- Toss 4 cups mini pretzel twists with 6 tablespoons melted butter, 1/2 teaspoon garlic powder and 1 grated garlic clove in a large bowl. Spread on a baking sheet and bake at 350˚ until lightly toasted but not dry, about 5 minutes. Transfer to a separate bowl and toss with 1/4 cup grated parmesan and 2 tablespoons finely chopped parsley.

Steps:
- Cut the chicken tenders into 1.5-inch (4 cm) pieces.
- Take a knife and carefully cut a hole into the chicken tenders. Make sure to not cut all the way to the other side.
- Stuff the holes with mozzarella cheese.
- Add garlic powder, dried basil, dried parsley, and salt to the panko bread crumbs.
- Batter the chicken in flour, egg, then panko bread crumb mixture.
- Add around 1-inch (2 cm) of oil to a pan and heat until around 350˚F (175˚C).
- Fry the chicken on both sides until fully cooked and golden brown.
- Serve with marinara sauce and garnish with more parmesan cheese.

- Preheat oven to 300 degrees.
- Add olive oil to skillet. Heat over medium-heat.
- Slice chicken breasts in half to make 4 thin fillets.
- Crush pretzels in a bag. NOTE: Pretzels must be finely crushed to avoid burning.
- Add parmesan cheese to crushed pretzels. Shake bag to mix.
- Whisk 2 eggs in a shallow bowl.
- Add Italian dressing and lemon juice to eggs.
- Coat chicken in egg mixture then put in bag and shake to coat.
- Add chicken to skillet and cook 3 minutes each side or until coating is browned.
- Place chicken in a foil lined baking dish and place in oven for 20-30 minutes.

- Preheat oven to 400°F (204°C). Line a large baking sheet with a silicone baking mat or coat heavily with nonstick spray.
- If using chicken breasts, pound down and cut into little 1-1.5 inch pieces. If using boneless, skinless chicken tenders (chicken tenders are the lean strips of meat found attached to the underside of chicken breasts – they can also be purchased separately.) – simply cut into 1-1.5 inch pieces.
- Combine flour, salt, and pepper in a shallow dish. Beat eggs in another shallow dish. Pour pretzels into a third shallow dish. Coat each chicken piece in flour, shaking off any excess. Then, dip in egg and let any excess drip off. Then generously roll in the pretzels, shaking off any excess. Add more crushed pretzels to the dish if you are running low. Place the chicken bites on the prepared baking sheet. Lightly spray each with nonstick spray to “seal” the breading, which will prevent the breading from staying raw and allows it to bake onto the chicken fingers.
- Bake for 8 minutes. Turn each piece over and continue baking until the outside is crisp and the centers are cooked through, about 6-8 minutes more. Baking times may vary, just make sure yours are cooked through. If you like them more brown, bake longer. Serve chicken bites with toothpicks (if using as an appetizer), honey mustard, or this kicked-up cheese sauce. Store any leftovers in the refrigerator for up to 2 days. I chopped them up and put on top of a salad. It was so good!
