1 can (15 ounces) solid-pack pumpkin
2 eggs
1 cup half-and-half cream
2/3 cup packed brown sugar
1-1/2 teaspoons pumpkin pie spice
1/2 teaspoon salt
TOPPING:
1/4 cup packed brown sugar
1/4 cup chopped pecans
1 tablespoon butter, melted
Whipped cream and ground cinnamon, optional

Steps:

  • In a large bowl, combine the first six ingredients; beat until smooth. Pour into four greased 10-oz. custard cups. , Place in a 13x9-in. baking pan; pour hot water around cups to a depth of 1 in. Bake, uncovered, at 350° for 20 minutes. , For topping, combine the brown sugar, pecans and butter. Sprinkle over custard. Bake 30-35 minutes longer or until a knife inserted in the center comes out clean. Serve warm or chilled; top with whipped cream and cinnamon if desired. Store in the refrigerator.

This is not a particularly sweet dessert, but it is creamy. The recipe calls for cream, but I use half-and-half. Much of the creaminess comes from the pumpkin puree. This is great with coffee, but better with a nice port. Serve with a dollop of whipped cream.

2 eggs
2 egg yolks
1 tablespoon all-purpose flour
1 (15 ounce) can pumpkin puree
1 cup half-and-half
1 cup milk
½ cup white sugar
1 teaspoon salt
1 teaspoon vanilla extract
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground ginger

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter 6 custard cups or ramekins.
  • Mix eggs, egg yolks, and flour together in a bowl until smooth. Whisk pumpkin puree, half-and-half, milk, sugar, salt, vanilla extract, cinnamon, nutmeg, and ginger into egg mixture until smooth; spoon into prepared custard cups.
  • Arrange custard cups onto a large baking pan. Pour enough water around the custard cups to fill pan halfway.
  • Bake in the preheated oven until custards are set in the middle, about 40 minutes. Serve at room temperature or chilled.

1 cup all-purpose flour
½ cup rolled oats
½ cup packed brown sugar
½ cup butter
2 cups pumpkin puree
1 (12 fluid ounce) can evaporated milk
2 egg whites
¾ cup white sugar
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground ginger
½ teaspoon ground cloves
½ cup chopped walnuts
½ cup packed brown sugar
2 tablespoons butter
1 cup whipped cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray or grease one 9x13 inch pan.
  • Mix together the flour, oatmeal, brown sugar and butter or margarine. Press into pan; bake for 20 minutes or until golden brown.
  • In a large deep metal bowl, beat egg whites until soft peaks form.
  • Blend together the pumpkin, evaporated milk, egg whites, sugar, salt, cinnamon, ginger and clove. Pour custard into baked crust; bake for 30 minutes or until firm.
  • Mix together the chopped nuts, brown sugar and butter. Sprinkle topping on custard and bake additional 15 minutes. Remove from oven and allow to cool. Cut into squares and top with whipped cream if desired.

1 tablespoon granulated sugar
FILLING
2 tablespoons cornstarch
2 tablespoons granulated sugar
1 can (12 oz) evaporated milk, or 3/4 cup milk
1 egg
1 can (15 oz) solid-pack pumpkin (not pie mix)
2/3 cup packed dark brown sugar
1 teaspoon pumpkin pie spice
1/4 teaspoon salt
Whipped cream (optional)

Steps:

  • Heat oven to 350 degrees. Line a 9x9x2-inch pan with nonstick foil, extending foil beyond edges of pan. CRUST - In a bowl, stir crushed cookies, melted butter and sugar, until combined. Press into bottom of prepared pan. Refrigerate while making filling. FILLING - In a saucepan, whisk cornstarch and sugar. Stir in milk and egg. Cook, stirring constantly, over medium heat until smooth, steaming and slightly thickened, about 4 minutes. In a large bowl, blend pumpkin, brown sugar, pumpkin pie spice and salt. Whisk in milk mixture. Pour over crust; transfer to oven. Bake at 350 degrees for 50 minutes or until center is set. Cool completely on a wire rack; refrigerate until serving. I tried this a few years ago just for fun, but what I discovered was that this recipe is very much worth it, and not just for the novelty aspect. It tastes great, and leftovers are delicious, too.

1 (6 inch) pumpkin
1/4 cup brown sugar
1/4 cup prepared mustard
4 cups ground beef
1/4 cup minced onion
1/4 cup minced green pepper
1 egg
1/2 cup breadcrumbs
salt and pepper

Steps:

  • Cut a "lid" out of the top of the pumpkin. Remove gunk and seeds inside. (Roast seed for snacking.
  • Place pumpkin in an oven-proof dish with about an inch of water around it and bake for about an hour.
  • In the meantime, combine the ground beef, onion, green pepper, egg, bread crumbs, and salt and pepper, and mix thoroughly with your hands. (OR better yet, use your own basic meatloaf recipe.).
  • In a small bowl, combine brown sugar and prepared mustard. Add a small amount of water, if necessary, but keep it of paste consistency.
  • Once the pumpkin has baked for about an hour, remove it from the oven. Let it cool somewhat, then spread the brown sugar and mustard mixture over all the inside surface of the pumpkin.
  • Fill the pumpkin with the meatloaf mixture. Bake for another hour or until the meatloaf is done. Remove from oven, let set about 20 minutes, then slice into wedges and serve.

To capture goblins attention before they go on their appointed rounds, serve Great Pumpkin Meatloaf. This fascinating jack-o'-lantern with a meatloaf inside will intrigue goblins, both young and old. Cut the jack-o'-lanterns in wedges and serve as a meat and vegetable in one. To accentuate the bland flavor of the pumpkin, the inside is spread with honey mustard before filling. The meatloaf mixture, enhanced with the zesty flavor of Worcestershire sauce is baked right inside the pumpkin. Steps:

  • Cut top from pumpkin in a zig zag design.
  • Remove seeds and stringy insides.
  • Place pumpkin in a baking pan; add about 1 inch of hot water.
  • Cover pumpkin and pan with foil.
  • Bake at 400 degrees F. for 45 minutes. (Or microwave for about 14 minutes.).
  • Season inside of pumpkin with salt and pepper; brush with honey mustard (or yellow mustard and sprinkle with brown sugar).
  • Combine egg, Worcestershire sauce, 1/2 teaspoon seasoned salt, ground beef and bread crumbs; mix well.
  • Spoon into pumpkin shell, packing down lightly.
  • Return to oven and bake, uncovered, 45 to 60 minutes, until the pumpkin is tender and the meatloaf is cooked. (The internal temperature should reach 160 degrees F.).
  • You may cook the "lid" of the pumpkin along with the meatloaf, however, watch it and remove when it is cooked and still looks attractive.
  • Remove and let rest for 5 -10 minutes.
  • Be creative with garnishes.
  • Cut into 6 wedges to serve.
