SHRIMP AND ARTICHOKE QUICHE
Enjoy this cheesy quiche that's made with shrimp, Original Bisquick® mix and Progresso® artichoke hearts - a tasty French dinner.

Steps:
- Heat oven to 400°F. Lightly spray 9-inch glass pie plate with cooking spray. Sprinkle shrimp and onions in pie plate.
- In small bowl, mix cheeses; sprinkle 1 cup of the cheese mixture over shrimp and onions. In medium bowl, stir Bisquick mix, eggs, milk and Cajun seasoning with fork or whisk until blended. Pour evenly over cheeses. Top with artichoke heart halves, cut sides down, and remaining 1 cup cheese mixture.
- Bake 30 to 35 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before serving.

QUICK SHRIMP QUICHE
This recipe came from "The Can Opener Gourmet" by Laura Karr. I've made it with shrimp or crabmeat & both are delicious. There are a number of easy recipes in this book that my kids really enjoyed for dinner! You may have to cover the edges of the piecrust.

- Preheat oven to 425.
- In a medium mixing bowl, whisk together the eggs, milk, onion powder, Worcestershire sauce, lemon juice, and nutmeg. Gently stir in the shrimp and cheese. Pour into the frozen piecrust.
- Bake for 15 minutes at 425. Decrease oven to 325 and bake an additional 30 minutes, or until a knife inserted into the middle comes out clean. Let cool for 10-15 minutes before slicing.

Steps:
- Melt butter in a saucepan and add the onion and zucchini.
- Fry gently until light brown .
- Stir in the shrimp and cook for 3 minutes.
- Add salt and pepper to taste. and the nutmeg
- Leave to cool.
- Mix together the cream, eggs, and cheese.
- Stir in the shrimp mixture.
- Pour into the baked prepared pie shell.
- Bake in a hot oven 400f for 35-40 minutes.
- Serve hot.

- Preheat oven to 375 degrees F (190 degrees C).
- Pour egg whites, eggs, and cottage cheese into a blender; pulse several times to mix and blend until smooth, about 1 minute.
- Heat 1 tablespoon olive oil in a large skillet over medium heat; cook and stir asparagus and onion until asparagus is tender, about 8 minutes.
- Heat 2 teaspoons olive oil in the same skillet over medium heat. Season shrimp with salt and black pepper; cook in hot oil until they turn pink and are no longer translucent in the center, 5 to 8 minutes.
- Fit pie crust into a 9-inch deep-dish pie plate and spread shrimp into the crust; top with asparagus mixture. Pour cottage cheese mixture over vegetables and shrimp. Spread Monterey Jack cheese over the top of the quiche. Sprinkle green onions over cheese.
- Bake quiche in the preheated oven until cheese topping is lightly browned and the quiche is set in the center, about 1 hour.

- Partially bake crust for approximately 8 minutes on lowest rack in oven.
- Remove and turn temperature down to 350 degrees.
- Spread filling (over bottom of shell).

- Let stand for 5-10 minutes prior to serving.

- Coarsely chop the shrimp (except for 36 you have set aside for garnish).
- Beat together the eggs and cottage cheese.

- Take a bowl and mix the whole wheat flour with some salt, make a pastry dough on a lightly floured surface and use this to line 4 individual quiche dishes. Once done, prick the base with a clean fork and cover it with kitchen foil.
