NO-BAKE PUMPKIN CHEESECAKE



No-Bake Pumpkin Cheesecake image

Nonstick cooking spray
1 cup crushed gingersnap cookies
1/4 cup melted unsalted butter
1/4 teaspoon kosher salt
Two 8-ounce packages cream cheese
One 15-ounce can pure pumpkin puree
1 cup powdered sugar
2 teaspoons ground cinnamon
1 teaspoon ground cardamom
1/2 teaspoon ground nutmeg
1/4 teaspoon kosher salt
1/8 teaspoon ground cloves
One 9-ounce tub coconut whipped topping (regular can be substituted)
1/4 cup unsweetened coconut flakes
Spray a 9-inch springform pan with cooking spray.

Steps:

  • For the crust: In a medium bowl, combine the gingersnap cookies, butter and salt. Use a measuring cup to gently press the cookie crumb mixture into the bottom of the prepared pan. Freeze for 30 minutes.
  • For the filling: Using an electric mixer, whip the cream cheese, pumpkin, powdered sugar, cinnamon, cardamom, nutmeg, salt and cloves in a large bowl until creamy and smooth, about 5 minutes. Carefully fold in the coconut whipped topping with a rubber spatula. Pour into the crust and refrigerate at least 6 hours and up to overnight.
  • In a small skillet over medium-high heat, quickly toast the coconut flakes, stirring constantly so they don't burn. Allow to cool completely and then scatter over the cheesecake.

Steps:

  • In a small bowl, combine the graham cracker crumbs and sugar; stir in butter. Press into the bottom of a 9-in. springform pan; chill. , For filling, in a large bowl, beat cream cheese and sugar until smooth. Add eggs, beat on low speed just until combined. Stir in the pumpkin, spices and salt. , Pour into crust. Place pan on a baking sheet. Bake at 350° for 50 minutes. , Meanwhile, for topping, combine the sour cream, sugar and vanilla until smooth. Spread over filling; return to the oven for 5 minutes. Cool on rack for 10 minutes. Carefully run a knife around the edge of pan to loosen; cool 1 hour longer. , Refrigerate overnight. Steps:

  • Crust: Preheat oven to 325°F
  • Lightly grease bottom of a 10in springform pan.
  • In a bowl, stir crumbs with 1 cup coconut, sugar and butter until evenly moist.
  • Press over bottom and partway up sides of pan.
  • Bake in oven until edges are golden, about 10 mins, cool.
  • Filling: Meanwhile, whisk eggs in a large bowl.
  • Whisk in pumpkin, brown sugar and seasonings.
  • Cut cheese into cubes and place in a large bowl.
  • Using an electric mixer, beat in sugar, then cream, scraping side of bowl as needed until well mixed.
  • Pour over warm crust.
  • Bake in oven until filling is almost set, 55-60 minutes.
  • Run a knife around edges to loosen crust and prevent cracking.
  • Cool to room temp, then chill in fridge at least 4 hrs or overnight.
  • Remove from pan and sprinkle with remaining 1/2 cup of toasted coconut.

This is the most fantastic Cheesecake I have ever tasted. The recipe is from M.S. Milliken and S. Feniger (with very minor changes). I have no idea who they are but I sure do thank them for this great recipe. People just go silent when eating this.

1 1/2 cups graham cracker crumbs
3 cups sweetened coconut, shredded and toasted (see bag for instructions)
1/3 cup unsalted butter, melted
1 tablespoon fresh lemon juice
2 lbs cream cheese, room temperature
3/4 cup granulated sugar
4 large eggs
1 (15 ounce) can Coco Lopez (sweet cream of coconut)
1 cup whipping cream
1 teaspoon vanilla extract
1 lemon, juiced and zested

Steps:

  • Preheat the oven to 325 degrees F.
  • Wrap the outside bottom and sides of a 9 inch wide spring form pan with heavy duty foil, twice.
  • Bring 4 cups of water to a boil.
  • Get out your roasting pan.
  • Mix the graham cracker crumbs, 1 1/2 cups of the toasted coconut, 1 tbs of lemon juice and the melted butter in a small bowl.
  • Place the above mixture into the spring form pan and press onto the bottom and up the sides with the bottom of a measuring cup. You want to go up the sides about an inch. Place in the fridge while making the filling.
  • Beat the cream cheese and sugar in a large bowl until well blended.
  • Add the eggs, one at a time, beating well after each addition.
  • Add the Coco Lopez, whipping cream, 1 cup of toasted coconut, vanilla extract, lemon juice and zest and beat until well blended. Remix with a wooden spoon from the bottom up because the cream cheese seems to sink a bit.
  • Remove the spring form pan/crust from the fridge and pour the filling onto the crust.
  • Place the roasting pan in the oven, add the boiling water and then the spring form pan/cheese cake mix.
  • Bake until puffed, about 1 hour and 25 minutes.
  • Remove from the oven and cool completely.
  • Cover and refrigerate overnight.
  • To serve, cut around the side of the pan to loosen and spring it free!
  • Sprinkle the remaining coconut over the top and press around the sides.
  • Enjoy!

  • Place a greased 9-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Securely wrap foil around pan. In a small bowl, combine cracker crumbs and sugar; stir in butter. Press onto the bottom and 1 in. up the sides of prepared pan., In a large bowl, beat cream cheese and sugars until smooth. Beat in the pumpkin, cream, cinnamon and cloves until blended. Add eggs; beat on low speed just until combined. Pour over crust. Place springform pan in a large baking pan; add 1 in. of hot water to larger pan., Bake at 325° for 1 hour. For topping, in a small bowl, combine butter and brown sugar. Stir in walnuts. Carefully sprinkle over hot cheesecake. , Bake 45 minutes longer or until center is just set. Remove springform pan from water bath. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight. Remove sides of pan.

Steps:

  • Preheat oven to 350°F with a rack in center. Bring a small pot of water (about 8 cups) to a boil. Assemble a 9-by-3-inch springform pan with raised side of bottom part facing up.
  • For the Crust: In a food processor, grind wafers until fine (you should have 1 1/3 cups). Add butter, sugar, and salt; pulse until evenly moistened.   • For the Caramel: Release sides of pan and remove cake. Cook sugar and 2 tablespoons water in a small saucepan over medium-high heat, stirring until sugar has dissolved. Stop stirring and cook, swirling pan occasionally and brushing down sides of pan with a wet pastry brush, until amber, 3 to 5 minutes. Remove from heat and stir in cream and salt (it will bubble up). Return to heat and simmer 1 minute, stirring to dissolve any hardened caramel. Stir in chocolate. Let cool 20 minutes, then pour over cake.
  • Return cake to refrigerator until set, at least 30 minutes and up to overnight. For the cleanest slices when serving, use a knife dipped in hot water and wiped dry after each.
