Steps:
- Dissolve the yeast in the water until foamy (about 10 minutes).
- Place in mixer bowl and add salt, herbs, dried tomatoes and flour.
- Knead on low (speed 2 on Kitchen Aid) until ball forms and climbs up dough hook (takes about 5 minutes).
- Place in bowl that has been sprayed lightly with cooking spray.
- Cover and set in a warm place to rise (1-2 hours).
- Makes a crust for a large (12" or more) pizza.
- You can probably knead this by hand for 10 minutes and get the same results.
- I topped the pizza with onions I dredged in flour and lightly sauteed in some cooking spray and some cooked, sliced potato.
- Baked on a perforated pizza pan for 20 minutes at 425F.
HERBED PIZZA DOUGH
This is a simple pizza dough and it doesn't take all day either. The only appliance I used was my stand mixer with the dough hook!

- Preheat your oven to roughly 150 degrees. Just enough to make it warm enough to cause the dough to rise well. Then turn your oven off as soon as it heats up.
- Add all the above ingredients in the order above into your stand mixing bowl. Mix using a dough hook until it forms a ball. Place it in an oiled bowl and cover with a cloth. Place in the warm oven for about 30 minutes or until the dough doubles in size.
- When dough has doubled, preheat your oven to 400 degrees.
- Roll out the dough in desired shape. You may need to flour your surface and rolling pin to prevent sticking. I usually just sprinkle my baking sheet (or stone) with corn meal and garlic salt and just press out my dough.
- Add your favorite toppings and bake for approximately 15-18 minutes depending on the size of pizza you're making. Should just be bubbly.
- Enjoy with freshly grated parmesan cheese.
HERB PIZZA DOUGH
Based on a recipe from Williams-Sonoma Kitchen Library Pizza cookbook. The introduction says, "Fresh or dried herbs add an accent of flavor and color to pizza dough. Good choices include oregano, basil, marjoram, chives, thyme, rosemary, sage, mint and fennel seeds, selected to highlight the ingredients that will top the pizza or fill the calzone. Do not go overboard on your selection: It is better to choose two or three complementary herbs, or even just one herb, rather than a large mixed bouquet of clashing flavors."

- Dissolve yeast in the water in a small bowl and let stand until slightly foamy on top, about 10 minutes.
- In a large bowl stir together the 2 ¾ cups flour, salt, and herbs. Form into a mound. Make a well in the center and add the yeast mixture to it.
- Using a fork, stir the dough in a circular motion, gradually pulling the flour into the yeast mixture until a dough forms.
- Place the dough on a lightly floured work surface using some of the ½ cup flour.
- Using the heel of your hand, knead the dough until it's smooth and elastic, about 10 minutes.
- Form the dough into a ball.
- Brush a large bowl with the oil and place the dough in it. Cover with plastic wrap and let rise at room temperature until doubled in size, about 1 to 2 hours.
- Place dough on work surface lightly dusted with the remaining flour.
- Punch the dough down.
- By hand, gently press dough out into desired shape.
- Place one hand in the center of dough, and with the other hand, pull, lift and stretch the dough, gradually working your way all around the edge, until it is the desired thickness, about ¼ inch thick for a crusty pizza base and ½ inch thick for a softer one.
- Flip the dough over from time to time as you work with it; alternately, roll the dough out with a rolling pin. The dough should be slightly thinner in the middle than the edge.
- Lift the edge of the pizza to form a slight rim.
- Transfer dough to a baker's peel or baking sheet, cover, and let rise again until almost doubled, about 20 minutes.
- Top as desired.
- Bake in a 400 degree F oven for 10 to 15 minutes, until the crust is golden, or according to your pizza recipe's instructions.
QUICK HERBED PIZZA DOUGH
A quick, simple and very aromatic pizza dough with a blend of Italian herbs. Makes a great, authentic pizza! (Serving Size = 1 family size pizza)

- Sift flour into a large mixing bowl, create a well in the middle.
- Add dried yeast, olive oil, sugar, salt.
- Add warm water.
- Knead for 3 min, adding a small splash of water as needed to incorporate all the flour. If too sticky, dust lightly over with flour and keep kneading. Add Italian herbs.
- Knead for another 5 - 7 min, or until dough is elastic.
- Cover with plastic wrap, layer over a warm, damp towel and set for at least 30 min in a warm area for dough to rise.
- (Tip: If you live in a cold climate, set a pot of water to boil on high heat, and set the covered bowl near it to warm it up. Don't put it too close, just enough for the bowl to heat and warm up. Too hot and the yeast will get killed!).
- When dough has risen, punch down, lightly use tips of fingers to pull out dough, dust a bit of flour over and then knead lightly until dough is round and smooth.

- Combine water, olive oil, sugar, salt in pan of bread machine Add flour, then sprinkle garlic on flour. Lastly add yeast.
- Turn machine on dough cycle. As the dough mixes, sprinkle on oregano and basil until it suits you for color and taste. Let mix for about 15 to 30 minutes. Let the dough rest from 5 to 30 minutes. The longer it rests, the thicker and more tasty the crust. Meanwhile, preheat oven to 475 degrees F (245 degrees C).
- Roll out dough on a lightly floured surface. Spray a large pizza pan with nonstick cooking spray. Place dough on pan and add your choice of pizza toppings.

- Mix yeast in warm water until dissolved.
- Stir in oil and flour until it forms a dough ball.
- Cover bowl with a kitchen towel, place on top of your stove while the oven is warming up.
- Let rise for 15 minutes.
- Spread on pizza pan, jelly roll pan or baking stone (I've used them all).
- Top with your favorite sauce, meats, veggies, herbs and/or cheeses!
HERB BREAD OR PIZZA DOUGH
Steps:
- Stir together: 2 teaspoons dry yeast, 1/2 cup lukewarm water.
- Add and mix well: 1/4 cup unbleached white flour, 1/4 cup rye flour.
- Allow this mixture to sit until quite bubbly, about 30 minutes.
- Mix together in another bowl: 3 1/4 cups unbleached white flour, 1 teaspoon salt.
- Stir this into the yeast and flour mixture with: 3/4 cup cold water, 1/4 cup olive oil.
- Mix thoroughly by hand or in an electric stand mixer. If working by hand, turn the dough out onto a lightly floured board and knead until the dough is soft and elastic, about 5 minutes. If the dough is too wet and sticky, add more flour, but only enough to form a soft, slightly sticky dough. Or use the mixer, fitted with the dough hook, and knead for about 5 minutes. The dough is the right texture when it pulls away from the sides of the bowl of the mixer, but still adheres to the bottom. A very soft, slightly moist dough will make the best focaccia.
- Put the dough in a large bowl, cover, and let rise in a warm place until doubled in size, about 2 hours. For an even better-tasting and more supple dough, let the dough rise slowly overnight in the refrigerator. (Remove from the refrigerator 2 hours before shaping.)
- Generously oil a 10-inch by 15 1/2-inch rimmed baking or sheet pan. Gently remove the dough from the bowl and flatten it on the baking pan, shaping it to fit the pan by gently pressing down from the center out towards the edges. If the dough starts to resist and spring back, let it rest for 10 minutes, then continue shaping. Try not to deflate or smash all of the air out of the dough as you are shaping it. Dimple the surface of the dough by lightly poking it with your fingertips.
- Drizzle with: 2 tablespoons olive oil.
- Cover and let rise until doubled in height, about 2 hours.
- While the dough is rising, preheat the oven to 450°F. If you have one, place a baking stone on the lower rack and let it heat for 30 minutes before baking the bread. Sprinkle the dough with: 1 teaspoon coarse sea salt and put the baking pan directly on the stone. Bake the focaccia until golden and crisp on the top and bottom, about 20 to 25 minutes. Invert the pan to remove the bread and place on a rack to cool.

- Sprinkle 1 tablespoon chopped fresh rosemary or sage leaves over the dough before baking.
- Chop about 1 tablespoon fresh tender herbs and add to the dough with the oil.
- Divide the dough in two before shaping and press into two 1/2-inch-thick disks. Put the disks into oiled 8-inch pie plates. Dimple, oil, let rise as above, and bake, checking after 10 minutes.
- Top with sautéed onions, cheese, tomato slices, or sautéed greens before baking.
