GARLIC-ONION TORTILLA STACK



Garlic-Onion Tortilla Stack image

3 tablespoons minced fresh cilantro
3/4 cup roasted garlic
Olive Oil
2/3 cup canola oil
4 cups small-diced red onion (about 2 pounds)
3 tablespoons unsalted butter
2 tablespoons sugar
5 tablespoons grated Parmesan
1/4 cup mayonnaise
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
Twelve 8-inch flour tortillas
2 tablespoons balsamic vinegar

Steps:

  • Add the garlic to a skillet over low heat with a little olive oil and cook until the garlic just squishes.
  • Meanwhile, in a large skillet over medium heat, heat the canola oil. Add the onions and cook until lightly browned but not overly dark, about 5 minutes, stirring regularly. Add the butter and sugar and cook until the onions have thoroughly browned, 20 to 25 minutes.
  • Add the roasted garlic, Parmesan, mayonnaise, cilantro and salt and pepper to taste and stir to combine. Remove from the heat, transfer to a medium bowl and set aside to cool. Cover and refrigerate for at least 4 hours.
  • Reserve one-third of the mixture in the refrigerator to use to make the dipping sauce. Evenly spread the remaining mixture on the top of 11 of the tortillas. Stack the tortillas on top of one another and top with the remaining tortilla. Wrap the tortilla stack in plastic wrap and refrigerate for 12 to 24 hours to set up.
  • Preheat a grill to medium. Cut the stack into 16 wedges. Using tongs, grill each wedge on the cut sides until it's warmed and grill marks appear.
  • Mix the reserved onion mixture with the balsamic vinegar to make a dipping sauce; season to taste. Serve the wedges with the dipping sauce.

4 (12-inch) flour tortillas
1/2 cup grated Cheddar, plus 1/4 cup
8 ounces sirloin steak, grilled to desired doneness and thinly sliced
1 to 2 tablespoons minced jalapeno
1/4 cup salsa, plus more for serving
Vegetable oil, for cooking
Cilantro sprigs, for garnish

Steps:

  • Lay out 2 of the flour tortillas on a flat surface. Top with 1/2 cup of the Cheddar, spreading evenly over the tortillas. Divide the steak among the tortillas and sprinkle with the desired amount of jalapeno. Top with salsa and remaining 1/4 cup cheese. Top with remaining tortillas and press to seal.
  • Heat a large saute pan over high heat. Add enough oil to coat the bottom of the pan and lower the heat to medium. Cook until golden brown on both sides, about 3 minutes per side. Repeat with the other quesadilla.
  • Let cool for 5 minutes. Slice into 8 or 10 pieces. Garnish with salsa and cilantro sprigs.

4 large flour tortillas

guacamole

Steps:

  • Preheat oven to 350°F (180°C).
  • In a large pan over medium heat, cook the chicken, beans, corn, and salsa.
  • In a springform pan, lay down one tortilla, then top with chicken mixture and cheese.
  • Layer another tortilla on top and continue to stack until pan is full.
  • Top with more cheese.
  • Bake for 30 minutes or until cheese is melted.
  • Top with sour cream, guacamole, and salsa.
  • Enjoy!

3/4 cup fat-free refried beans
1 1/2 cups chopped, cooked boneless skinless chicken breasts
1 (4 1/2 ounce) can chopped green chilies, , drained
1/4 cup chopped fresh cilantro
3/4 cup shredded low-fat Mexican cheese blend
1/4 cup low-fat sour cream
1/4 cup salsa (hot-sweet, no tomato salsa posted in 'zaar, goes very well.)

Steps:

  • Preheat oven to 425 degrees.
  • Lightly coat baking sheet with veggie spray.
  • Place one tortilla on baking sheet and spread 1/4 cup refried beans on top.
  • Sprinkle with 1/2 cup chicken, 2 1/2 tablespoons chiles, 1 tablespoon cilantro, and 3 tablespoons cheese.
  • Repeat layering two times.
  • Top with remaining tortilla, pressing down slightly to help hold layers together.
  • Cover top tortilla loosely with foil and bake stack until heated through, about 15 minutes.
  • Remove foil, sprinkle with remaining cheese, and bake until cheese melts, about 5 minutes longer.
  • Meanwhile, combine sour cream and remaining cilantro in a small bowl.
  • Cut quesadilla into 6 wedges, but do not separate them.
  • Spread cilantro sour cream over top and spoon salsa in centre.

I think I learned how to make this at a Pampered Chef party. It's one of my favourite meals--served with a crisp salad. It's been a long time since I had a written version of the recipe so my measurements are just estimates... I just eyeball everything.

1 tablespoon vegetable oil
1 onion, chopped
1/2 red bell pepper, chopped
1/2 yellow bell pepper, chopped
1 tablespoon chili powder
1 -2 teaspoon cumin
1/2 lb deli sliced smoked turkey breast
4 ounces cheddar cheese, shredded (about 1 cup)
4 tortillas
salsa
sour cream

Steps:

  • Preheat oven to 350°F.
  • Heat oil in a wok or large frying pan.
  • Add onion, bell peppers, chili powder and cumin and stir fry until the onion has caramelized a little and the bell pepper has softened.
  • On a cookie sheet (or a pampered chef pizza stone) place one tortilla. Layer with 1/3 of the turkey, 1/3 of the onion and bell pepper mix and 1/3 of the cheese. Repeat to make three layers and top with final tortilla.
  • Bake in the oven for 15 minutes or until heated through.
  • Slice into wedges and serve with salsa and sour cream as condiments.

4 8-inch-diameter flour tortillas
1 8-ounce package peeled chopped butternut squash, cut into 1/2- to 3/4-inch cubes
2 tablespoons vegetable oil, divided
1 cup chopped white onion
1 15-to 16-ounce can black beans, rinsed, drained
1/2 cup salsa, divided
2 garlic cloves, chopped
1 teaspoon chili powder
1 cup coarsely grated hot pepper
Monterey jack cheese
1/4 cup chopped fresh cilantro
Sour cream
Additional salsa
Fresh cilantro sprigs (for garnish)

Steps:

  • Preheat broiler. Put tortillas in single layer on baking sheet. Brush with oil. Broil until toasted, about 3 minutes. Turn; set aside.
  • Place squash in microwave-safe bowl. Sprinkle water over, cover with plastic wrap, and microwave until just tender, about 3 minutes; drain. Heat 1 tablespoon oil in large nonstick skillet over medium-high heat. Add onion and sauté until beginning to brown, about 3 minutes. Add squash; stir 1 minute. Season with salt and freshly ground black pepper. Spread out squash in even layer over 1 tortilla. Add 1 tablespoon oil to skillet. Add beans, 1/4 cup salsa, garlic, and chili powder. Using potato masher, crush until beans are coarsely mashed; season with salt and pepper. Stir in 1/4 cup salsa. Spread over second tortilla. Sprinkle cheese over third tortilla. Leave fourth tortilla plain.
  • Broil tortillas until cheese melts and vegetables are browned in spots, about 3 minutes, watching to prevent burning. Transfer black bean tortilla to plate; sprinkle 1/4 cup chopped cilantro over. Top with cheese tortilla, squash tortilla, then plain tortilla. Cut into 4 wedges. Garnish with sour cream, salsa, and cilantro sprigs.

2 tablespoons olive oil
3/4 pound red onion, finely chopped (about 11/2 cups)
1 teaspoon unseasoned rice vinegar
1/2 teaspoon sugar
2 tablespoons chopped fresh oregano or 1 teaspoon dried oregano (Mexican variety preferred)
1/2 cup crumbled cotjia or mild feta cheese
3 tablespoons mayonnaise
1/2 teaspoon salt
1/8 teaspoon freshly ground pepper, or to taste
6 (7-inch) flour tortillas
Unsalted butter or margarine, at room temperature

Steps:

  • 1. In a skillet, heat the oil over low heat and cook the onions, stirring frequently, until they are soft and light brown, 8 to 10 minutes. Add the vinegar, sugar, and 1 teaspoon of water. Cook, stirring, until the liquid evaporates, 2 to 3 minutes more. Transfer the onions to a bowl and cool. When the onions are lukewarm, add the oregano, cheese, mayonnaise, salt, and pepper. Mix and set aside. 2. Lay 2 tortillas on a flat surface. Spread 1/4 of the onion mixture on each tortilla. Place a second tortilla on top of the onion mixture and spread the remaining onion mixture equally on both tortillas. Lay the remaining 2 tortillas on top of each stack. Spread a thin film of butter on the top tortilla in each stack. Invert the two stacks and spread a thin film of butter on the unbuttered side. Put the two stacks on a plate with a piece of wax paper between them. If made ahead, cover and refrigerate until shortly before serving. 3. Heat a grill pan over medium high heat and lay 1 tortilla stack on the hot pan. Toast until crisp with grill marks from the pan ridges, about 1 to 2 minutes.
