A twist on a classic brownie recipe--perfect for fall! Rich chocolate flavors are nicely complemented by pumpkin and spices.

¾ cup all-purpose flour
½ teaspoon baking powder
½ teaspoon salt
¾ cup butter, melted
1 ½ cups white sugar
2 teaspoons vanilla extract
3 eggs
¼ cup cocoa powder
½ cup semi-sweet chocolate chips
½ cup pumpkin puree
½ cup chopped walnuts
¾ teaspoon ground cinnamon
½ teaspoon ground cloves
½ teaspoon ground nutmeg

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch baking pan. Stir the flour, baking powder, and salt together in a bowl.
  • In another bowl, stir together the melted butter, sugar, and vanilla extract; beat in the eggs one at a time with a spoon. Gradually add the flour mixture, and stir the batter until it's evenly moistened. Divide the batter in half in two separate bowls.
  • Into one bowl of batter, blend the cocoa powder and chocolate chips. In the second bowl of batter, stir in the pumpkin puree, walnuts, cinnamon, cloves, and nutmeg.
  • Spread 1/2 of the chocolate batter into the bottom of the prepared baking pan, and follow with 1/2 of the pumpkin batter. Repeat the layers, ending with a pumpkin layer, and drag a kitchen knife or small spatula gently through the layers in a swirling motion, to create a marbled appearance.
  • Bake in the preheated oven until the brownies begin to pull away from the sides of the pan, and a toothpick inserted into the center comes out clean, 40 to 45 minutes. Cool in the pan, cut into squares, and serve.

Different than the first version I have posted in 2009. Closer to the Nestle original recipe. I used a teaspoon of that amazing black cocoa powder from Shady Maple, but regular cocoa powder is just as yummy. It's 1/2 cup plus 2 tablespoons of pumpkin, or 10 tablespoons if you only want to get one utensil dirty.

10 tablespoons pumpkin puree (real pumpkin, NOT pumpkin pie mix)
2 eggs
1/3 cup sugar
1 cup flour
1 teaspoon baking powder
1 teaspoon cocoa powder
1/2 teaspoon pumpkin pie spice
1/4 teaspoon salt
1/3 cup chocolate chips (Ghiradelli milk chocolate big chips...yum)

Steps:

  • Whisk the pumpkin, eggs, and sugar in a bowl together.
  • Whisk in the flour, baking powder, cocoa, salt, and spice until the batter is smooth and there are no more lumps.
  • Beat in the chocolate chips.
  • Grease a 8x8 pan with cooking spray or oil. Pour the batter in and smooth it out on top, then bake at 350F for 25 minutes. Makes 12 smallish brownies but I totes ate the whole pan for dinner. Hehe. Since they're mostly pumpkin, I didn't feel guilty. :).

Anytime I have a chocolate craving, my mind goes to brownies. Thick, rich, gooey brownies. Sadly, my brownie cravings could never be fully indulged by the lower calorie recipes I was using. So, I created my own! This egg-free, dairy-free, 100% vegan recipe contains applesauce and pumpkin puree instead of oil and eggs. It tastes just as decadent as the regular version!

4 (1 ounce) squares unsweetened baking chocolate (such as Baker's®)
¼ cup vegan margarine (such as Earth Balance®)
1 cup white sugar
¾ cup pumpkin puree
½ cup unsweetened applesauce
2 packets stevia sugar substitute
1 teaspoon vanilla extract
1 cup spelt flour
1 ½ teaspoons baking soda
1 teaspoon baking powder
½ teaspoon salt
1 cup chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8-inch baking dish.
  • Microwave chocolate and butter together in a large microwave-safe bowl in 10 second increments until chocolate is melted, about 2 minutes. Stir sugar, pumpkin, applesauce, stevia, and vanilla into chocolate mixture. Add flour, baking soda, baking powder, and salt to chocolate mixture; stir in chocolate chips. Pour batter into prepared baking dish.
  • Bake in preheated oven until a toothpick inserted in center of dish comes out clean, about 40 minutes. Cool on a rack for 20 minutes.

  • Make a well in the centre of the dry ingredients and crack in the eggs. Scoop in the pumpkin puree and beat with a hand whisk for 1 minute, until the ingredients form a thin batter.
  • Pour the batter into the lined baking tray and bake in the preheated oven for 12-15 minutes, until the edges and the tops of the brownie are just set. Pull the brownies out of the tray using the parchment paper and leave to cool on a wire rack for at least 30 minutes.
  • When cool, slice the brownies into 9 squares and enjoy! Or wrap with plastic wrap and store in the fridge for up to 5 days or in the freezer for up to 6 months.
