Starting barbecue beans from scratch results in an extra creamy texture with an excellent concentrated barbecue sauce flavor that make them well worth the time.

2 tablespoons kosher salt
1 pound small dried beans, such as great northern, navy, or pinto beans, picked over and rinsed
8 ounces sliced bacon, cut into 1/2-inch strips
1 1/2 cups finely minced yellow onion (about 1 large onion)
2 tablespoons finely diced seeded jalapeño (about 1 medium pepper)
1/4 cup finely diced green bell pepper
1 tablespoon minced garlic (about 3 medium cloves)
2 cups chicken stock or low-sodium broth
1 1/2 cups ketchup
1/2 cup dark brown sugar
1/4 cup honey
1/4 cup molasses
2 tablespoons yellow mustard
2 tablespoons apple cider vinegar
1 tablespoon barbecue rub
1 tablespoon hot sauce

Steps:

  • In a large container, whisk together 2 quarts water and salt until salt has dissolved. Add beans, cover, and let stand overnight at room temperature. Drain and rinse beans.
  • Place a large dutch oven over medium-high heat. Add bacon and cook until fat has rendered and bacon has crisped, 7-10 minutes. Transfer bacon to a paper towel-lined plate, leaving as much fat in dutch oven as possible.
  • Add onion to dutch oven and cook, stirring occasionally, until onion softens and begins to brown around the edges, about 7 minutes. Stir in green pepper, jalapeño, and garlic and cook until fragrant, about 1 minute. Stir in 3 cups of water, chicken stock, reserved bacon, and beans. Bring to a boil, then reduce heat to low and simmer for 1 hour. Preheat oven to 300°F while beans are simmering.
  • Stir in ketchup, brown sugar, honey, molasses, mustard, vinegar, barbecue rub, and hot sauce. Cover and transfer to oven. Cook beans for 4 hours, stirring occasionally. Remove cover and cook until beans are tender throughout and sauce has thickened, about 1 hour longer. Remove from oven and let cool for 15 minutes. Season with salt. Serve immediately; alternatively, store in an airtight container in the refrigerator for up to 1 week, or freeze. Reheat before serving.

1 (16 ounce) can baked beans, undrained (I use B&M)
1/4 cup barbecue sauce (I use Open Pit)
1 tablespoon butter
1/4 cup onion, chopped
2 slices bacon, cut into match stick lengths
1 clove garlic, minced
salt and pepper
1 tablespoon horseradish, reserve for sauce

Steps:

  • In a saute pan, heat butter, add bacon, onion and garlic.
  • Saute until onion and garlic is soft, not brown.
  • Add barbeque sauce and simmer on low for 10 minutes.
  • With slotted spoon, remove the bean mixture to serving bowl.
  • By using the slotted spoon, it will allow enough of the sauce to remain with the beans and leave plenty in the saute pan for the sauce.
  • With remaining sauce in saute pan, add 1 TB.
  • horseradish and simmer until hot.
  • Serve on the side to drizzle over steak and we also enjoy this with ham steak.
  • We serve this with ham or steak, hot rolls and cole slaw.

1 pound pinto beans, soaked overnight
7 cups water
1 bay leaf
1 onion, diced
3/4 pound ground chuck
1 clove garlic, minced
1 teaspoon sweet paprika
1 teaspoon dried thyme
1 tablespoon chili powder
3/4 cup ketchup
1/4 cup dark brown sugar
1/3 cup yellow mustard
2 tablespoons Worcestershire sauce
Salt and freshly ground black pepper

Steps:

  • Quick soak method for beans: Cover beans with water, bring to a boil. Turn off heat, let stand 1 hour. Drain.
  • Place pinto beans in a large pot with water and bay leaf, and bring to a boil. Reduce heat to a steady boil and cook until tender, about 1 hour.
  • In the meantime, heat a 12-inch non-stick pan over medium heat. When hot but not smoking, add onions and cook, stirring often until they begin to soften. Add 2 tablespoons of the bean cooking water and cook until the onions are softened, about 5 to 6 minutes.
  • Add the ground chuck and garlic and cook, stirring often, until the meat is brown and cooked through, about 5 to 7 minutes.
  • Stir in paprika, thyme, chili powder, ketchup, brown sugar, mustard and Worcestershire sauce. Mix until all ingredients are combined. Pour into pot with beans and stir. Season, to taste, with salt and pepper. Continue cooking until flavors have come together and beans are tender and cooked through and the sauce has thickened.

400ml tub passata
1 tsp Worcestershire sauce or vegetarian alternative (optional)
small bunch coriander , chopped

  • Heat the oil in a small pan. Fry onion until starting to brown, then add garlic and cook for 1 min. Add vinegar and sugar and cook until onions are caramelised. ¼ pound thick-cut bacon, diced

  • Preheat grill to high.

1 tbsp olive or rapeseed oil
2 tsp dried oregano
1 tsp smoked paprika
2 tsp lemon juice
1 garlic clove, finely grated
4 skinless chicken breast fillets (about 650g), cubed
640g frozen baby broad beans
2 garlic cloves
2 tbsp lemon juice
2 tbsp tahini
1 tbsp ground coriander
1 tsp ground cumin
2 red onions, chopped
1 tbsp lemon juice
4 vine tomatoes, sliced
200g cucumber, halved and sliced

Steps:

  • Mix the oil, oregano, paprika, lemon juice and garlic in a bowl with some black pepper and a pinch of salt, then add the chicken and toss well. Thread the chicken onto four metal skewers and set aside. For the salad, mix the onions and lemon juice in a bowl and set aside.
  • To make the hummus, boil the broad beans in 300ml water for 5 mins, then scoop out of the pan, reserving the water. Tip the beans into a bowl with the rest of the ingredients, and blitz using a hand blender with up to 150ml of the cooking water until smooth.
  • Heat the grill to high and cook the chicken skewers for 4-5 mins on each side, or until cooked through. Meanwhile, finish preparing the salad. Toss the tomatoes and sliced cucumber with the lemon-soaked onions. Serve halve the hummus with two skewers of chicken and half the salad. The remainder will keep in the fridge for up to two days.
