

Steps:

  • Combine pinto beans, navy beans, and baking soda in a large pot. Add water until level is 2 inches higher than beans. Heat over medium-high heat until boiling. Cook for 5 minutes then remove pot from heat. Set aside to soak for 8 hours.
  • Drain beans, reserving 1 1/2 cups soaking liquid. Place beans in a slow cooker.
  • Place salt pork in a large skillet over high heat; sear until browned, 3 to 5 minutes per side. Remove from the heat, cut into small chunks, and add to the slow cooker.
  • Add onion to the skillet with the leftover pork fat; cook over medium-high heat until translucent, about 5 minutes; transfer to the slow cooker.
  • Combine stout beer, hot water, maple syrup, brown sugar, molasses, balsamic vinegar, Worcestershire sauce, paprika, garlic salt, pepper, mustard powder, and liquid smoke in a bowl. Mix well and pour sauce over beans, pork, and onions in the slow cooker. Add the reserved bean soaking liquid.
  • Cook on Low until beans are tender, about 10 hours. Drain to desired consistency before serving.
