ITALIAN PORCHETTA SANDWICH

6 cloves garlic
2 tablespoons fennel seeds, toasted
1 teaspoon red pepper flakes
2 tablespoons fresh oregano leaves
2 tablespoons chopped fresh rosemary
2 tablespoons fresh thyme leaves
Kosher salt
One 6-pound boneless pork belly, skin-on
Kosher salt
2 large yellow onions, sliced 1/4-inch thick
Freshly ground black pepper
1 cup mayonnaise
1 tablespoon chopped capers
1 tablespoon chopped fresh Italian parsley
1 lemon, zest and juice of
Kosher salt and freshly ground black pepper
6 to 8 ciabatta rolls, split and toasted
2 cups baby arugula

Steps:

  • Preheat the oven to 275 degrees F.
  • For the herb rub: Add the garlic, fennel seeds and red pepper flakes to a food processor and pulse until finely chopped. Add the oregano, rosemary and thyme and pulse into a rustic paste. Season with salt. Reserve 2 tablespoons of the rub for the mayonnaise spread.
  • For the pork: Lay the pork belly on a cutting board, skin-side-up, and score the skin at 1-inch intervals, 1/2-inch deep with a sharp knife. Rotate the pork 90 degrees and score the skin again, to create a diamond pattern. Sprinkle generously with salt; be sure to get into all the crevices. Flip the pork over, sprinkle generously with salt, then rub the meat side with the herb rub. Roll the pork belly up as tightly as possible and tie it crosswise with butcher's twine at 2-inch intervals.
  • Place the pork in a roasting pan fitted with a rack. Pour 1/2 cup water into the bottom of the pan. Roast the pork to an internal temperature of 150 degrees F, 2 1/2 to 3 hours. Check periodically to ensure there is still some liquid in the bottom of the pan and add a little water to prevent scorching. Baste the pork belly with pan drippings a couple of times during cooking.
  • Once the pork reaches 150 degrees F, raise the oven to 475 degrees F and continue roasting until the skin is super crispy, 30 to 40 minutes. For even browning, flip the pork halfway through the second roasting period.
  • Transfer the porchetta to a cutting board and let rest for 20 to 30 minutes.
  • Remove the rack from the roasting pan and pour off all but 3 tablespoons of the pan drippings. Set the roasting pan on the stovetop over medium heat. Add the onions and saute until lightly caramelized, about 15 minutes. Season with salt and pepper.
  • For the mayonnaise spread: Mix together the mayonnaise, capers, parsley, lemon zest and juice and the reserved herb rub. Season with salt and pepper.
  • Cut the porchetta into 1/4-inch-thick slices.
  • To assemble the sandwich: Slather both halves of a ciabatta roll with mayonnaise spread. Layer the bottom half with slices of porchetta and top with caramelized onions and arugula.

Steps:

  • Make the salsa verde: In a medium bowl, mix together shallot, parsley, chives, vinegar, oregano, and salt; whisk in olive oil until emulsified. Stir in mustard and lemon juice; set aside.
  • Make the sandwich: Cover split sides of rolls with salsa verde. Place 3 porchetta slices and some of the crackling on one half of each of the rolls; top with arugula and sandwich together with remaining roll half; serve.

PORCHETTA - ITALIAN MARKETPLACE SLOW ROAST PULLED PORK SANDWICH



Porchetta - Italian Marketplace Slow Roast Pulled Pork Sandwich image

This is JUST gorgeous! A domestic take on the classic Italian marketplace or street food, Porchetta, which is actually roast suckling pig. Porchetta is thickly sliced and served in ciabatta bread as a delectable hot sandwich throughout Italy. My recipe is a much-adapted recipe taken from one of Nigella Lawson's cookbooks, and it is SO easy to make at home. I cook mine in the crock-pot for meltingly soft and tender pulled pork - however, I have also given traditional roasting directions in this recipe. Preparation time includes the 24 hour period required for the pork to marinade in its herbed and spiced rub.

2 kg pork shoulder, boned, trimmed of fat and butterflied
3 tablespoons olive oil
1 large onion, peeled and finely diced
6 garlic cloves, peeled and finely minced
2 tablespoons fennel seeds
2 -3 tablespoons fresh rosemary leaves, finely chopped
4 fresh bay leaves, finely chopped
1 teaspoon ground cloves
1 teaspoon salt
2 teaspoons fresh ground black pepper
10 ciabatta rolls

Steps:

  • Lay the pork on a large chopping board and cover with cling film. With a rolling pin, mallet, or other suitable blunt object, pound the meat as close to an even 1" thickness that you can manage.
  • Heat 2 tablespoons of the olive oil in a frying pan over a medium high. Add all of the chopped onion, half the minced garlic, half the fennel seeds, all of the rosemary and bay, half of the ground cloves, salt and pepper, and cook for 2 to 3 minutes, or until all the fragrance has been released from the herbs and spices. Transfer to a plate to cool.
  • Spread and rub this mixture over and into the pork, then roll the meat up as tightly and neatly as you can. Tie with kitchen string at intervals.
  • Mix the remaining ingredients (minced garlic, fennel seeds, ground cloves, olive oil) and rub it over the outside of the pork. Cover it with cling film and refrigerate 24 hours, or at least overnight.
  • Remove the meat 40 minutes before cooking to allow it to return to room temperature. Meanwhile, preheat the oven to 150C/300F Take the cling film off the pork and place the pork joint in to a roasting tin.
  • Cook the pork for 4 hours to 5 hours, until it is falling apart when you test it with a knife or fork. If the spices on the surface start to char too badly (a little blackness is a good thing), tent foil loosely over the roast. (I find I need to cover it for the last hour of cooking.).
  • CROCK POT - at this stage, cook the pork in a crock pot for 4 to 5 hours on high, or on automatic for up to 8 hours.
  • Remove from the oven and leave to rest at least 30 minutes to one hour. Slice, pull or shred the meat and serve in warmed ciabatta rolls.

3 tablespoons extra-virgin olive oil, plus more for drizzling and brushing
3 tablespoons roughly chopped fresh sage
2 tablespoons roughly chopped fresh rosemary, plus sprigs for brushing
1 tablespoon fennel seeds, lightly crushed
5 cloves garlic, peeled, plus 1 head, sliced in half
Kosher salt and freshly ground black pepper
One 6 1/2-pound bone-in pork butt
1 new potato, sliced in half
2 red bell peppers, seeded and cut into eighths
1 yellow bell pepper, seeded and cut into eighths
Baby arugula, for serving
1 loaf ciabatta, sliced in half lengthwise, then sliced into 5-inch pieces
Cabernet Sauvignon

Steps:

  • Preheat the oven to 325 degrees F.
  • Add the olive oil, sage, rosemary, fennel seeds, garlic cloves, 1 teaspoon salt and 2 teaspoons pepper to a mortar and pestle. Mash until a paste forms.
  • Use a sharp knife to butterfly the pork. Follow the seams to open it up. Rub the meat with the paste into the inside cut. Drizzle the top with olive oil and sprinkle with salt and pepper. Roll and tie the pork, using kitchen twine, to make a compact shape. Add the head of garlic and the potatoes, cut-side down, to the roasting pan. Drizzle lightly with olive oil, and then place the pork on top, fat-side up.
  • Place in the oven and roast until the skin is brown and the meat is extremely tender, about 5 hours. While it roasts, use a rosemary sprig to occasionally brush the meat with some additional olive oil while it cooks, every 40 minutes or so.
  • Remove from the oven and let rest for 20 minutes before slicing. Remove the kitchen twine before slicing into 1/2-inch pieces. Remove the garlic from the pan to cool.
  • Heat a grill to medium-high heat.
  • Drizzle the peppers with a bit of olive oil, salt and pepper. Grill until tender, flipping half way through, about 4 minutes per side.
  • Use the juice from the bottom of the roasting pan to brush the bread. Grill the bread until golden brown. Top the bread with sliced pork, grilled peppers, arugula and roasted garlic if desired. Slice into desired servings.

This Pulled Porchetta Sandwich has all the same flavours as a classic Italian porchetta, but it is presented as a melt-in-your-mouth sandwich! The pork is soft and the salsa verde adds incredible bright flavour!

1.5 kg pork shoulder
1 teaspoon salt
1 teaspoon ground black pepper
1 tablespoon olive oil
1 medium yellow onion (quartered)
6 garlic cloves (peeled and smashed)
10 sage leaves (fresh)
5 sprigs oregano (fresh)
2 sprigs rosemary (fresh)
1 tablespoon dried fennel seeds
1 tablespoon dried chili flakes (optional)
1 liter water (or enough to cover the pork by ¾)
6 Portofino Bakery Peasant Buns
2 cloves garlic
1 teaspoon salt
1 teaspoon ground black pepper
4 tablespoons fresh lemon juice
4 cups fresh Italian parsley (stems removed, roughly chopped)
2 cups fresh basil leaves
½ cup olive oil
1 teaspoon dried oregano
2 teaspoons dried chili flakes (optional)

Steps:

  • Preheat the oven to 300 degrees F.
  • Heat a large Dutch oven (or oven-safe pot) on the stove over medium-high heat. Season the pork shoulder on all sides with the salt and pepper. Once hot, add the olive oil to the pot, followed by the pork. Sear the pork on all sides until golden brown.
  • Once the pork has been seared on all sides, add the onion and garlic to the pot, placing it all around the pork shoulder. Let the onions and garlic cook for 2-3 minutes until they begin to soften and become fragrant.
  • Next, add the sage, oregano, rosemary, fennel seeds and chili flakes to the pot, followed by the water. Make sure there is enough water to come ¾ of the way up the pork shoulder and that the pork isn't fully submerged in water.
  • Cover the pot with a lid and place in the center of the oven. Cook the pork shoulder for 3 hours, flipping the pork shoulder in the cooking juices every hour.
  • After 3 hours, transfer the pork to a large bowl and use 2 forks to shred the meat. Add ½ cup of the cooking juice from the pot to the shredded pork and toss everything to combine.
  • Serve the pork on toasted Portofino Bakery Peasant Buns and top with 1-2 tablespoons of Salsa Verde. Enjoy!

PULLED PORCHETTA BARBECUE SANDWICHES



Pulled Porchetta Barbecue Sandwiches image

Start with about half of the leftover porchetta, shredded into matchstick-size pieces.

1 pound leftover roasted porchetta, shredded
1/3 cup water
2 cups homemade or store-bought barbecue sauce (see Lisa's Kansas City Barbecue Sauce on Recipe Finder)
Salt
Freshly ground black pepper
White or cider vinegar (optional)
4 large soft sandwich rolls, preferably warmed

Steps:

  • 1 Shred enough of the leftover porchetta to make 4 cups (1 pound)
  • 2 Wrap the remaining meat well and freeze for another use
  • 3 Heat the water in a large, wide saucepan over low heat
  • 4 Add the meat and cook gently, stirring occasionally, for several minutes, until warmed through
  • 5 As the meat heats up, use a couple of forks to shred any larger pieces
  • 6 Add the barbecue sauce and mix well, stirring occasionally
  • 7 Continue cooking for a few minutes to warm through
  • 8 Adjust the seasoning with salt, pepper and a few drops of vinegar, if desired
  • 9 Divide among 4 sandwich rolls
  • 10 Serve warm

We're going to simplify traditional porchetta by making a smaller, simpler version using pork shoulder. It makes a great sandwich, especially topped with some fried, crispy pancetta.

1 (2 1/2 pound) boneless pork shoulder blade roast
olive oil
1 tablespoon kosher salt, divided
1 tablespoon freshly ground black pepper
2 tablespoons chopped fresh sage leaves
2 tablespoons chopped fresh rosemary
1 orange, zested
6 cloves garlic, minced
2 teaspoons fennel seeds, lightly crushed
olive oil
½ anchovy fillet
1 teaspoon red pepper flakes, or to taste
¼ cup white wine vinegar
¼ cup chopped Italian parsley

Steps:

  • Place pork roast on a work surface. Use a sharp knife to make a lengthwise cut about 1 inch from the edge of the meat, slicing down but not cutting through. Open the meat flat along the cut. Keeping the knife parallel to the cutting board, continue to slice the roast open so you can unroll it into a large, flat piece. (You can also ask your butcher to butterfly the roast for you.) When the meat is unrolled, make small slashes through any connective tissue or extra-thick parts so the roast is as even in thickness as possible.
  • Drizzle cut surface with 2 teaspoons olive oil. Rub oil into meat and generously season with 2 teaspoons kosher salt, black pepper, sage, rosemary, orange zest, garlic, and crushed fennel seeds. Press seasonings in firmly with your hand, roll up the pork roast, and tie the roast in several places with kitchen twine.
  • Place the pork roast on a rack, set the rack on a plate, and sprinkle meat with remaining 1 teaspoon salt. Refrigerate the roast uncovered overnight to dry-age.
  • Preheat oven to 450 degrees F (230 degrees C). Lightly oil a baking dish and place roast into dish. Rub meat with 2 teaspoons olive oil.
  • Bake in the preheated oven until outside is seared, 15 minutes. Reduce oven heat to 250 degrees F (120 degrees C) and continue to roast until an instant-read meat thermometer inserted into the center of the roast reads 145 degrees F (65 degrees C), about 1 hour more. Loosely cover roast with foil and let rest for 10 minutes. Slice thinly to serve.
  • Mash anchovy fillet in a small bowl and add red pepper flakes, white wine vinegar, and Italian parsley. Stir to combine. Serve drizzled on pork.

1 (4.5 lb.) pork shoulder, fat slightly trimmed, boned, and butterflied (ask your butcher)
4 tbsp. extra virgin olive oil, divided
1 lg. yellow onion, minced
2-3 tbsp. minced fresh rosemary
4 bay leaves, finely crumbled (or 2 tsp. powdered bay leaf)
2 tsp. freshly ground black pepper
1-2 tsp. coarse salt (the more the better if you have no health issues)
1 tsp. ground cloves, divided
1 head of garlic, cloves peeled and minced or pressed, divided
2 tbsp. whole fennel seeds, divided
Sliced pickled hot peppers
Fried or caramelized onions
Sliced fontina cheese
Sliced gruyere cheese
Arugula
Giardiniera (pickled vegetable salad)
Chopped cornichon

Steps:

  • 1. In a large skillet over medium heat, cook the onion, rosemary, bay leaf, salt, pepper, half of the garlic, half the cloves, and half of the fennel in two tbsp. of the olive oil until fragrant, about 3 minutes. Let cool. 2. While mixture cools, pound your piece of pork into a large, even, 1-inch-thick piece with a meat mallet. The more square the piece, the easier it will be to work with. Place meat on a large piece of plastic wrap. 3. Rub onion mixture into the surface of your pork, working it into the meat a bit. 4. Roll the meat into a tight spiral, tying it closed with kitchen string. If you roll it too loosely, the meat will dry out so do this carefully. 5. In a small bowl, combine the remaining olive oil, cloves, garlic, and fennel with a fork. 6. Rub oil mixture into the outside of the pork, working it gently into the meat. Cover tightly with plastic wrap and place in the fridge about 24 hours. 7. When you're ready to cook, take the pork out of the fridge to allow the meat to come to room temperature. 8. Preheat the oven to 300 degrees F. 9. Unwrap and place your rolled, tied pork into a roasting pan. 10. Cook pork until it's fall-apart tender. This should take 4-5 hours. During the last hour or so of cooking, cover the meat lightly with a tented piece of foil. 11. Remove meat from the oven and let it rest about an hour. 12. Serve on crusty Italian rolls and allow guests to choose their own toppings.

3 tablespoons olive oil
3 garlic cloves, minced

Steps:

  • Rub the roast all over with the olive oil, then rub with the seasonings. Place roast in bottom of crock pot, and top with the bay leaves and chopped onion.
  • Cover and cook on HIGH for 1 hour, then reduce heat to LOW and cook 10-12 hours more until meat is falling apart, yet tender, and done.
  • Remove to a large cutting board and let cool slightly, then use two forks to pull apart the meat into chunks, discarding the bay leaves.
  • Stuff into warmed and buttered Italian ciabatta rolls, and dig in!

2 cups lime juice
10 lb bone-in pork butt

⅓ loaf cuban bread, halved lengthwise
1 tablespoon mustard
2 slices swiss cheese
1 tablespoon garlic oil
4 slices ham
1 cup pulled pork
2 slices cucumber pickle
8 oz pulled pork

Steps:

  • Make the pulled pork: In a medium bowl, mix together the pepper, cumin, oregano, garlic, and lime juice. Set aside.
  • Make a few incisions, 1-2 inches (2-5 cm) deep, on both sides of the pork butt, cutting against the grain. Sprinkle generously with salt all over, make sure to season inside the incisions.
  • Transfer the pork butt to a roasting dish, and pour the marinade all over. Make sure the pork is well coated, including inside the incisions. Cover and marinate for 8-10 hours, or overnight.
  • Preheat the oven to 250˚F (120˚C).
  • Roast the pork, covered, for 8-10 hours, or until the pork is tender and easily falls apart when prodded with a fork or tongs.
  • Let cool enough to handle, then remove any bones, and shred the pork with tongs. Keep in the fridge up to 5 days.
  • Make the Cuban sandwich: Preheat the oven to 350˚F (180˚C). Line a baking sheet with parchment paper.
  • Set the bread open face on the prepared baking sheet and spread the mustard over one side. Top with the Swiss cheese. Brush the garlic oil on the other side of the bread. Top with the ham. Arrange the pulled pork over the cheese.
  • Toast in the oven for 2 minutes, or until the cheese melts. Add the pickles and press the sandwich.
  • Enjoy!

3 cloves garlic, sliced
1 tablespoon finely sliced sage leaves

1 tablespoon olive oil

Steps:

  • Crush fennel seeds in mortar with a pestle for 1 minute. Add garlic, sage, pepper, rosemary, salt, red pepper flakes, and lemon zest; pound into a thick paste, 2 or 3 minutes. Add olive oil and pound until rub is evenly incorporated.
  • Cut a slit 3/4 of the way through the center of the tenderloin, leaving 1 inch on each end uncut. Spread 1 tablespoon of the rub inside the slit; close up roast. Spread the remaining rub evenly over the roast. Wrap bacon strips around the roast, trying to keep seams on the bottom.
