POVERTY MEAL
When I was a child, my family used to eat this at least once a week due to the fact that it is inexpensive and a little goes a long way. We also added fresh herbs or sometimes whole kernel corn. Its even better the next day and it freezes well.

Steps:
- Saute onions and garlic in olive oil until translucent.
- Brown ground beef and drain.
- Add ground beef, tomatoes, water, raw macaroni, salt and pepper to the onion and garlic mixture.
- Cook for 15 to 20 minutes or until macaroni is tender.
- If desired, top with Parmesan cheese.
- Serve with crusty bread and a salad.

Steps:
- Place gnocci (or any other cooked pasta) in a bowl with frozen veggies/beans. Pour in tomato paste and mixed herbs.
- Pour on water and mix well. Taste for desired consistancy.
- Microwave on med-high, until bubbly and heated through.
- Top with cottage cheese and pepper. I needed no salt.
- I also added 1 tbsp of my mum's home-made spicy tomato sauce. Its a very flexible recipe.

POOR IRISH SOUP
I invented this soup when all I had was a cabbage and potatoes. It's very basic and is flexible to your tastes.

Steps:
- Combine the stock, ham hock, and cabbage in a large stockpot; bring to a boil. Reduce heat to low; cover and cook until the potatoes are soft, about 30 minutes. Carefully separate the meat from the bone of the ham hock and dispose of the bone, adding the meat back to the soup. Stir in the cream; season with salt and pepper.
