Quick Cucumber Salad image

This is a very quick and cool summer salad, but it's also good year-round. Serve cold or at room temperature.

2 cups thinly sliced and peeled cucumber
salt to taste
¼ cup white balsamic vinegar
2 tablespoons olive oil
1 teaspoon white sugar
½ teaspoon dried dill weed
2 tomatoes, chopped, or more to taste

Steps:

  • Spread cucumber slices in a thin layer on a large platter. Sprinkle salt generously over the cucumber. Let salt soak into cucumber slices for about 30 minutes.
  • Transfer cucumber to a colander and rinse with cold water; drain thoroughly and transfer to a dry surface. Pat cucumbers dry with paper towel.
  • Whisk vinegar, olive oil, sugar, and dill together in a large bowl. Add cucumber slices and tomatoes; toss to coat.

Quick and Spicy Cucumber Salad image

A refreshing spicy and crunchy taste, this cucumber salad is marinated with lime juice, habanero pepper, garlic, salt, pepper and a little bit of Caribbean love. A Caribbean way to create quick and easy salads.

2 young cucumbers (cut into thin slices)
1 garlic clove (crushed)
1 scallion (sliced thin)
Pinch of sea salt
Pinch of freshly ground pepper
1 hot pepper (seeded, thinly sliced (Habanero or Scotch Bonnet))
Juice of 1 - 2 limes

Steps:

  • Place the cucumber slices in a large bowl with the garlic, scallion and hot pepper. Add salt, pepper and lime juice last. Gently mix well. Store in refrigerator until serving time.
  • Bring to room temperature and serve.

4 cucumbers
2 teaspoons soy sauce
2 tablespoons white vinegar
2 tablespoons sugar
4 teaspoons sesame oil
1 teaspoon hot sauce
Salt and pepper (to taste)

Steps:

  • Peel cucumbers and cut them lengthwise. Scrape out seeds with small spoon, leaving hollow shells. Cut cucumbers crosswise into 1/4 inch strips. Combine soy sauce, vinegar, sugar, sesame seed oil, hot sauce, salt and pepper in a small bowl and mix well. Add cucumber and toss to coat each slice. Chill before serving.
