QUICK TUNA AND CLAM PAPPARDELLE
This is such a cool recipe! It's like a tuna noodle casserole combined with linguine in clam sauce. Great after-work dinner (which I always love).

Steps:
- Heat a large pot of water to a boil.
- Combine onion and butter in a large skillet; cook over medium-high heat until onion is softened, about 5 minutes.
- Add pappardelle (or egg noodles) to boiling water; cook according to package directions, drain, place in a large serving bowl.
- Meanwhile, add parsley, dill weed, capers and pepper to the onion and butter in skillet; cook 1 minute and stir in clam chowder and tuna; cook, stirring occasionally, until hot throughtout, about 5 minutes.
- Season to taste, if necessary.
- Pour over pasta; toss to coat and serve with lemon wedges.

HOMEMADE PAPPARDELLE

- Make the dough. Sift both flours together on a large work surface and make a well in the center. Place the eggs, olive oil and a pinch of salt in a bowl, then pour into the well; with a fork, break up the eggs, then gradually mix the wet ingredients into the flour mixture just until combined.
- Knead by hand. Gather the dough into 2 equal-size balls; flour the surface. To knead each piece, push the dough away from you with the heel of your hand, fold the dough over itself and turn it counterclockwise. Continue pushing, folding and turning until the dough is smooth and elastic, 4 to 5 minutes.
- Rest the dough. Pat each piece into a ball. Flatten slightly, wrap in plastic and refrigerate for at least 30 minutes or overnight. (You can freeze 1 ball for later, or roll out both and freeze the cut pasta.)
- Roll out the dough. Place the dough on a lightly floured surface and dust with flour. Starting in the middle, push away from you with a rolling pin, easing up on the pressure as you approach the edge. Continue rolling the dough into a sheet, turning occasionally, until you can see your fingers through the bottom. Let dry about 10 minutes.
- Cut the pappardelle. Dust the top of the sheet of dough with flour and loosely roll it into a cylinder. Using a sharp knife, cut into 3/4-inch-wide slices. Unwrap the noodles; dust with semolina and gently toss to separate. Place on a sheet pan and cover with a tea towel until ready to cook (or freeze in freezer bags for up to 2 months).
QUICK AND EASY TUNA CASSEROLE
Steps:
- Bring a large pot of water to a boil. Add noodles and frozen peas. Cook until noodles are al dente, drain well. Return noodles and peas to the pot.
- Mix soup, tuna fish, onions, processed cheese and pepper into the pot. Stir constantly until all of the ingredients are well mixed and the cheese has melted. Serve.

ZUCCHINI AND TUNA PAPPARDELLE
Think of this recipe as a roadmap - salmon or chicken work as well as the tuna, as does any shorter pasta. This recipe goes together quickly once you start cooking, so have everything ready to go. I do not recall where I got this recipe. I always use low-sodium broths.

Steps:
- Cook pasta in salted water until al dente, 8 to 10 minutes.
- Using a vegetable peeler, slice the zucchini into ribbons and set aside.
- Melt the butter in a large skillet over medium-high heat. Add shallots or onions, 1/2 tsp salt, 1/4 tsp pepper and saute until golden, about 5 minutes.
- Add wine and cook until it is almost all evaporated, 3 to 4 minutes. Add the broth and cook 2 to 3 minutes.
- Reduce heat to medium, add the cream and simmer until just thickened., 3 to 4 minutes.
- Add the peas and cook 1 minute.
- Add the 1/2 cup cheese and the tuna and cook until heated through, 1 to 2 minutes.
- Drain the pasta, reserving a few tablespoons of the cooking water, and add the pasta and reserved cooking water to the skillet.
- Add the zucchini, 3 tbl chives, and lemon juice, and toss gently. Correct seasonings.
- Transfer to a serving platter and sprinkle with remaining chives and 2 tbl parmesan.
