- Spray a non-stick frying pan with cooking spray and place over high heat. Add onion and stir fry 2 to 3 minutes, then add cinnamon and curry powder and stir fry another minute. Add the chicken pieces and tomatoes, stock and spinach. Cover and cook for 15 to 20 minutes until cooked through. Season well and remove from the heat. Stir in the yogurt and serve with rice.
CHICKEN CURRY WITH SPINACH
Spinach and chicken cooked together made a wonderful combination, the addition of the cream adds a touch of smoothness and luxury to the dish. Not too spicy and suits all tastes. As a supper dish you can serve it with buttered toast instead or rice. From start to finish about 30 minutes.

- In a large pan heat the oil and fry the onion and garlic till golden brown.
- Add the tomatoes and cook for 5 minutes.
- Add the chicken and spices and fry for 5 minutes.
- Season with the salt and pepper, add the spinach and cream and cook till chicken is tender, about 10 minutes.
- For a main course serve with boiled rice, as a supper dish serve with toast.

- Place the oil in a wide, deep saucepan and add the onions. Cook on a low heat with the lid on for 5 minutes, stirring occasionally, until the onions have softened but are not brown.
- Turn the heat up to medium-high and add the chicken pieces. Fry for a couple minutes until the chicken is golden brown.
- Add the tikka masala spice paste and stir to coat the chicken and onions in the spice paste. Fry for another minute, stirring occasionally.
- Add about ¾ of the tin of coconut milk and stir. Bring to the boil and then turn down and cook for 10 minutes.

- Preheat a large skillet to medium-high with a drizzle of oil. Sprinkle the chicken on both sides with 1 teaspoon of the curry powder and 1/2 teaspoon salt.
- When the skillet is hot, sear the chicken on both sides until nearly cooked through, about 7 minutes per side. When brown, remove to a plate to rest. Reduce the heat on the skillet to medium and add another drizzle of oil.
- To the same skillet, add the rest of the curry powder (2 teaspoons), bouillon cube, fire roasted tomatoes, cayenne pepper, and coconut milk. Stir to combine and dissolve the bouillon. Taste, and add more pinches of salt and cayenne to your preference until the mixture is very flavorful.
- Let the curry sauce simmer gently for 10 minutes until reduced slightly. During this time, shred the chicken to bite sized pieces.
